6 ounces dry fettuccini pasta
1 teaspoon butter
1 clove garlic, minced
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh marjoram
1 tablespoon chopped fresh thyme
1 tablespoon butter
⅛ teaspoon salt
1 pinch ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Meanwhile, in a small saucepan over medium heat, melt 1 teaspoon butter. Add garlic and cook for 30 to 60 seconds or until garlic begins to turn golden.
  • In a small bowl, combine parsley, basil, marjoram, thyme, 1 tablespoon butter, salt and ground black pepper with cooked garlic; mix well. Toss with pasta and serve.

8 oz dried fettuccine
1 Tablespoon Challenge Butter
1 teaspoon (2 cloves) minced garlic
½ cup chopped onion
½ package (4 oz) Challenge Cream Cheese, softened
¾ cup milk
1 Tablespoon dry sherry
½ cup shredded Parmesan cheese
¼ teaspoon salt
¼ teaspoon coarse ground black pepper
1 Tablespoon fresh minced chives

Steps:

  • Cook fettuccine according to package directions in a large pot of boiling water. Drain.
  • Meanwhile, melt butter in a large skillet over medium-low heat. Add onion and garlic; sauté until golden.
  • Remove from heat. Add cream cheese and milk; stir until smooth.
  • Add sherry, Parmesan cheese, salt, and black pepper. Stir and cook for an additional minute over medium heat until just bubbly.
  • Add cooked fettuccine to the sauce, stir to coat pasta. Garnish with chives and serve immediately.

1 medium head garlic, peeled and chopped
½ cup olive oil
1 tablespoon chopped fresh basil

Steps:

1 lb fettuccine
1/2 lb fresh Italian cheese, you grate it (Fontinella, romano, locatella or parmesan)
4 tablespoons butter or 4 tablespoons margarine
1 cup light cream
3 garlic cloves (or more)
1 teaspoon dried parsley
salt & pepper

Steps:

  • Cook the fettucini according to instructions.
  • While the noodles are cooking melt the butter in a skillet and saute the garlic for 1 minute, add parsley and continue sauting for 4 additional minutes (use medium low heat you do not want to burn the butter etc).
  • Add cream slowly and simmer 5 minutes.
  • When the noodles are done drain well and return them to the pot.
  • Pour the cream mixture over the noodles, add the cheese& toss.
  • Serve piping hot.

1 lb fettuccine
1/4 cup olive oil
12 garlic cloves
1/4 cup parmesan cheese, grated
1/4 cup fresh parsley, minced
1 teaspoon lemon pepper
1/2-3/4 teaspoon seasoning salt

Steps:

  • Bring a large pot of salted water to a boil.
  • Add the fettuccine, and cook until the pasta is al dente, 6 to 8 minutes.
  • When the pasta is cooked, rinse it in cold water, drain well, and reserve.
  • While the pasta is cooking, heat the olive oil over medium heat in a large nonstick saute pan.
  • Add the garlic cloves and saute them very gently, turning often for 4 minutes, until light golden brown and softened.
  • Remove the garlic cloves from the pan, and reserve.
  • Add the drained pasta to the pan, and saute over medium heat for 2 minutes, until warmed through.
  • Add the browned garlic cloves, Parmesan cheese, parsley, lemon pepper, and seasoning salt, and toss the pasta well to combine.

  • In a large pot of boiling salted water, cook pasta until al dente. Reserve 1 cup pasta water; drain pasta, and set aside (reserve pot).
  • In pot, melt butter over medium heat. Add half-and-half and cheeses; stir to combine, and bring just to a simmer. Add pasta, and toss to combine. If needed, gradually add enough reserved pasta water to thin sauce (sauce will thicken as it stands). Serve sprinkled with parsley.
