OLD-FASHIONED CANDIED SWEET POTATOES
Member's Choice! Sweet potatoes on the holidays are a staple side dish. These candied ones are simple to make and divine. They're filled with butter, sugar, and spice. By cooking in the cast iron, the potatoes are tender and sweet with little crispy edges. If you want to get real fancy, sprinkle with some chopped pecans.

Steps:
- 1. In a large (cast iron) skillet, melt butter over medium heat.
- 2. Add sliced potatoes to butter and toss to coat.
- 3. Mix sugar, nutmeg, cinnamon, and salt in a bowl.
- 4. Add to potatoes. Toss to coat.
- 5. Reduce heat to low and simmer for about 1 hour (covered), stirring occasionally until potatoes are fork-tender.

- Scrub sweet potatoes, but do not peel. Place potatoes in 3-quart saucepan. Add enough water just to cover. Heat to boiling; reduce heat to low. Cover and simmer 20 to 25 minutes or until tender. Drain; cool slightly. Slip off skins. Cut into 1/2-inch slices.
- Heat remaining ingredients in 10-inch skillet over medium heat, stirring constantly, until smooth and bubbly. Add potatoes. Gently stir until glazed and hot.

I have never Candied Sweet Potatoes in the oven. My mother and mother in law always cooked them in a pan on the stove burner and they were FANTASTIC !! Not ever a bite left. - 1. Scrub, wash and peel potatoes, place in large bowl and cut into 1/2 inch slices across. Set aside.
- 2. Spray a large, heavy skillet with a non stick cooking spray. Add slices of potatoes and the 3/4 cup of water.
- 3. Bring to boil on Medium high, cap with the lid and turn burner down to low. Check occasionally about every 10 to 15 minutes, DO NOT STIR. May gently slide with a wooden spoon always replacing lid. When potatoes are tender, about 20 minutes or so, gently check with a fork. Add, butter, sugar and vanilla. About 1/2 cup of liquid should still remain in pan with potatoes. Recap with lid and simmer until sugar is melted, and butter and vanilla are incorporated with drippings.
- 4. The drippings should thicken allowing you to turn potatoes gently with a spatula, don't let them stick. When Juice is thick and cooked real low, remove from burner. Leave lid on potatoes for a few more minutes to allow more steaming. The potato slices should have taken on a candied appearance.

- Peel the sweet potatoes and cut them into slices.
- Melt the butter in a heavy skillet and add the sliced sweet potatoes.
- Mix the sugar, cinnamon, nutmeg and salt. Cover the sweet potatoes with sugar mixture and stir. Cover skillet, reduce heat to low and cook for about 1 hour or until potatoes are "candied". They should be tender but a little hard around the edges. Also the sauce will turn dark. You will need to stir occasionally during the cooking. Stir in the vanilla just before serving. Serve hot.

- Bring a large pot of water to a boil. Add peeled sweet potatoes, and boil for about 4 minutes. Remove from water, and cut into 1/2 inch slices.

SKILLET CANDIED SWEET POTATOES

GRAMMA'S GLAZED CANDIED SWEET POTATO SLICES
This is the recipe my gramma used to make, passed down to my mom and all of my 7 siblings. It takes times so grab yourself a cocktail and relax. It's worth the wait! One potato generally is enough for 1-2 people. Select sweet potatoes that are uniform in diameter. I do not like to use really chubby ones. I prefer to use an electric frying pan because it has the most even cooking temperature.

- Submerge potatoes in water. Bring to a boil & simmer until they are a cooked a little more than half way through. Check with a tooth pick.
- *** It is important to NOT overcook because they will continue to cook when simmering in the brown sugar glaze.
- When done boiling, pour off all the hot water and run cold water over them until they are cooled off. Do this as quickly as possible, running and changing the water until the potatoes are completely cold. This may take a few minutes. Drain. They can now rest for hours if need be.
- In an electric skillet, slowly melt butter until completely melted.
- Add enough light brown sugar to absorb all the butter.
- (I am not 100% of the amount listed above). Continue to use a low/medium heat until all the brown sugar melts and is no longer grainy. This can take up to an hour. You can let it bubble a bit around the edges but not too hard. Continually stirring w/ a spatula.
- In the mean time: peel your potatoes. I do this GENTLY with a paring knife.
- Slice thickly at least 3/4". If you cut them too thin, they will fall apart while cooking. Set aside in single layers.
- Once the sugar is ready & gooey, no longer grainy, place the slices, one by one, side by side, in the skillet. DO NOT move them around until ready to flip.
- When the edges of the slices are gathering a candy coating and darkening, flip them. The 2nd side will not take as long to cook.
- Gently lift out and place in a single layer on a warmed serving platter. I use a pie server to serve.
CANDIED SWEET POTATOES
This is my family's recipe so it probably originate in Central Pennsylvania. There are other candied sweet potatoe recipes on Recipezaar but they all called for baking and this is stovetop preperation only. I don't have a cover for my cast iron skillet so I just lay a cookie sheet on top!
