S'MORES IN A CUP



S'mores in a Cup image

I wanted s'mores one evening and I didn't want to build a fire. This is one of my now favorite recipes. It takes a little more time but it's not messy and great for little kids. Don't have to worry about cleaning their hands, might have to clean around their mouth though, if you have one of those children that could make a mess out of absolutely nothing. I was one of those children and still am today.

2 (14.4 ounce) packages graham crackers (such as Honey Maid®), crushed
¾ cup butter, melted
6 (1.5 ounce) bars milk chocolate candy bar (such as Hershey's®), broken into squares
126 miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 42 miniature muffin tins with paper liners.
  • Mix graham cracker crumbs with butter in a bowl until evenly combined. Spoon graham cracker mixture into the prepared muffin cups, pressing into the bottom and up the sides creating a crust.
  • Place 1 chocolate square onto each crust and top each with 3 miniature marshmallows.
  • Bake in the preheated oven until marshmallows are puffy and chocolate is melted, about 6 minutes.

These S'more Marshmallow Bites are a quick and easy kid friendly recipe and s'more dessert that can be used as party favors too! Learn how to make marshmallow smores with my Mini Chef on Mini Chef Mondays.

12 Oz Semi-Sweet Chocolate
1 Bag Marshmallows
1 Package of Graham Crackers

Steps:

  • Line Cookie sheet with Parchment paper, set aside.
  • Cut the marshmallows in half.
  • Crush Graham crackers. NOT all the way - you want some texture.
  • Boil water in small sauce pan, once you see small bubbles turn off the heat.
  • Place the bowl on top and add the chocolate
  • Slowly stir, and continue until chocolate is melted.
  • Once you have your graham crackers crushed, marshmallows cut, and chocolate is melted
  • you can begin to make S'more Marshmallows!
  • Dip marshmallows into the chocolate.
  • Let the excess chocolate drip off the marshmallow.
  • Place into the graham cracker crumbs.
  • Cover the marshmallow with the crumbs.
  • Place onto cookie sheet, and refrigerate for about 10 minutes.
  • Enjoy :)

1 cup Graham Cracker Crumbs
8 TBSP Butter, melted
1/4 Cup Powdered Sugar
8 Large Marshmallows {I used S'moreMallows}, cut in half
Chocolate chips {About 1 Cup, depending on how much you love chocolate!}

Steps:

  • Preheat oven to 350 degrees. Grease a mini-muffin pan {get one here}- I recommend using non-stick spray since those muffin cups are hard to get into! Mix Graham cracker crumbs and powdered sugar, then add in melted butter. Mix well. Add the mixture to the muffin cups and press against the edges and bottom to make cups. I was able to get 16 cups from this amount of mixture but your amount may vary based on how thick you make the cups. Bake in the oven for 8 minutes, or until the cups start to get darker brown. When they're out of the oven, fill the cups with chocolate chips and top with half of a large marshmallow. Put the oven on broiler and stick the cups in- I recommend the middle rack to avoid them getting too hot, too fast. Keep an eye on them and take them out when they begin to brown- it took about 4 minutes in my oven, but all ovens are different! Allow to cool for 30-45 minutes, then use a spoon or butterknife to pop them out. {These keep really well in an airtight container- but be sure to use one or the marshmallow will get really hard.}

Gooey S'mores Pizza Bites with a graham cracker pizza dough!

FOR THE DOUGH:
1 and 1/2 tsp of Quick Rising Yeast
2/3 cup water, warm
1 cup all-purpose flour + extra for dusting
1 cup crushed graham crackers
FOR THE TOPPINGS:
75 mini marshmallows
125 milk chocolate chips
FOR THE DRIZZLE:
6 large marshmallows
1 tablespoon butter
1 teaspoon Duncan Hines Frosting Creations Chocolate Marshmallow Flavor

Steps:

