3 medium potatoes, cut into 1/4-inch slices
1 tablespoon vegetable oil
1 (14 ounce) jar pizza sauce
1 green bell pepper, chopped
1 onion, chopped
2 fresh mushrooms, chopped
1 (3 ounce) package sliced pepperoni
1 (16 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Cover a baking sheet with aluminum foil. Lightly grease the foil.
  • Arrange the potato slices on the prepared baking sheet, and drizzle with oil. Bake 20 minutes in the preheated oven.
  • Remove potatoes from heat, and turn. Drizzle with sauce, and top with green pepper, onion, mushrooms, and pepperoni. Top with mozzarella cheese.
  • Return topped potatoes to the oven, and continue baking 10 minutes, or until cheese is melted.

Number Of Ingredients 12

4 cups all purpose flour
1 envelope of active dry yeast
2 cups lukewarm water divided
1 teaspoon sugar
2 tablespoons canola or vegetable oil
1 teaspoon salt
5 medium white potatoes, peeled and thinly sliced
salt and pepper to taste
3/4 cup olive oil
Your favourite dry spices/herbs (oregano, granulated garlic, dried onion, chili pepper flakes)
Fresh rosemary chopped (if you like)
1/2 cup shredded mozarella

Steps:

  • Measure out the flour and place in a large bowl forming a well in the middle.
  • In a bowl, mix the yeast with 1 cup of the water. Add the sugar and stir to mix well. Set aside to let bubble and become frothy.
  • To the flour well, add the oil, then the frothy yeast mixture. Add the other cup of water to the bowl that contained the yeast, swish it around and then add this to the well contents.
  • Begin mixing the flour into the liquid and at this point, sprinkle the salt in.
  • When all the flour and liquid are combined, dump the dough out onto a floured board and knead well for about 10 minutes.
  • Place the dough into a lightly oiled bowl then set aside and let rise for about 5 minutes. Lightly punch it down then set side again and let rise for about 2 hours.
  • Season the sliced potatoes with salt and pepper
  • Add herbs/spices to your liking
  • Add the olive oil
  • Let the potatoes sit for 45-60 minutes. The potatoes will release water. Do not drain.
  • After the dough has rested for 2 hours, punch it down again and then spread it out into a pizza pan lightly greased with butter or shortening. Prick the dough all over lightly with a fork.
  • Lightly brush the dough with olive oil.
  • Begin placing the potato slices over the pizza, overlapping the slices as shown in the photo.
  • When all the slices have been placed on the pizza, evenly sprinkle about 3/4 of the potato water over the pizza.
  • Finally, sprinkle the shredded mozzarella over the pizza.
  • In a preheated oven, place the pizza in the middle of the oven and cook for 20 minutes.
  • For a regular oven, set temperature at 375-400F.
  • Nonna Anna cooks her pizza at 440F using convection roast on her gas range.
  • Adjust cooking temperature to your particular oven.

1 small onion, chopped
salt and pepper to taste
¼ teaspoon garlic powder
5 cups peeled and thinly sliced potatoes
1 (3 ounce) package chopped pepperoni
1 (10.75 ounce) can condensed tomato soup
1 (10.75 ounce) can condensed Cheddar cheese soup
½ cup milk
½ teaspoon dried oregano
¼ teaspoon Italian seasoning
½ teaspoon brown sugar
8 ounces shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cook the ground beef and onion in a large skillet over medium heat until evenly browned. Drain off grease. Season with salt, pepper, and garlic powder.
  • Spread the sliced potatoes in a layer on the bottom of a 9x13 inch baking dish. Spread the ground beef and onion over the potatoes. Place slices of pepperoni over the ground beef. In a saucepan over medium heat, combine the tomato soup, Cheddar cheese soup, and milk. Season with oregano, Italian seasoning, and brown sugar. Mix well, and cook until heated through. Pour over the contents of the baking dish.
  • Cover the dish with aluminum foil, and bake for 30 minutes in the preheated oven. Remove the aluminum foil, sprinkle mozzarella cheese over the top, and bake for an additional 15 minutes, until the cheese is melted and bubbly.

An easy way to give the bland potato a lot of new flavor ! The light coating of butter and cheese gives the potatoes a crisp outside. These are fun to make, and look delightful ! Oven baked, or microwave. Oven bake time: appx. 1 hour. Microwave bake time 16-20 minutes.

4 medium potatoes
1 teaspoon salt
3 tablespoons melted butter
2 -3 tablespoons chopped fresh herbs, such as parsley, chives, thyme or 2 -3 tablespoons sage
4 tablespoons grated cheddar cheese
1 1/2 tablespoons grated parmesan cheese

Steps:

  • Peel potatoes only if the skin is tough, otherwise, just scrub and rinse them.
  • Cut potatoes vertically, into thin slices, but not all the way through. Lay a spoon next to the potato to prevent knife from cutting all the way through. (A wooden spoon works great.).
  • Put potatoes in a baking dish. Fan them slightly.
  • Sprinkle with salt, and drizzle with the melted butter. Sprinkle with herbs.
  • Bake potatoes at 425 degrees for about 50 minutes.
  • Remove from oven. Sprinkle with cheeses.
  • Bake potatoes for another 10-15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. Check for doneness with a fork.
  • To microwave: Prepare potatoes as above, and place in a microwave safe dish or pan.
  • Sprinkle with melted butter and herbs.
  • Microwave on High power for 10 minutes, rearranging the potatoes after 5 minutes if your microwave does not have an automatic turn table.
  • Let rest for 5 minutes.
  • Sprinkle with grated cheese and Parmesan cheese.
  • Microwave for another 4-6 minutes on High power until cheeses are melted, and potatoes are soft.
  • Sprinkle with salt, and serve.
  • Note: You may substitute 2-3 teaspoons dried herbs of your choice for the fresh, if you prefer.
  • After the potatoes are done, a little sour cream on top, sprinkled with bacon bits might be good.

One recipe for bread dough:
3/4 cup lukewarm water
1 1/2 teaspoons dry yeast
1/2 teaspoon sea salt
2 1/2 cups flour
2 tablespoons extra-virgin olive oil
For the topping:
2 tablespoons extra-virgin olive oil
2 cloves garlic, green germ removed, thinly sliced
3 medium, waxy potatoes (about 14 ounces), peeled, cooked, and thinly sliced into rounds
1/2 cup heavy cream or crème fraîche
1 teaspoon fresh thyme leaves
Sea salt and freshly ground black pepper

Steps:

  • 1. Make the dough and let it rise until double in bulk, about 1 hour. Dust a baking sheet with semolina flour. Roll out the dough to an 18 x 12 inch rectangle, and fit it onto the baking sheet. Let the dough rise for 20 minutes.
  • 2. Preheat the oven to 425°F.
  • 3. Brush the dough with 1 tablespoon of the olive oil, then sprinkle it with the garlic slices. Cover it with the potato slices, then drizzle those with the remaining olive oil and the cream. Sprinkle it with the fresh thyme leaves, crushing them as you sprinkle, and season it liberally with pepper, and lightly with salt.
  • 4. Bake in the center of the oven until the dough is golden at the edges and the cream is bubbling gently, about 35 minutes. Remove, let sit for 5 minutes, then cut and serve.
