Meet the Cook: At our house, this is a regular - it's as much fun to fix as it is to eat! (Sometimes, we even make extras of the potatoes to serve as appetizers.) Since it's so thick, it's great for potlucks as well. My husband and I frequently team up in the kitchen. Number Of Ingredients 15

2 tablespoons olive oil
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
7 medium potatoes, sliced 1/4 inch thick
1 pound bulk Italian sausage
1 large onion, chopped
2 packages (10 ounces each) frozen chopped spinach, thawed and drained
1 cup ricotta cheese
1/4 cup seasoned bread crumbs
Dash cayenne pepper
Additional salt and pepper to taste
2 cups shredded mozzarella cheese
1/2 cup chicken broth
2 tablespoons grated Parmesan cheese

Steps:

  • In a large bowl, combine oil, garlic, salt and pepper. Add potatoes and toss to coat; spread evenly in an ungreased 15x10x1-in. baking pan. cover tightly with foil. bake at 425° for 35-40 minutes or until tender. Cool at least 15 minutes. , Meanwhile, in a large skillet, brown sausage and onion; drain. Combine spinach, ricotta, crumbs, cayenne, salt and pepper; mix well. Arrange a third of the potatoes evenly in a greased 13x9-in. baking dish. Layer with half of the spinach mixture, half of the sausage and half of the mozzarella. Repeat with a third of the potatoes and the remaining spinach, sausage and mozzarella. Pour broth over all. Top with remaining potatoes; sprinkle with Parmesan. Bake, uncovered, at 350° for 30-35 minutes. Let stand for 5 minutes before serving.

5 potatoes, peeled
2 teaspoons salt
1 teaspoon pepper
8 slices ham
7 slices mozzarella cheese
5 slices bacon, cooked and crumbled
¼ cup fresh parsley, chopped
2 cups shredded mozzarella cheese
1 cup heavy cream
2 eggs

Steps:

  • Slice the peeled potatoes into ¼ inch (½ cm) slices.
  • Season the potatoes with salt and pepper, tossing them to make sure they're coated evenly.
  • Press a layer of potatoes evenly into the bottom of a greased, square baking pan.
  • Place half of the ham slices evenly on top of the potatoes, followed by half of the sliced cheese.
  • Follow with another layer of potatoes, then the remaining ham and sliced cheese.
  • Preheat oven to 350°F (180°C).
  • Sprinkle the bacon and parsley evenly on top of the sliced cheese, and place one final layer of potatoes on top.
  • Sprinkle the shredded cheese on top of the potatoes, then press it into an even layer.
  • In a small bowl, mix the heavy cream and eggs. Pour on top of the shredded cheese.
  • Bake for about 40 minutes, until the cheese is a deep golden brown.
  • Cool slightly, slice, then serve!
  • Enjoy!

1 pound lean ground beef
1/2 pound bulk Italian sausage
1 can (19 ounces) ready-to-serve tomato-basil soup
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 package (20 ounces) refrigerated sliced potatoes
1 medium onion, thinly sliced
1 cup shredded part-skim mozzarella cheese
1-1/2 cups shredded Gruyere or Swiss cheese
3 tablespoons minced fresh parsley

Steps:

  • In a large skillet, cook beef and sausage over medium heat until no longer pink; drain. Stir in soup and tomatoes; set aside., Place half of the potatoes and onion into a greased 13x9-in. baking dish. Layer with remaining potatoes and onion. Top with mozzarella cheese and meat mixture., Cover and bake at 350° for 1 hour. Uncover; sprinkle with Gruyere cheese. Bake 10-15 minutes longer or until potatoes are tender and cheese is melted. Let stand 10 minutes before serving. Sprinkle with parsley.

6 lasagna noodles (not the no-boil variety)
1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
1 cup light sour cream, divided
nonstick cooking spray
15 -16 ounces sauerkraut (can or refrigerated package)

Steps:

  • Cook lasagna noodles in boiling water according to package directions. Drain and set aside.
  • While noodles cook, in a medium bowl mix Simply Potatoes Mashed Potatoes and 1/2 cup of the sour cream. Set aside.
  • Preheat oven to 375-degrees. Spray a 8 X 11 X 2-inch glass baking dish or casserole with nonstick cooking spray.
  • Arrange two lasagna noodles in bottom of prepared dish.
  • Spread potato mixture evenly over noodles in pan.
  • Arrange two more noodles atop potatoes.
  • Spread sauerkraut evenly over noodles.
  • Arrange last two noodles over sauerkraut.
  • Spread remaining 1/2 cup sour cream over noodles.
  • Cover tightly with aluminum foil. Bake in preheated 375-degree oven for 35 minutes, until heated through.
  • To serve, cut through all layers with sharp knife and serve with large pancake turner.
  • Makes 4 generous servings or 6 regular servings.

This is a really good way to eat proper Lasagna! I have always eaten this since I was small and really enjoyed it.

1 lb real irish minced beef
1 pint ricotta cheese
1 egg, beaten
1 pinch dried basil
1 pinch dried thyme
1 pinch dried oregano
2 garlic cloves, crushed
8 ounces shredded mozzarella cheese
1 (8 ounce) jar spaghetti sauce
12 lasagna sheets
3/4 cup parmesan cheese

Steps:

  • Preheat oven to 350°F (175°C) Gas Mark 5.
  • In a medium skillet over medium heat, cook the meat until brown. Once cooked, drain and leave to the side.
  • Mix your ricotta, egg, basil, thyme, garlic and oregano and half of the mozzarella cheese.
  • In a 9x13 baking dish with a little of the spaghetti sauce. Place three of the lasagne sheets over the sauce. Spread a layer of the cheese mixture and then a layer of the meat mixture over it and repeat until mixtures are all gone. Top the lasagne with the left over mozzarella and parmesan cheese.
  • Cover with foil and bake in a preheated oven for 30 minutes, remove foil and bake for a further 15 minutes until the cheese browns and the lasagne appears bubbly.

1 (16 1/4 ounce) package white cake mix
1 cup Simply Potatoes Traditional Mashed Potatoes, room temperature
1 cup irish cream, divided
4 cups powdered sugar
2 cups butter, room temperature

Steps:

  • Preheat oven to 350 degrees. Mix cake mix and mashed potatoes until smooth. Add 3/4 cup water and 3/4 cup Irish cream liqueur and mix making sure to scrape down the sides and bottom of the bowl and mix until smooth.
  • Line a cupcake tin with paper baking cups and fill each with 2/3C batter. Bake for 18-20 minutes or until tops are a light golden brown and a toothpick inserted in the center comes out clean.
  • While cupcakes are baking make frosting. To make frosting combine powdered sugar and butter. Mix slowly at first until powdered sugar settles. Add 1/4C Irish cream liqueur and mix until smooth.
  • Once cupcakes have cooled frost each cupcake. Use an accent decorator if desired.
