SKILLET CALZONE
Italian dinner ready in just 20 minutes! Enjoy these crunchy French bread slices dunked with garlicky ground beef, bell pepper and mushroom mixture - a flavorful main dish!

Steps:
- Set oven control to broil. Place bread slices on ungreased cookie sheet. Spray bread with cooking spray; sprinkle with cheese. Broil with tops 4 to 6 inches from heat 1 to 2 minutes or until light brown; set aside.
- In 10-inch skillet, cook beef, bell pepper and garlic over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is brown; drain. Stir in tomatoes, pizza sauce and mushrooms. Cook 1 to 2 minutes or until hot.
- Place 2 toasted bread slices on each of 4 serving plates; top with beef mixture.

- Place a pizza stone (if don't have one you'll use a pan later on) in the bottom third of the oven and preheat oven to 450 degrees F.
- In a medium skillet, cook the sausage over medium-high heat until brown, using a wooden spoon to break it into crumbles. Add the peppers and onions and continue to cook until tender. Season with salt and pepper and then remove from pan and onto a paper towel lined plate to drain.
- Section off 1/4 of the pizza dough. Flour work surface and roll it out into a 8-9 inch circle. Place on a piece of parchment paper. Spread about 3 tablespoons ricotta cheese onto half of the circle, leaving a 1 inch border.
- Spoon on 1/4 of the sausage filling over the ricotta, sprinkle with a little cheese, layer on the pepperoni, more cheese, and some sliced olives.

- Preheat oven to 400 degrees. In a large skillet over medium heat cook sausage, onions and garlic until sausage is done. Stir in Italian seasoning. Drain off fat and set meat mixture aside.
- Shape one dough portion to a 12-inch circle. Press dough into the bottom and up the sides of a 10-inch skillet.
- Sprinkle half of the cheese over the bottom crust. Top with the meat mixture. Spread the 1/2 cup marinara sauce over the meat and sprinkle the peppers over the sauce. Top with the remaining cheese.
- Roll the remaining dough portion into another 12-inch circle. Place the dough over the filling. Pinch and roll the edges of bottom crust and top crust together to seal. Brush the top crust with olive oil, then sprinkle with Parmesan cheese and garlic salt. Using the tip of a sharp knife, cut 3-4 slits in the top crust.

- Preheat oven to 400º F. Heat a 12-inch cast iron skillet over medium-high heat. Add ground beef, onion, and seasonings from fennel seeds to salt. Cook until meat is browned, 7–10 minutes, breaking up meat and stirring during cooking. Drain excess oil and place mixture into a bowl. Allow skillet to cool slightly and wipe off with paper towel.
- Evenly sprinkle cornmeal in skillet (this adds flavor, texture and helps prevent sticking). Place dough from one can in bottom and press up into sides to reach the top of the skillet (you may need to cut of square edges or mold into a circle shape). Spread on sauce, top with meat mixture, sprinkle with mozzarella, mushrooms, bell peppers, then top with Parmesan cheese. Place remaining dough sheet on top, then press into edges of bottom dough to seal in all ingredients.
- Cut a few small slits on top to let out steam while baking. Bake 25 minutes, until crust is golden brown. Remove and let cool 5–10 minutes before slicing. Top with optional basil leaves.