  • Preheat oven to 400 degrees.
  • Prepare 2 round pizza pans by spraying with cooking spray
  • FOR THE DOUGH:
  • In mixing bowl add yeast and water. Using whisk mix them together. Rest for 5 minutes.
  • Using your dough hook add flour and mix in.
  • Add the graham crackers till all is incorporated.
  • Dust counter top with flour and dump ball out of the mixing bowl.
  • With flour covered hands work the dough till you have a nice smooth ball.
  • Roll out and make 25 circles with a small circle cookie cutter.
  • Place circles onto pizza pans.
  • Bake for 4 minutes. Pull out of the oven, place 5 milk chocolate chips and 3 mini marshmallows on each circle and return to continue to bake for 3 more minutes.
  • In the meantime melt your large marshmallows and butter. Add you frosting creations flavor and stir.
  • When you pull pizza bites out of the oven drizzle with melted marshmallows.
  • Serve and ENJOY!

Melted chocolate and gooey marshmallow is packed in these fun mini s'mores bites, making it easy to enjoy s'mores anytime!

1 cup graham cracker crumbs
5 tablespoons melted butter
¼ cup powderd sugar
12 marshmallows
2 Hershey's chocolate bars ((1.55 ounce bars))

Steps:

  • Preheat the oven to 350°F. Grease a mini-muffin pan with non-stick butter spray. Spray it really well! I sprayed the pan almost 4 times, rotating the pan with each spray.
  • In a medium sized bowl, mix graham cracker crumbs and powdered sugar. Add the melted butter and mix with a spoon. If your crumbs stick well together when you press the crumbs in your palm that's a good sign it should make a good crust.
  • Evenly distribute the mixture to the 24 mini muffin cups (use a tablespoon measuring spoon and fill it about ¾ full, not quite to the top). Fill all of the 24 cups first before pressing down so you can make sure you have distributed the crumbs evenly. Use the same tablespoon measuring spoon and press the crumbs down into the cup. Use firm pressure and kind of twist the spoon. You can also use the edge of the measuring spoon to tamp down any loose crumbs especially at the top edge of the cup.
  • Bake for 5 minutes
  • While the graham cracker cups are baking, cut 12 large marshmallows in half.
  • Remove the pan from the oven and place the cut marshmallow, cut side down, onto each mini graham cup in the middle.
  • Set your oven to broil. Placement of the rack will depend on your oven (I have a gas oven and placed the rack about 6 inches from the broiler). Broil for 1 to 3 minutes, watch closely so they don't burn. Rotate the pan to get all marshmallows toasted evenly.
  • Turn your oven on broil. Put the pan back in the oven and broil for 2 minutes (keep a close eye on them)! Take them out as soon as they start to brown. Watch them while they are in the oven as they will quickly turn from brown to burnt.
  • Once the top of the marshmallows are toasted and brown remove from the oven and place a square of Hershey's chocolate on top of the hot marshmallow. The heat from the marshmallow will melt the chocolate piece.
  • Let cool for one hour.
  • Use a teaspoon or knife to wedge under the s'mores cups and pop each one out of the muffin tin.

Nonstick cooking spray, for greasing the baking sheet
1 pound semisweet chocolate chips or coarsely chopped bars
1/2 teaspoon coarse sea salt, such as Light Grey Celtic
8 ounces your favorite store-bought granola
2 cups cinnamon graham cereal, such as Golden Grahams, lightly crushed
1/2 cup toffee bits, such as Heath Toffee Bits
10 marshmallows, cut into thirds to create 3 rounds

Steps:

  • Line a baking sheet with a silicone mat, parchment paper or foil and spray lightly with nonstick cooking spray.
  • Put the chocolate in a heat-safe glass bowl and set over a pot filled with an inch of water. Place the pot over medium-low heat and gently cook the chocolate, stirring occasionally, until melted. Add the sea salt.
  • Mix the granola, graham cereal and toffee bits in a shallow dish.
  • Using two forks, dip the marshmallow rounds in the melted chocolate, letting excess chocolate drip off. Roll in the granola mixture, then transfer to the prepared baking sheet. Refrigerate on the baking sheet until the chocolate is set, 10 to 15 minutes. Store in an airtight container if not using immediately.
