Skillet Stuffing with Apples, Shallots, and Cranberries image

2 large shallots, roughly chopped
1 medium onion, roughly chopped
2 celery stalks, roughly chopped
2 medium green apples, roughly chopped (do not peel)
2 garlic cloves, roughly chopped
4 tablespoons (1/2 stick) unsalted butter
Kosher salt
freshly ground black pepper
1 medium loaf rustic country bread, cut into 1-inch cubes (about 10 cups)
1 1/2 cups low-sodium chicken broth, plus more if necessary
1/2 cup apple cider
1 teaspoon chopped fresh rosemary leaves
1 1/2 teaspoons chopped fresh thyme leaves
1/2 cup dried cranberries
2 eggs, lightly beaten

Steps:

  • Preheat the oven to 375°F. In the bowl of a food processor, pulse the shallot, onion, celery, apple, and garlic, scraping down sides of the bowl, until finely chopped.
  • In a 12-inch cast iron or other oven-safe skillet over medium-high heat, heat butter. Add the chopped vegetable mixture, season with a generous pinch of salt and pepper, and cook, stirring occasionally, until tender, 7 to 8 minutes. Reduce heat to medium, add the bread cubes and cook, stirring occasionally, until softened, 5 to 7 minutes.
  • Remove pan from heat and stir in the broth, cider, rosemary, thyme, and cranberries. Once the liquid is completely absorbed, stir in the eggs, transfer the pan to the oven and bake until browned on top and cooked through, 20 to 25 minutes.

20 ounces cubed crusty whole-wheat bread
2 tablespoons extra-virgin olive oil
1 ½ cups diced celery
1 ½ cups diced shallots
2 cups diced apple
2 cloves garlic, minced
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh sage
4 tablespoons unsalted butter
2 cups low-sodium no-chicken or chicken broth
1 cup dried cranberries
½ cup chopped walnuts
1 teaspoon salt
½ teaspoon ground pepper

Steps:

  • Preheat oven to 275°F. Spread bread on a large baking sheet. Bake until dry to the touch, about 30 minutes. Transfer to a large bowl.
  • Increase oven temperature to 350°F. Coat a 9-by-13-inch baking dish with cooking spray.
  • Heat oil in a large skillet over medium-high heat. Add celery and shallots; cook, stirring often, until just starting to brown, 3 to 5 minutes. Reduce heat to medium and cook, stirring often, until tender, 3 to 5 minutes more. Add apple and garlic; cook, stirring, for 30 seconds. Add rosemary and sage; cook, stirring, for 30 seconds. Scrape the mixture on top of the bread. Melt butter in the pan, scraping up any browned bits, then scrape onto the bread. Add broth, cranberries, walnuts, salt and pepper to the bread mixture and stir to combine. Transfer to the prepared baking dish and press with the back of a large spoon into an even layer. Coat one side of a piece of foil with cooking spray and cover the stuffing, sprayed-side down.
  • Bake the stuffing for 30 minutes. Uncover and continue baking until the top is golden brown, 20 to 30 minutes more.

1 loaf sour dough bread, cubed (about 10-cups)
1 cup sweetened dried cranberries
1 medium apple, peeled, cored and chopped
2 (12-ounce) Jones Dairy Farm All Natural Pork Sausage Rolls
1/2 cup shallots, finely diced
1/2 cup pecans, chopped
1/2 cup fresh parsley, chopped
3 tablespoons fresh sage, finely chopped and divided
1 tablespoon fresh rosemary, finely chopped
1 teaspoon fresh thyme, chopped
1 cup chardonnay wine
4 tablespoons unsalted butter
2 cups chicken stock
2 eggs, lightly beaten

Steps:

  • Preheat oven to 350°F. Place cubed sourdough on 2 baking sheets. Bake 10 to 15 minutes, stirring bread occasionally until toasted, but not browned. Place toasted bread cubes into extra large bowl, add cranberries and apples. Set aside. Butter 9x13-inch casserole dish. Set aside. In large skillet over medium heat, cook sausage using spatula to break it up as it cooks. Add 1 1/2 tablespoons sage. Cook through, but do not brown. Remove sausage from skillet using slotted spoon and add it to bowl with bread cubes. Leave 2 tablespoons of sausage drippings in the pan (drain any extra) and add shallots. Cook until translucent; add pecans, herbs and remaining sage to skillet. Cook 2 minutes stirring frequently. Pour shallot herb mixture into bowl with bread cubes. Add wine to skillet and scrape browned bits from bottom of pan as it cooks. Add butter and chicken stock. Bring to boil for 3 minutes, remove from heat and pour over bread cubes in bowl. Add eggs. Toss gently until combined and pour into prepared baking dishes. Cover with foil and bake 40 minutes. Remove foil and bake 15 minutes more.

1 1/2 sticks (3/4 cup) unsalted butter
1 lb shallots, chopped (3 cups)
2 lb tart apples such as McIntosh, Gala, or Cortland
1 cup dried currants
1 cup apple cider
1 1/4 teaspoons dried marjoram, crumbled
1 1/2 teaspoons salt
1 teaspoon black pepper
1/4 teaspoon freshly grated nutmeg
Pinch of ground allspice
1 cup walnuts (1/2 lb), toasted and coarsely chopped
1 tablespoon finely grated fresh lemon zest
2 cups turkey giblet stock or low-sodium chicken broth

Steps:

  • Preheat oven to 325°F.
  • Spread bread cubes in 2 shallow baking pans and bake in upper and lower thirds of oven, switching position of pans halfway through baking, until golden, 20 to 25 minutes total. Cool bread in pans on racks, then transfer to a large bowl.
  • Melt butter in a 12-inch heavy skillet over moderate heat, then add shallots and cook, stirring frequently, until shallots are well browned, 15 to 20 minutes.
  • While shallots are cooking, peel, core, and coarsely chop apples. Boil currants and cider in a 1-quart heavy saucepan, stirring occasionally, until cider is absorbed, 6 to 8 minutes. Add apples to browned shallots along with marjoram, salt, pepper, nutmeg, and allspice and cook, stirring occasionally, until apples begin to soften, about 8 minutes.
  • Transfer currants and apple mixture to bowl with bread cubes, then add walnuts, zest, and stock and toss well.
  • Transfer stuffing to a buttered 3- to 3 1/2-quart shallow baking dish. Bake, covered, in middle of oven 30 minutes, then uncover and bake until browned, about 30 minutes more.
