1/2 pound Italian sausage links
1 tablespoon canola oil
1 cup cubed yellow summer squash (3/4-inch pieces)
1/2 cup chopped green onions
2 garlic cloves, minced
1-1/2 cups chopped fresh tomatoes
2 teaspoons Worcestershire sauce
1/8 teaspoon cayenne pepper

Steps:

  • In a large skillet, cook sausage over medium heat in oil until a thermometer reads 160°; drain. , Cut into 1/2-inch slices. Add the sausage, squash and onions to the skillet; cook for 3-4 minutes or until vegetables are tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, Worcestershire sauce and cayenne pepper; heat through.

2 tablespoons olive oil, divided
4 sweet Italian turkey sausage links (such as Jennie-O®)
1 large red onion, chopped
1 red bell pepper, cut into 1 1/2-inch chunks
1 green bell pepper, cut into 1 1/2-inch chunks
3 cloves garlic, minced
½ teaspoon crushed red pepper, or more to taste
salt and ground black pepper to taste

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook turkey sausages until they begin to brown and firm up, 3 to 4 minutes per side. Remove to a cutting board and let cool slightly before cutting into 1/2-inch-thick diagonal slices; they will not be completely cooked at this point.
  • Heat remaining 1 tablespoon oil in the same skillet over high heat. Quickly stir-fry onion until it begins to brown, about 1 minute. Add peppers and continue cooking over high heat, stirring constantly, until peppers begin to brown, 2 to 3 minutes. Do not overcrowd the skillet in order to get a nice char on the vegetables. Mix in garlic and cook for 1 minute.
  • Return sausage, and any accumulated juices, to the skillet. Season with crushed red pepper, salt and pepper and reduce heat to medium. Stir to combine and continue cooking until sausage is no longer pink in the center, about 2 minutes more.

I love to make this dish with the fresh crook-neck squash and zucchini we get from our garden. You can mix this up with any type of your favorite sausage or bratwurst!

1 package(s) smoked turkey sausage (or your favorite brand of sausage or brats)
1 small yellow crooked neck squash
1 small zucchini
1 small onion, sliced in thick onion ring type slices
2 clove(s) garlic, diced
1 medium green pepper, de-seeded and sliced thick
- salt, pepper, fresh cilantro and basil to taste
1 tablespoon(s) extra virgin olive oil
1 small chile pepper, diced (optional)

Steps:

  • Wash and slice vegetables (I like to use summer squash, zucchini and green peppers). For an added kick, diced up a chile pepper to the mix!
  • In a large skillet, on medium heat, warm up the olive oil and simmer the diced garlic for about 30 seconds.
  • Add the squash, zucchini, pepper and onion, then season to taste with salt, pepper and fresh herbs (I also add some Italian seasoning and a dash of seasoned salt).
  • Lower the heat to medium low, cover and simmer for about 20-25 minutes, turning the sausages and tossing the vegetables occasionally.

1 package (12 ounces) fully cooked Italian chicken sausage links, cut into 1-inch pieces

1 skin-on boneless turkey breast (1 1/2 to 1 3/4 pounds)
3 tablespoons extra-virgin olive oil
3/4 teaspoon dried marjoram
2 cloves garlic, finely chopped
Kosher salt and freshly ground pepper
2 bunches spring onions or small regular onions trimmed and halved
4 stalks celery, cut into 3-inch pieces
2 bunches small carrots, trimmed
1 10-to-12-ounce package mixed mushrooms, stemmed
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 475 degrees F. Heat a large cast-iron skillet over high heat. Rub the turkey skin with 1 tablespoon olive oil; rub over and under the skin with the marjoram, garlic, salt and pepper.
  • Sear the turkey, skin-side down, without moving, until golden, 4 to 5 minutes. Flip the turkey, then add the onions, cut-side down, and cook until slightly browned, 4 to 5 more minutes. Scatter the celery and carrots over the onions, drizzle with 1 tablespoon olive oil and season with salt and pepper. Add the mushrooms, drizzle with the remaining 1 tablespoon oil and season with salt and pepper.
  • Transfer the skillet to the oven and roast until a thermometer inserted into the thickest part of the turkey registers 160 degrees F and the vegetables are tender, 20 to 25 minutes. Let the turkey rest 5 minutes before slicing. Sprinkle with the parsley.
