Our version of the traditional dish of Mardi Gras is simmered to perfection in your slow cooker. Andouille sausage, chicken, rice and Cajun spices come together for the perfect gumbo.

1 tablespoon olive oil
14 oz andouille sausage, sliced
1 cup diced onion
1 cup diced green bell pepper
1 cup diced celery
1 lb uncooked chopped chicken
2 cups chopped okra
1/4 cup vegetable or olive oil
1/2 cup Gold Medal™ all-purpose flour
1 teaspoon Cajun seasoning
1 teaspoon dried thyme leaves
3 cups beef stock, warmed
1 can (14 oz) diced tomatoes
4 cups cooked white rice
1/4 cup chopped green onions (4 medium)

Steps:

  • Spray 6-quart slow cooker with cooking spray.
  • Heat 10-inch skillet over medium heat. Drizzle with olive oil, and add sausage. Cook about 7 minutes, stirring occasionally, until sausage lightly browns; spoon into slow cooker. In same skillet, add onion, bell pepper and celery. Cook until crisp-tender, stirring occasionally; add to slow cooker. In same skillet, add chopped chicken. Cook until no longer pink, stirring occasionally; add to slow cooker. Add okra to slow cooker.
  • In heavy or cast-iron skillet, heat vegetable oil over medium-low heat. Using whisk, beat in flour; add Cajun seasoning and thyme. Continue to beat and cook 15 to 20 minutes, making roux that is brown and smells very nutty. Add beef stock, and beat well with whisk. Heat to boiling, beating constantly. Cook until thickened; add to slow cooker.
  • Add diced tomatoes to slow cooker; stir well. Cover; cook on Low heat setting 6 hours.
  • Serve gumbo with rice. Garnish with green onions before serving.

6-8 ounces carrots
6-8 ounces celery
6-8 ounces bell pepper
6-8 ounces onions
2-3 garlic cloves
2 tablespoons butter
12 oz spicy andouille sausage
4 cups vegetable broth
2 teaspoons cajun seasoning blend
1/4 teaspoon salt
1/4 cup cream
12 oz frozen shrimp (thawed)
Optional: cooked rice or farro for serving

Steps:

  • Finely dice carrots, celery, bell pepper, onion and garlic (or dice using a chopper)
  • Melt butter is skillet or mult-cooker over medium high heat and then add veggies and sauté until softened, about 3-5 minutes
  • Chop sausage and add to slow cooker along with broth and cooked veggies (amount of broth to add depends on how hearty you want the soup)
  • Add seasoning and cover and cook on high for 2-3 hours or low for 4-6
  • Add shrimp and cream and return slow cooker to high heat until shrimp cooked through, around 10 minutes or so
  • Serve over cooked rice or as desired

1 1/2 pounds boneless skinless chicken thighs
1 1/2 cups ketchup
1/4 cup cider vinegar
2 tablespoons dark brown sugar
2 tablespoons molasses
2 tablespoons yellow mustard
2 tablespoons Worcestershire sauce
1 clove garlic, grated
Kosher salt and freshly ground black pepper
4 hamburger buns
Coleslaw, bread & butter pickles and potato chips, for serving

Steps:

  • Combine the chicken, ketchup, vinegar, sugar, molasses, Worcestershire, mustard, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in a large resealable plastic bag and shake to combine. Squeeze out the air from the bag and seal. Freeze until ready to use, up to 3 months. Thaw in the refrigerator for at least 24 hours before cooking.
  • Pour the contents of the plastic bag in a 6-quart slow cooker. Cook on low until the meat is tender, 5 to 7 hours. Shred the chicken with a fork and toss it in the cooking liquid.
  • Divide the chicken among the 4 buns and top with coleslaw and pickles. Serve with potato chips.

