Delicious, satisfying, and very easy to make. My kids will even eat spinach this way! We serve them with warmed spaghetti sauce to dip them in and a salad. Yum!

1 (15 ounce) container ricotta cheese
2 eggs
2 tablespoons dried Italian seasoning
3 cups shredded mozzarella cheese
1 cup freshly grated Parmesan cheese
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
salt and pepper to taste
1 (32 ounce) package frozen white bread dough, thawed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, mix together the ricotta cheese, eggs, Italian seasoning, mozzarella cheese, Parmesan cheese and spinach. Set aside.
  • Divide the bread dough into 8 pieces and roll each piece out to about an 8 inch circle. Spoon about 1/2 cup of the ricotta filling onto each circle, fold over and seal the edges. Place onto a greased cookie sheet.
  • Bake for 30 minutes in the preheated oven, or until nicely browned on the tops and bottoms.

flour, for rolling dough
5 ounces frozen chopped spinach, thawed and squeezed of excess water
1 cup whole milk ricotta cheese
1 small fresh mozzarella ball, grated
3/4 teaspoon kosher salt
black pepper (5 grinds)
coarse cornmeal, for dusting baking sheet
2 tablespoons olive oil
2 1/4 teaspoons active dry yeast
3/4 cup warm water, about 110 degrees F
1 teaspoon sugar
1 tablespoon extra virgin olive oil
1 3/4 cups all-purpose flour, plus extra for kneading
1 teaspoon salt

Steps:

  • DOUGH.
  • In a small mixing bowl, whisk together yeast, warm water, sugar and olive oil. Let sit for about 3 minutes to fully dissolve and activate the yeast.
  • In a large mixing bowl, whisk together flour and salt.
  • With a rubber spatula, gradually mix the yeast mixture into the flour until just combined and dough barely holds together. Turn the dough out onto a clean counter surface dusted with flour.
  • Knead the dough with flour-dusted hands until the dough has become smooth and elastic, about 10 minutes. The surface should be tight and silky and bounce back slightly when pressed. Lightly grease a large mixing bowl with olive oil and place the dough in it.
  • Cover the bowl tightly with plastic wrap and set in a warm place to rise until doubled in size, 1 to 2 hours.
  • Once doubled, punch the dough down and divide it into 2 equal pieces. Knead each 1 slightly to form a uniform ball. Set aside and cover them with a kitchen towel or plastic wrap to rest for 30 minutes.
  • Cook's Note: Dough can be made the day before and refrigerated overnight once it is divided. Keep covered tightly in plastic wrap or in a sealed food storage bag.
  • Yield: 2 dough balls
  • Preheat oven to 450 degrees F.
  • Lightly dust the work surface and rolling pin with flour. Roll the dough out into an 8 by 11-inch oval.
  • In a medium bowl, mix the spinach, ricotta, and mozzarella and season with salt and pepper, to taste.
  • Place all the filling on 1 half of the dough leaving a 3/4-inch border along the edge.
  • Fold the remaining dough over the filling until the edges line up and pinch the edges together to seal. Gently roll the pinched edges under to form a decorative rim.
  • Place the calzone on a baking sheet dusted with cornmeal and brush the top with olive oil.
  • Bake until golden brown and the center is hot and melted, 25 minutes, rotating midway through cooking.

This is delicious even if you don't particularly like spinach. The recipe originally called for 10 oz of spinach, but since I don't care for it, I cut it way down. Still gives a little taste without being overpowering.

3 ounces frozen spinach, cooked and drained
2/3 cup part-skim ricotta cheese
2/3 cup shredded part-skim mozzarella cheese
1 tablespoon grated parmesan cheese
1 tablespoon dried basil or 1 teaspoon chopped fresh basil
1/4 teaspoon dried oregano
1/8 teaspoon pepper
1 lb frozen bread dough, thawed
5 teaspoons flour
1 egg white

Steps:

  • Preheat oven to 375.
  • Spray baking sheet with cooking spray and set aside.
  • In large bowl, mix cheeses, spinach, basil oregano and pepper.
  • Divide bread dough into 5 equal pieces.
  • Using 1 tsp flour for each, roll each piece into a 5- 6 inch circle.
  • Place 1/5 of the spinach filling over half of each circle.
  • Fold dough over filling, and use a bit of water to pinch and stick edges together.
  • Brush tops with egg white.
  • Bake until golden and puffed, 20-25 minutes.
  • Serve with your favorite spaghetti sauce.

My Moosewood Cookbook pretty much falls open to the page with this recipe. These are cheesy and delicious. It's a bit of work if you make your own dough, but they always work out great (I have been known to use frozen bread dough). Prep time includes rising time.

