GROUND BEEF AND SAUERKRAUT SOUP
Ground Beef and Sauerkraut Soup is so tasty and the sauerkraut gets sweet and tender as it cooks in this flavorful low-carb soup!

- In heavy frying pan, heat 1 tsp. olive oil, add ground beef and brown well, breaking into small pieces with turner. This will take as much as ten minutes but don't rush the browning step.
- While ground beef browns, combine chicken stock, beef stock, canned tomatoes with juice, sauerkraut with juice, sweetener of your choice, Worcestershire sauce, bay leaves, parsley and sage in large stock pot. Bring to a low simmer.
- When beef is well browned, add to soup in pot. Deglaze pan with a bit of the soup liquid, scraping off any browned bits, and add to soup.
- Wipe out frying pan and add other 1-2 tsp. olive oil. Saute onions 2-3 minutes, until starting to soften, then add garlic and saute 1-2 minutes more.
- Add to soup, reduce heat under soup pot and let soup simmer at low heat about one hour.
- After an hour, taste for seasoning and add water if soup seems too strong. Simmer 15 minutes more if adding water.
- Season to taste with fresh-ground black pepper (and a little salt if desired) before serving. Serve hot, with sour cream if desired.

BRATWURST STEWED WITH SAUERKRAUT
Wisconsin may be the cheese state, but bratwurst (ground meat sausages that are grilled, or in this case, pan-fried) are the state's culinary claim to fame. Due largely to residents' German ancestry, brats are a common site at butcher shops, restaurants and even baseball stadiums. - In a bowl, combine beef, egg, crumbs, milk, onion, vinegar, caraway and salt; mix well. Shape into 1-1/2-in. balls. , In a Dutch oven over medium heat, brown meatballs in oil; drain. ORIGINAL LAUER-KRAUT BURGERS

- For the burger filling: Brown the ground chuck in a large skillet over medium heat, crumbling the meat pretty finely as it browns. Add the chopped onions and 1 teaspoon of the pepper. Cook the onion down a little, 3 to 5 minutes. Add the chopped cabbage, sauerkraut, remaining 1 teaspoon pepper and 1 teaspoon salt. Let the mixture cook, 10 to 15 minutes, depending on how done you like the cabbage. Strain and let cool.
- For the dough: Put the yeast and sugar in a 4-cup measuring cup and add warm water to the 1-cup mark. Stir together and let sit until the yeast rises to twice its original size. Put the powdered milk in another 4-cup measuring cup and add water to the 2-cup mark. Stir together. In a large mixing bowl, add the flour, salt and shortening. Cut the shortening into the flour by hand. Next, make a well in the flour and add the eggs, yeast mixture and the powdered milk mixture to the flour. Work it all together until the dough comes away from the bowl (you may need a touch more flour or water). Oil the dough slightly on each side, cover and let rise, for 10 minutes. Pinch and let rise another 15 minutes.
- To assemble the Lauer-Kraut burgers: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Lightly flour a work surface and put the dough on the flour. Begin to roll the dough as close to a rectangle as you can, roughly 24-by-30 inches. Once the dough is rolled out, cut the dough into squares, roughly 6-by-6 inches. Take a square of dough and roll it out a little bigger, roughly 8-by-8 inches. Turn the re-rolled square over and add a full cup of filling mixture into the middle of the dough. Bring the opposite corners of the square together, and then bring the other 2 opposite corners together. You should have all 4 corners drawn together. Pinch down the 4 seams of the dough. Once you pinch all the seams, push down slightly on the kraut burger. This will release extra air and help you find any place you missed sealing the kraut burger. Turn the sealed pocket over and place it on the prepared baking sheet. Repeat with the remaining ingredients. Bake for 15 to 20 minutes.

- Brown hamburger and onion, salt and pepper, drain. Add soups and milk. Stir.
- Cook noodles, partially, about 5 minutes. They will finish cooking during baking time.

- 1. Preheat oven to 350°F. Brown ground beef or turkey with chopped onion and season with garlic powder, salt and pepper until done.
- 2. Prepare egg noodles according to package. Make sure you don't over cook them. You want them slightly al dente.
- 3. Drain sour kraut and pour into the bottom of a greased 9x13 pan. (or you can use a casserole dish or roasting pan if you'd like) Sprinkle with brown sugar.
- 4. Pour drained (but not rinsed) egg noodles over sour kraut and brown sugar.
- 5. Pour hamburger or turkey over egg noodles.
- 6. Mix 1 can of warm water with the 2 cans of tomato soup. Make sure you have all the lumps out of the soup and it is mixed well and smooth. Pour over hamburger or turkey evenly. Use a fork as you are pouring the soup along the sides of the pan to pull the mixture away from the edges to allow some of the soup to seep down the sides slightly.
- 7. Top with cheese.
- 8. Bake at 350° for 30-45 min until cheese is brown and edges are bubbling. Let stand 5 minutes before serving.
- 9. Don't forget the garlic bread and/or a nice lettuce salad to accompany this great casserole. Enjoy!
- 10. ****This recipe is great and easy to make ahead of time. Just assemble and throw it in the fridge then pull it out when you get home from work and pop it in the oven. If you do this though, you may need to adjust your baking time to closer to 60 min.****

- Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
