Bob Harper's Skinny Chicken Fajitas

Steps:
- Season chicken with salt and pepper
- Heat a large, non-stick skillet over high heat
- Once the skillet is hot, add in the chicken tenders
- Cook for about 5 minutes then flip
- Cook a few minutes more
- Add in the green pepper, red pepper, onion and jalapeño
- Cook until vegetables begin to brown
- Add in the cumin, chili powder and paprika
- Toss the chicken and veggies around to coat
- Add in the tomato sauce and lime juice
- Bring to a simmer and remove from heat to cool
- When you're ready to serve, place some of the chicken and vegetables into a lettuce cup and top with fresh cilantro leaves

Steps:
- Marinate the chicken with lime juice, and season with chile powder, salt, pepper, garlic powder and cumin.
- Season vegetables with salt and pepper and toss with olive oil.
- To grill the onions and peppers outside on the grill, use a cast iron skillet and grill covered over medium heat until tender, about 15 minutes. Or, to cook them indoors, you can use a large skillet on the stove over medium heat for 16 to 18 minutes, covered until the onions and peppers are soft.
- Heat an outdoor grill or indoor grill pan over medium heat; grill chicken until cooked through, about 8 minutes on each side.
- Transfer to a cutting board when done and cut into strips. Once cooked, combine with the peppers and onions.
- Serve immediately with warmed tortillas, cheese and toppings.

CHICKEN FAJITAS
Marinating chicken and peppers and onions in a highly flavored marinade and then grilling gives it all the flavor without fat. A spiced creamy yogurt sauce and avocado sauce wrapped in a corn tortilla with fresh cilantro keeps the fajitas healthy and fresh tasting.

- 1. Put the cilantro, lime juice, broth, scallions, garlic, jalapeno, honey, and salt in a blender, puree until smooth. Reserve 2 tablespoons; do not wash out the blender.
- Put chicken breasts in a medium bowl and the peppers and onions in another. Divide the remaining cilantro puree evenly between the chicken and the peppers and onions. Toss well to coat the chicken and vegetables and let stand, at room temperature, for 30 minutes.
- 2. Add the avocado, 1/2 cup water, and the reserved 2 tablespoons cilantro sauce to the blender. Puree until smooth and season with salt. Set aside.
- 3. Heat the oil in a small skillet set over medium heat until hot. Add the cumin and coriander and continue to cook until fragrant, about 30 seconds to 1 minute. Pour the spices over the yogurt and set aside for the flavors to blend. Stir before serving.
- 4. Preheat a grill for medium-high/direct heat cooking. Oil the grill grates. Grill the chicken and vegetables, turning, until the vegetables are tender and the chicken reaches an internal temperature of 160 degrees F, about 5 to 8 minutes for the vegetables and 12 to 15 minutes for the chicken. Let chicken rest 5 minutes. Place the tortillas on the grill until just warmed through, about 30 seconds.
- 5. To assemble the fajitas: slice the onions and peppers into thin strips and then slice the chicken. Place some peppers, onions, chicken and cilantro in a tortilla topped with the spiced yogurt and the avocado sauce.

- Add half of the sliced peppers and onions to your slow cooker.
- Layer the chicken and coat all sides with taco seasoning.
- Top with garlic, the juice from one lime, and tomatoes (be sure to drain).
- Add the remaining peppers and onions, cover and any remaining lime juice.
- Cook on high for 3-4 hours.
- Remove chicken and cut/shred into slices (chicken left longer will tend to shred more - cook to your preference).
- Return the sliced chicken to the slow cooker to marinate in the juices for about 10 more minutes (on LOW) until ready to serve.
- NOTE: If you find that there is too much liquid, you can remove till there is a desired amount before serving.
- Assemble Fajitas to your liking - we recommend topping with cheese, sour cream, and guacamole!

Steps:
- Heat 1 tablespoon oil in a skillet over medium heat; stir in onion and bell pepper. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Remove vegetables to a plate.
- Add chicken to the skillet, adding more oil if needed. Saute until chicken is no longer pink and the juices run clear, about 5 minutes. Add water and taco seasoning; stir until seasoning dissolves. Simmer until sauce begins to thicken and stick to chicken, and chicken is fully cooked, 3 to 5 minutes.

- Use two medium bowls, add chicken to one and bell peppers, onion, and jalapeno to the other. Combine in a small bowl, olive oil, black pepper, cumin, chili powder, cayenne, salt, and cilantro. Divide oil mixture evenly over chicken and bell pepper mixture, toss both to combine.
- Heat a large skillet to medium-high heat, add chicken, and sear on both sides. Remove chicken and place on a plate while cooking peppers. Reduce heat to medium, add bell pepper mixture to the same skillet and cook until tender, about 8 to10 minutes. Return chicken to skillet with peppers, add chicken broth and cook until chicken is done and broth has cooked down.
- Oven Method: Preheat the oven to 300 degrees. Wrap tortillas that are stacked on top of each other, in a damp dishtowel and place in a covered casserole dish. Warm for 15 to 20 minutes while chicken cooks.
