1 tablespoon olive oil
4 russet potatoes, peeled and thinly sliced
1 teaspoon chopped fresh rosemary
1 tablespoon chopped fresh thyme
1 teaspoon chopped fresh oregano
1 tablespoon chopped fresh flat-leaf parsley
¼ teaspoon paprika
salt and pepper to taste
1 ½ tablespoons minced garlic
⅛ teaspoon cayenne pepper

Steps:

  • Melt the butter and heat the olive oil in a large skillet over medium heat. Arrange the potato slices across the bottom of the skillet in a single layer. Cook without stirring for 5 minutes, or until the potatoes have begun to brown on the bottom.
  • Sprinkle potato slices with rosemary, thyme, oregano, parsley, and paprika. Turn the potatoes, and continue cooking 5 minutes, or until tender. Turn off the heat, and sprinkle the garlic and cayenne over the potatoes. Lightly toss for about 1 minute, until the garlic has softened.

This chicken-meets-bacon-meets-sausage-meets-sauerkraut showstopper takes only 25 minutes in the oven. And there's no carving needed: once this hearty main goes into the oven, your work is done and you can enjoy the party too.

3 lb. baby Yukon Gold potatoes
Kosher salt
2 small shallots, finely chopped
1/3 cup extra-virgin olive oil
1/3 cup white wine vinegar
3 Tbsp. Dijon mustard
2 tsp. hot sauce
1 tsp. honey
1/4 cup tarragon leaves
1 Tbsp. extra-virgin olive oil
3 lb. skin-on, bone-in chicken thighs (6-8)
Kosher salt
8 oz. slab bacon, sliced 1/2" thick
6 garlic cloves, lightly crushed
2 large sprigs thyme
1 tsp. juniper berries
2 lb. sauerkraut (about 4 cups), rinsed, squeezed dry
1 cup dry white wine
2 lb. sausages, such as kielbasa and/or bratwurst

Steps:

  • Place potatoes in a small pot and pour in water to cover by 2"; season generously with salt. Bring to a boil, then immediately reduce heat so water is at an active simmer. Cook potatoes until fork-tender, 22-25 minutes. Drain; let sit 5 minutes to dry.
  • Meanwhile, whisk shallots, oil, vinegar, mustard, hot sauce, and honey in a large bowl; season dressing with salt.
  • Add hot potatoes to dressing and let sit, tossing occasionally, until they are just warm and have soaked up some of the dressing, at least 15 minutes and up to 1 hour. Just before serving, add tarragon to potato salad and toss to evenly distribute.
  • Place a rack in upper third of oven; preheat to 400°F. Drizzle oil in a large skillet. Season chicken generously with salt and arrange skin side down in a single layer in skillet. Set over medium heat and cook chicken, undisturbed, until skin is golden brown around the edges, 12-15 minutes. Using a stiff spatula, lift up chicken, then put it back down, still skin side down. Once chicken pieces have all released from skillet and slide around easily, continue to cook, shifting pieces as needed if browning unevenly, until skin is deeply browned, 6-8 minutes longer. Transfer chicken to a plate and turn skin side up. Pour off all but 1/4 cup fat from skillet.
  • Add bacon to same skillet and cook, turning once, until lightly browned, about 5 minutes; transfer to a plate. Cook garlic in skillet, tossing occasionally, until golden brown, about 3 minutes. Add thyme sprigs and juniper berries and cook, tossing, just until fragrant, about 1 minute. Add sauerkraut and wine, increase heat to medium-high, and cook, stirring occasionally, until wine is almost completely evaporated, 6-8 minutes. Remove skillet from heat.
  • Place sausages in a 3-qt. baking dish and pile sauerkraut over (sausages should be submerged). Arrange chicken thighs and bacon on top of sauerkraut. Pour in 3/4 cup water and bake choucroute until chicken is cooked through and liquid is bubbling throughout, 25-30 minutes. Let cool slightly. Serve with potato salad.
  • Potato salad (without tarragon) can be made 3 days ahead. Cover and chill. Bring to room temperature before serving.

