SMOKED PAPRIKA DUTCH BABY WITH SERRANO HAM AND FRIED EGGS

Smoked Paprika Dutch Baby with Serrano Ham and Fried Eggs image

Provided by Erin Jeanne McDowell

Categories     main-dish

Time 30m

Yield One 12-inch Dutch baby (4 servings)

Number Of Ingredients 12

4 tablespoons unsalted butter
5 large eggs
1 cup whole milk
1 1/4 cup all-purpose flour
1 tablespoon smoked paprika
3/4 teaspoon fine sea salt
2 tablespoons unsalted butter
4 large eggs
Salt and freshly ground black pepper
8 slices serrano ham
Chopped chives, for sprinkling
Smoked paprika, for sprinkling

Steps:

  • Make the Dutch baby: Preheat the oven to 425 degrees F. Melt the butter in a 12-inch cast-iron skillet or other large oven-safe skillet over medium heat.
  • In a large bowl, whisk the eggs and milk together until well combined. Add the flour, paprika, and salt and whisk until smooth. Pour the batter into the hot skillet and bake until the pancake puffs up around the edge and turns very golden brown, 20 to 25 minutes.
  • While the Dutch baby is baking, prepare the toppings: Melt the butter in a medium skillet over medium heat. Add the eggs and fry until the whites are set and the yolks are just set, 5 to 7 minutes. Season with salt and pepper.
  • When the Dutch baby has finished baking, remove it from the oven--it will begin to deflate shortly after it comes out. Garnish immediately, arranging the fried eggs and ham on top, then sprinkling with chives and a few pinches of smoked paprika.

SMOKY GRILLED DEVILED EGGS

Smoky Grilled Deviled Eggs image

These delicious deviled eggs are packed with smoky flavor. Adobo sauce and smoked paprika spice up the yolks, while a quick trip to a hot grill gives the whites a hint of fire and grill marks.

Provided by Food Network Kitchen

Time 20m

Yield 24 deviled eggs

Number Of Ingredients 6

12 hard-boiled eggs, peeled
1/2 cup mayonnaise, plus more for brushing
1 tablespoon Dijon mustard
2 teaspoons chipotle adobo sauce from chipotle peppers in adobo
1 teaspoon smoked paprika, plus more for dusting
Kosher salt and freshly ground black pepper

Steps:

  • Prepare a grill for medium-high heat.
  • Slice each hard-boiled egg in half lengthwise. Scoop the egg yolks into a medium bowl and mash with a fork. Add the mayonnaise, mustard, adobo sauce and paprika and stir together until completely combined; season with salt and pepper. Transfer the mixture to a piping bag and refrigerate until ready to use.
  • Lightly brush the egg whites on the cut sides with mayonnaise. Put the eggs cut-side down in a grill basket; close and secure the basket. Place the basket directly over the hot coals and cook until grill marks appear on the egg whites, 30 seconds to a minute. Transfer the whites to a serving plate and refrigerate until ready to serve.
  • When ready to serve, pipe some of the yolk mixture into each egg white and dust with a little paprika.

SPINACH WITH CHICKPEAS AND FRIED EGGS

Spinach with Chickpeas and Fried Eggs image

Yield Makes 4 servings

Number Of Ingredients 12

3 tablespoons olive oil, divided, plus more
4 medium garlic cloves, thinly sliced, divided
8 cups spinach, coarsely chopped
Kosher salt, freshly ground pepper
1 cup chopped onion
1 teaspoon cumin seeds
1/4 teaspoon smoked paprika
2 15-ounce cans chickpeas, rinsed
5 canned whole tomatoes, crushed
3 cups (or more) vegetable broth
4 large eggs
Ingredient info: Smoked paprika is available at most supermarkets.

Steps:

  • Heat 1 tablespoon oil in a large heavy pot over medium heat. When oil begins to shimmer, add 1 garlic clove. Stir until beginning to turn golden brown, 1-2 minutes. Add spinach to pot. Toss to coat; season with salt and pepper. Cook until spinach is wilted but still bright green, 2-3 minutes. Transfer to a medium bowl; set aside. Wipe out pot.
  • Heat 2 tablespoons oil in same pot over medium heat. When oil begins to shimmer, add onion and 3 garlic cloves. Cook, stirring often, until onion is softened, 3-4 minutes.
  • Add cumin and paprika; stir until cumin is toasted and fragrant, 1-2 minutes. Add chickpeas and tomatoes; stir to coat. Cook until tomatoes start to caramelize and chickpeas begin to brown, 8-10 minutes. Add 3 cups broth; bring to a simmer, scraping up any browned bits from bottom of pan. Reduce heat to medium; simmer, occasionally mashing some chickpeas with the back of a spoon or a potato masher, until sauce is thickened, 15-20 minutes. Fold in spinach; simmer for flavors to meld, adding more broth by 1/4-cupfuls if too thick, 8ñ10 minutes.
  • Pour oil into a large heavy skillet to a depth of 1/8" (about 1/4 cup). Heat until oil begins to shimmer. Crack 2 eggs into hot oil, spacing apart. Using a large spoon, carefully baste whites (not yolks) with oil until whites are set and edges are crunchy, lacy, and golden brown, 2-3 minutes (do not turn). Season eggs with salt and pepper. Transfer to a plate and repeat with remaining 2 eggs.
  • Spoon chickpea stew into bowls and top each with a fried egg.

SAUTéED GREENS WITH SMOKED PAPRIKA FOR TWO

Sautéed Greens With Smoked Paprika for Two image

Soft slivers of garlic and shallots and a dash of smoked paprika give this verdant side dish its complexity and charm. You can make it with any greens you have on hand. Softer spinach and chard make for a silkier dish, while sturdy kale and collard greens give it more heft. Just adjust the cooking time as needed to make sure your greens are thoroughly tender.

Provided by Melissa Clark

Categories     vegetables, main course

Time 20m

Yield 2 servings

Number Of Ingredients 8

1 1/2 tablespoons extra-virgin olive oil
1 large shallot, thinly sliced
1 large garlic clove, thinly sliced
Kosher salt and black pepper
1/4 teaspoon smoked paprika
1 small bunch greens, such as kale, chard, spinach or mustard greens, torn into bite-size pieces (about 6 cups)
1/4 cup turkey, chicken or vegetable broth, or use water, plus more as needed
Lemon wedges, for serving (optional)

Steps:

  • Place a large skillet over medium-high heat. Add the oil and let it heat up for about 20 seconds. It will thin out to coat the pan. Stir in shallot slices and garlic, and cook until pale golden at the edges and softened, about 2 minutes. Add a big pinch of salt and the paprika. Give everything a stir.
  • Add the greens to the pan, using tongs to toss everything well. Add broth, and let greens simmer, until very soft, about 3 minutes for tender greens, and up to 15 minutes for tougher, mature greens. If the greens still seem tough but the pan is dry, splash in a little water and let cook for another few minutes.
  • Taste and adjust seasoning, if needed. Squeeze on a little lemon juice, if you like, then serve hot or warm.

  • When oil is shimmering, add the salt, pepper, and paprika to the pan. Swirl to distribute. The spices will quickly sizzle slightly and become fragrant.
  • Crack the egg directly into the skillet on top of wherever the oil and spices have collected. Add an itty-bitty-teeny-tiny pinch of salt directly over the yolk, along with another quick grind of pepper. If you aren't confident about cracking directly into the skillet, crack the egg into a small bowl first so you can remove any shell pieces before adding to the skillet.
