SIX-LAYER DIP
Tortilla chips make great scoopers for this dip, which is a family favorite after we open Christmas gifts. Sometimes I serve it in a glass bowl-just to show off the pretty layers.-Etta Gillespie, Elmendorf, Texas

Steps:
- On a cutting board, smash the garlic cloves, sprinkle with 1 teaspoon of the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Put the garlic, beans, chili powder, water, and olive oil in the bowl of a food processor and blend until smooth. Spread in the bottom of a 2-quart casserole or gratin dish, or in individual sized dishes, as desired.
- Scatter the cheese over the beans. Halve and seed the avocados, then mash with the jalapeno and another teaspoon of salt in a small bowl. Spread a layer of the avocado over the cheese, and then scatter the lettuce on top.
- Mix the yogurt with the cilantro and then spread over the lettuce. Add a layer of tomatoes and, finally, scatter the scallions on top. Chill until ready to serve. Garnish with a few cilantro sprigs and serve with baked chips.

SIX-LAYER MEDITERRANEAN DIP
Remember the layered taco dip everybody loves? Well, here's a Mediterranean version for you! Very, very tasty! Prep time includes chilling. This dip took a bit of work... I first posted it at Gail's way back in the 90s, I think.

Steps:
- First, strain the yogurt by putting cheesecloth or a paper coffee filter in the bottom of a strainer and pour in all the yogurt but 1/4 cup (reserve for later); let it strain for a couple of hours to thicken it up, or overnight (in the fridge) to make thicker "yogurt cheese" (I prefer it just for a couple of hours; you could also substitute sour cream for the yogurt, if you like).
- Combine the reserved 1/4 cup of un-strained yogurt with the prepared hummus, then spread mixture on the bottom of a 9 inch pie dish.
- Combine remaining strained yogurt and cumin and spread over the hummus layer.
- Toss together the garlic powder, salt, lemon/lime juice, chopped tomatoes, and avocado, then spread over the yogurt layer.
- Add a layer of the cucumbers and sprinkle with a bit of salt and pepper.
- Add a layer of feta, then finish it all off with olives.
- Let chill for an hour before serving with pita chips (artichoke hearts are a good addition to this recipe, as well.).

Steps:
- In a small bowl mix taco seasoning with refried beans. For a different and yummy taste, mix your taco seasoning with your sour cream layer.
- Layer the dip in each cup. I found that using a small cereal spoon worked best for me as a spread each layer in the cup. Here is the order I did: beans/taco seasoning mix, sour cream, guacamole, salsa, shredded cheese, tomatoes, olives, and green onions.
- Store in the refrigerator until serving and serve with chips.
- I was able to make about 12 cups of dip. They were a huge hit!
- If you wanted to, you could use the same amount of ingredients and spread it out in a 9x11" pan to make one large seven layer dip. ???? It will still taste amazing!

SIX FEET UNDER DIP
I made this a couple of weeks ago for a Halloween party and it was a pretty big hit! It's also pretty versatile as far as ingredients, as long as you put the green onions on top to mimic grass on a grave. You can use low-fat or reduced-sodium ingredients and it is still 'to die for!'

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Heat vegetable oil in a large skillet over medium heat; cook and stir onion in the hot oil until softened and slightly browned, 5 to 10 minutes. Add ground beef, taco seasoning, and garlic. Cook and stir until beef is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease. Stir in water and simmer until beef mixture has thickened, about 10 minutes. Remove from heat and cool slightly.
- Arrange the cut tortillas on a shallow baking sheet.
- Toast tortilla in the preheated oven until stiff enough to stand up as 'tombstones' in the dip, about 5 minutes per side. Brush toasted tortilla with melted butter and sprinkle with chili powder. Tap off any excess powder.
- Spread refried beans into the bottom of a 9x13-inch baking dish. Mix sour cream and salsa together in a small bowl; spread over refried beans. Sprinkle ground beef mixture atop salsa-sour cream layer. Top with a black bean layer; spread Cheddar cheese into a layer. Add green onions and cilantro as the top 'grass' layer. Arrange tortilla 'tombstones' in the 'grass'.
