1 1/2 teaspoons finely grated lemon peel
16 large black pepper or salt-and-pepper potato chips

Steps:

  • Stir crème fraìche and lemon peel in small bowl. Arrange potato chips on plate. Divide salmon among chips. Spoon rounded 1/2 teaspoon lemon crème fraìche atop salmon on each chip and sprinkle with chives.

150g smoked salmon, trimmings are fine
200g tub soft cheese
1 tbsp crème fraîche, only if you have some
juice half a lemon
small bunch dill or chives, chopped
breadsticks or granary toast, to serve

Steps:

  • If you aren't using smoked salmon trimmings then chop the salmon into small pieces. Tip the soft cheese, crème fraîche (if using) and lemon juice into a food processor, season generously with black pepper and blitz to your liking. Add the smoked salmon and pulse a few times if you want the paté chunky or blitz some more if you want the paté smooth and pink.
  • Stir the herbs into the paté and spoon into a large or four smaller bowls and serve with warm toast as a starter or with breadsticks as a dip.

2 tablespoons fresh lemon juice
1 teaspoon chopped fresh parsley
½ teaspoon garlic powder
salt and ground black pepper to taste
1 tablespoon whole black peppercorns
4 salmon fillets
2 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk together the butter, lemon juice, parsley, garlic powder, salt, and pepper. Stir in the peppercorns. Dip the salmon into the sauce so the flesh side is coated, and set on a plate,
  • Heat the olive oil in an ovenproof skillet over medium-high heat. When the oil begins to smoke, add the salmon, placing it skin side up into the skillet. Cook for until the flesh is seared and golden brown, about 1 minute.
  • Place the skillet into the preheated oven, and cook until the salmon flakes easily with a fork, 10 to 12 minutes. Serve immediately.

6 slices of smoked salmon
12 large potato chips
2 tbs crème fraîche (or sour cream)
Chive, thyme or dill for decoration

Steps:

  • 1. Divide each salmon slice in two, roll them to an appropriate size, and place them on the chips.
  • 2. Put the crème fraiche in a plastic bag and cut a little hole in one corner to make the bag work as a piping bag. Pipe about 1/2 tsp onto each salmon chip.

2 teaspoons olive oil

Steps:

  • Spread 1/2 the black pepper on a plate.
  • Smear 1 tsp olive oil over one side of the salmon fillets.
  • Lay the fillet, oiled side down in the pepper.
  • Lift and put on a baking sheet, peppered side up.
  • Repeat the process with the second fillet.
