In the summer, I'll mix fresh tomato slices and vegetables from our garden in with the salad. I also experiment with different kinds of lettuce than romaine.-Carolene Esayenko, Calgary, Alberta

6 cups torn romaine
1/2 cup Caesar salad croutons
2 bacon strips, cooked and crumbled
1/4 cup grated or shredded Parmesan cheese
1/3 cup creamy Caesar salad dressing

Steps:

  • In a large bowl, combine the romaine, croutons, bacon and cheese. Add dressing and toss to coat. Serve immediately.

1/4 cup grated Parmesan cheese
1/4 cup mayonnaise
2 tablespoons milk
1 tablespoon lemon juice
1 tablespoon Dijon-mayonnaise blend
1 garlic clove, minced
Dash cayenne pepper
1 bunch romaine, torn
Salad croutons and additional grated Parmesan cheese, optional

Steps:

  • In a small bowl, whisk the first seven ingredients. Place romaine in a large bowl. Drizzle with dressing and toss to coat. Serve with salad croutons and additional cheese if desired.

1 large head of romaine lettuce
1/2 cup caesar salad dressing (link to our dressing)
1 cup croutons - link to our homemade croutons
1/3 cup parmesan cheese (shredded)
1 teaspoon pepper (freshly cracked is best)

Steps:

  • Coarsely chop the romaine lettuce
  • Stir in the croutons and parmesan cheese.
  • Drizzle the salad dressing and sprinkle with pepper.
  • Toss to combine and serve immediately.

A 'worth-the-effort' salad!! Always a winner, if you love Caesar Salad! The secret is the dressing and the croutons.

1 head romaine lettuce
¾ cup extra virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon Worcestershire sauce
½ teaspoon salt
¼ tablespoon ground mustard
1 clove crushed garlic
1 egg
1 lemon, juiced
freshly ground black pepper
¼ cup grated Parmesan cheese
1 ½ cups garlic croutons
1 (2 ounce) can anchovy filets

Steps:

  • Clean lettuce thoroughly and wrap in paper towels to absorb moisture. Refrigerate until crisp, at least 1 hour or more.
  • In a bowl or jar combine oil, vinegar, Worcestershire sauce, salt, mustard, garlic and lemon juice. Whisk until well blended.
  • Coddle egg by heating 3 cups of water to boiling. Drop in egg (still in shell) and let stand for 1 minute. Remove egg from water and let cool. Once cooled crack open and whisk egg into dressing. Whisk until thoroughly blended.
  • Mash desired amount of anchovies and whisk them into the dressing. If desired set aside a few for garnish.
  • To assemble, place torn lettuce leaves in a large bowl. Pour dressing over the top and toss lightly. Add the grated cheese, garlic croutons and freshly ground pepper, toss. Serve immediately!

1/4 cup fresh parsley leaves
2 anchovy fillets
2 tablespoons grated Parmesan, plus more for garnishing
2 lemons, zested and juiced
2 green onions, roughly chopped
1 bunch fresh chives, roughly chopped
1 clove garlic
Salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 head romaine lettuce, leaves separated

Steps:

  • In the bowl of a food processor, add the parsley leaves, anchovy fillets, Parmesan, lemon juice and zest, green onions, chives and garlic. Season with salt and pepper. Pulse the mixture and slowly drizzle in the olive oil.
  • Remove the top from the food processor and unplug the machine. Replace the blade from the processor with the shredder blade and place the top back on the machine. Plug the machine back in and shred the lettuce leaves, 1 at a time, directly on top of the dressing.
  • Pour the lettuce and dressing into a large bowl and toss to combine. Garnish with additional Parmesan.