2 large carrots, sliced into 1-inch pieces (about 2 cups)
1 clove garlic, grated
2 tablespoons curry powder
1 tablespoon honey
1 teaspoon grated fresh ginger
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
One 14-ounce can coconut milk
Lime wedges, fresh cilantro and cashews, for serving

Steps:

  • Layer the cauliflower, chickpeas, tomatoes, carrots, garlic, curry powder, honey, ginger, crushed red pepper flakes, 2 teaspoons salt and a few grinds of black pepper in a large resealable plastic bag. Squeeze out the air from the bag and seal. Freeze until ready to use, up to 3 months. Thaw in the refrigerator for at least 24 hours before cooking.
  • Pour the contents of the bag into a 6-quart slow cooker. Cook on low until the cauliflower is tender and can easily be pierced with a paring knife, 7 to 9 hours. Pour in the coconut milk and gently stir, being careful to keep the cauliflower quarters intact. Season to taste with salt and pepper. Serve with lime wedges, cilantro and cashews for topping.

1 tablespoon vegetable oil
2 green bell peppers, chopped
1 large onion, chopped

½ pound chicken andouille sausage, quartered lengthwise and sliced

1 (10.75 ounce) can reduced-sodium chicken broth
1 tablespoon salt-free Cajun seasoning
¼ teaspoon salt
¼ teaspoon ground black pepper, or more to taste
½ pound uncooked medium shrimp, peeled and deveined
5 cups frozen riced cauliflower
2 sprigs chopped fresh parsley, or to taste

Steps:

  • Heat a large skillet over medium heat. Add flour; cook, stirring constantly, until flour is deep golden and smells toasty, 7 to 10 minutes. Reduce heat if browning too quickly. Transfer to a 6-quart slow cooker.
  • Add oil, bell peppers, onion, and garlic to the skillet; cook and stir until tender, 5 to 7 minutes. Stir into slow cooker until coated. Stir in sausage, tomatoes, broth, Cajun seasoning, salt, and black pepper.
  • Cook on Low for 6 to 7 hours or on High for 3 to 3 1/2 hours. Stir in shrimp; cook until opaque, about 30 minutes on Low or 15 minutes on High.

1 -2 lb chicken, boneless skinless
2 lbs eckrich farm smoked sausages
10 cups chicken broth (or, water* )
1 (4 ounce) package Zatarians gumbo base mix
1 -2 small onion, diced
1 small green bell pepper, diced
1/4 cup fresh parsley
1 (16 ounce) can okra
1 (16 ounce) can corn, drained
1 (8 ounce) box rice, (wild pecan -or- instant white)

Steps:

  • Add 1 package of the Creole or Cajun Gumbo Mix to Large Pot of Cold Water or chicken broth (10 cups+)* before you put the chicken into cook. Stir well and bring to a boil.
  • Please note that you can find several brands of this gumbo base mix.
  • It's usually on the grocery isle with the gravy, and other sauce mixes in packages. I mentioned "Zatarians" brand in my ingredients list because that's the only brand that this program would accept. I've tried several.
  • brands and they have all been very good.
  • Turn heat down to medium. Add chicken to pot of water with gumbo mix and cook until done. (20-30 minutes).
  • Cut cooked and cooled chicken into bite-size pieces and put back in the pot.
  • Cut up the smoked sausage in small bite-size pieces and add to pot.
  • Note: You can pre cook the sausage in the microwave on high for 2 minutes or so, if you would like to remove some of the grease from the sausage first, before adding to the pot.
  • Add all other ingredients (except rice) and cook on low to medium for an hour. Use 1 or 2 cans each of the Vegetables (corn and okra), depending on how much you like.
  • Cook the rice separately and set aside. When Gumbo is finished and you are ready to serve, add rice to individual serving bowls and spoon gumbo on top of rice.
  • For variation, you can also add a package of frozen, pre cooked and shelled, medium shrimp, which is also excellent. If you use shrimp, don't add until the last 15 minutes of cooking.
  • *May need to add more water, depending on how soupy or thick you want the gumbo.
  • Can also be made in the crock pot and cook on low for 8-10 hours.