4 pork chops (1/2 inch thick), trimmed
2 tablespoons all-purpose flour
⅓ cup grated Parmesan cheese
½ teaspoon salt

4 Yukon Gold potatoes, thinly sliced
2 medium onions, sliced
3 cubes beef bouillon
¾ cup hot water
1 tablespoon lemon juice

Steps:

  • Heat oil in a large skillet over medium heat. Coat the pork chops with flour, and place in the skillet. Brown about 4 minutes on each side.
  • In a small bowl, mix the Parmesan cheese, salt, and pepper. Sprinkle 1/2 the Parmesan cheese mixture over the pork chops. Layer chops with the potatoes. Sprinkle with remaining Parmesan cheese mixture. Top with onion slices.
  • In a small bowl, dissolve the beef bouillon cubes in hot water. Stir in the lemon juice. Pour over the layered pork chops.
  • Cover skillet, and reduce heat. Simmer 40 minutes, until vegetables are tender and pork chops have reached an internal temperature of 145 degrees F (63 degrees C).

  • Heat the butter in a large skillet over medium heat. When the butter has melted, add the potatoes, onion and garlic. Stir and cook until the potatoes and onions begin to soften, 6 to 7 minutes. 1 pound slab bacon, in one piece
1 pound kielbasa or other dark sausage
3 bratwursts or other light sausages
3 smoked loin pork chops
Salt and freshly ground black pepper

Steps:

  • Wash sauerkraut, and drain well.Combine with onion, juniper berries and wine in a large skillet or broad pot. Add enough water to come about two-thirds of the way up the side of the sauerkraut (in some pots,the wine may provide enough liquid). Turn heat to high and bring to a boil.
  • Lower heat, and nestle the bacon in the sauerkraut. Cover,and cook 1 hour; then, add sausages and pork chops,Recover,and cook another 30 to 45 minutes.Sauerkraut should be tender but retain some crunch.Season with salt and pepper to taste.
  • Cut meat into pieces and serve on platter with sauerkraut, hot mustard on the side.

2 salted (not smoked) ham hocks
3 pounds sauerkraut
3 1/2 tablespoons goose fat, duck fat, or lard
1 large onion, peeled and sliced
2 cups dry white wine, preferably Alsatian riesling
1 pound slab bacon, in one piece
Salt and freshly ground black pepper
2 lightly smashed garlic cloves
8 juniper berries
1 teaspoon caraway seeds
1 bay leaf
1 pound smoked pork loin
12 small potatoes, peeled
2 smoked bratwursts
6 frankfurters
2 blood sausages
2 tablespoons kirsch

Steps:

  • Boil ham hocks in unsalted water until tender, at least 1 1/2 hours. Meanwhile, wash sauerkraut in cold water; drain. Wash again, in hot water; drain and squeeze dry.
  • In a heavy, ovenproof pot, melt 3 tablespoons of the fat over medium heat. Add the onion, and cook it until soft and tender; do not brown. Add wine and 1 cup water, then bacon. Cover,and cook 20 minutes. Preheat the oven to 325 degrees.
  • Season sauerkraut with pepper and a tiny bit of salt; add to pot,covering bacon. Combine garlic, juniper berries, caraway and bay leaf in cheesecloth and tie into a sachet. Bury this in the sauerkraut. Lay a circle of parchment paper directly over sauerkraut, cover, bring to a boil, transfer to oven and bake 1 hour.
  • Add pork loin, top with potatoes, and return to oven for 30 minutes, or until potatoes are tender.
  • About 15 minutes before potatoes are done,add bratwursts and frankfurters to the pot with hocks. Reduce heat to simmer, and heat through. Heat remaining fat in a skillet, and carefully brown blood sausages (they burst if overcooked).
  • Add kirsch to sauerkraut; taste and add salt if necessary. Discard herb sachet.
  • To serve, slice bacon and pork loin.Cut sausages and hocks into pieces. Put sauerkraut on large platter with meats and potatoes on top and around it. Serve with hot mustard and beer or white Alsatian wine.