1 1/2 teaspoons yeast
1 tablespoon honey
1 cup warm water
1 1/2 teaspoons salt
2 1/2-3 cups flour
1 lb ricotta cheese
2 minced garlic cloves
1/2 cup minced onion
1 lb fresh spinach (10 oz pkg of frozen spinach, thawed, works fine)
2 cups grated mozzarella cheese
1/2 cup grated parmesan cheese
2 tablespoons butter
1 dash nutmeg
salt
pepper

Steps:

  • Filling:.
  • If using fresh spinach, wash, stem and finely chop, steam it quickly on medium high heat, adding no additional water. When wilted and deep green, remove to a bowl with a slotted spoon. (if using frozen - thaw and squeeze out as much moisture as you can).
  • Saute onion and garlic in butter till translucent and soft.
  • Combine all ingredients, mix well, salt and pepper to taste.
  • Dough:.
  • Soften together yeast, water and honey.
  • Add salt and flour to make a soft dough. Knead 10 minutes, or till smooth and elastic, adding flour if necessary to keep from being sticky.
  • Cover and let rise till doubled (about 1 hour - less if using rapid rise yeast).
  • Punch down. Divide into six sections and roll out in rounds 1/4 inch thick.
  • Fill with 1/2-3/4 cup filling, placing filling on one half of the circle, leaving a 1/2 inch rim.
  • Moisten the rim with a little water, fold the empty side over, and crimp the edges.
  • Prick here and there with a fork to allow steam to escape.
  • Bake on an oiled tray (I use a baking stone) in a preheated 450 oven for 15-20 minutes or till crisp and lightly browned.
  • Brush each pastry with a little butter as it comes from the oven.

I created this filling just for Ed, since he loves pepperoni and hot Italian sausage on his pizza. I've added lots of oregano and a little garlic as well, and wrapped it up in a crust with more oregano. I don't think the tomato juice in the crust gives it any additional flavor, but it gives it an appealing color.

1/2 cup tomato juice or 1/2 cup V8 vegetable juice
1/2 package active dry yeast
1 1/4-1 1/2 cups flour
1 teaspoon dried oregano
1 tablespoon olive oil
1/2 teaspoon salt
7/8 ounce package pepperoni slice, cut slices in half
2 tablespoons minced onions
1 clove garlic, minced
1/2-3/4 cup crumbled pre-cooked hot Italian sausage (about 1 link)
1/2 lb lean ground beef
1 teaspoon dried oregano
3 teaspoons tomato paste
3/4 cup grated mozzarella cheese

Steps:

  • Prepare the crust: Combine tomato juice, yeast and 3/4 cup of the flour in a large bowl.
  • Mix well then add oil, salt, and oregano, then gradually add the remaining 3/4 cup or so of flour.
  • Work into a soft dough, then knead for 5 minutes on a lightly floured surface until smooth and elastic.
  • Transfer dough to a lightly oiled bowl and cover with a clean towel in a warm place until doubled in size (about an hour).
  • Begin preparing filling while you wait for dough to rise, see below.
  • When dough has risen, divide it into 2 even balls and let rest another 15 minutes.
  • Pat out dough balls into 2 crusts, each about 1/8 inch thick.
  • To prepare filling: Brown the pepperoni a little in an ungreased non-stick skillet; add onion, garlic, pre-cooked and crumbled Italian sausage and ground beef.
  • Cook together until ground beef is thoroughly cooked; pour off excess grease, then add oregano and tomato paste; stir to combine thoroughly and cook another 10 minutes.
  • Add salt or pepper to taste and set aside to let cool for filling the calzone.
  • To assemble the calzone: Spread filling on one half of the prepared crust; sprinkle evenly with mozzarella cheese and top with the other prepared crust and press down firmly along the edges with the tines of a fork to seal.
  • Slash top crust with a knife as you would a pie, then bake on a lightly oiled pizza pan in a 450 degree oven 12 to 15 minutes, until lightly browned.
  • Alternatively, you could make two separate calzones instead of one large one.

1/2 cup boneless chicken breast, cooked
1/4 cup barbecue sauce
1/2 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 375°F.
  • Sprinkle flour on a wooden cutting board and roll out dough.
  • Add 1/2 cup of cooked cubed chicken marinated in barbecue sauce on on side of the dough.
  • Top the chicken with 1/2 cup of mozzarella and 2 tablespoons of ricotta.
  • Fold over the dough and seal the edges.
  • Mix up 1 egg with a splash of water.
  • Use a pastry brush to paint the egg wash over the dough.
  • Slice breathing slits into the top of the calzone.
  • Bake for 25 minutes.

1 (9 inch) package refrigerated pie crusts, containing 2 crusts
1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
1 egg
1/2 cup green onion, ends trimmed, thinly sliced
2 cups smoked mozzarella cheese, shredded
4 garlic cloves, finely grated
1/2 lb bacon, cooked and crumbled
5 ounces baby spinach leaves
1 tablespoon olive oil
1/8 teaspoon garlic salt
2 tablespoons melted butter

Steps:

  • Preheat the oven to 375 degrees. Line a baking sheet with parchment paper and set aside.
  • Place the Simply Potatoes Traditional Mashed Potatoes, green onions, 1 cup shredded mozzarella, 2 cloves finely grated garlic, and crumbled bacon into a stand mixer fitted with a paddle attachment. Mix the ingredients together for 1-2 minutes until well combined and fluffy. Set aside.
  • Place the olive oil, garlic salt, and baby spinach into a large skillet. Cook over medium-low heat until the spinach wilts and the volume reduces by 3/4, about 2-3 minutes. Be sure to stir the spinach frequently.
  • Slice each pie crust sheet in half, for a total of four halves. Evenly distribute the spinach over each dough half. When spreading the spinach on each dough piece, use only half of each piece, leaving the other half empty, as it will be folded over. You should also leave a border of clear dough in order to seal the crust later. Top the spinach with 1/4 cup mozzarella and a half cup of the potato mixture. Fold the crust over the filling. Press the edges together, then crimp the edges as you would when making a traditional pie. Place each calzone onto the prepared baking dish. Brush the tops with melted butter.
  • Bake for 30-35 minutes, until the crust is golden brown. Allow to cool for at least 5 minutes before serving.
