This healthy, simple weeknight side dish comes together in only five minutes!

3 cups snow peas (washed and trimmed)
1/2 tsp avocado oil (coconut works well)
2 tsp soy sauce (reduced sodium)
1 tsp sesame oil (toasted)

Steps:

  • Preheat your wok or skillet over medium-high heat. Add coconut or avocado oil and allow to heat almost until smoking.
  • Add the peas and toss to coat. Allow to sit for a minute and then stir. Repeat "stir and wait" two more times.
  • Remove from heat and add the soy sauce and sesame oil. Stir.
  • Remove peas from wok and place on a plate lined with a paper towel. Let sit for two minutes.
  • Top with sesame seeds and serve.

1/2 lb snow peas (Chinese pea pods)
2 teaspoons dark sesame oil
2 teaspoons vegetable oil
2 green onions, cut into 1/4 inch slices
1/2 teaspoon grated fresh ginger or 1/4 teaspoon ground ginger
1 medium carrot, but into matchstick pieces
1 teaspoon soy sauce
1 tablespoon sesame seeds, toasted

Steps:

  • To de-stem peas, pinch off stem end from each pod and pull strings down pod to remove, if present. (Young tender pods may have no strings.).
  • Made a "V-shaped" cut at opposite end of pod.
  • To stir-fry, place wok or large skillet over hight heat.
  • Add sesame and vegetable oils, swirling to coat sides.
  • Heat oils until hot, about 30 seconds.
  • Add onions, ginger, peas and carrot.
  • Stir-fry 4 minutes or until peas are bright green and crisp-tender.
  • Stir in soy sauce.
  • Transfer to warm serving dish.
  • Sprinkle with reserved sesame seeds.
  • Serve immediately.

2 teaspoons extra-virgin olive oil
1 small yellow onion, diced medium (3/4 cup)
2 garlic cloves, minced
1 1/3 cups snow peas, sliced 1/2 inch thick
1 celery stalk, diced medium (1/2 cup)
1 3/4 teaspoons minced peeled fresh ginger
1 teaspoon toasted sesame oil
coarse salt and ground pepper
1 1/2 pounds ground pork or turkey
6 scallion greens, sliced (1 cup)
1 to 2 slices white sandwich bread, diced medium (1 cup)
1 large egg

Steps:

  • Preheat oven to 350 degrees. In a medium skillet, heat oil over medium-high. Add onion, garlic, snow peas, and celery and cook, stirring occasionally, until onion is soft and vegetables begin to brown, 5 minutes. Add ginger and sesame oil, season with salt and pepper, and cook, stirring, 1 minute.
  • In a large bowl, combine pork, scallions, bread, and egg. Add vegetable mixture and season with 2 teaspoons salt and 1/2 teaspoon pepper. Using your hands, mix until ingredients are combined. Transfer to a parchment-lined rimmed baking sheet; form into a 4-by-10-inch loaf. Bake until meatloaf is cooked through, 40 minutes, rotating sheet halfway through. Let rest 15 minutes before slicing.

Steps:

  • In a microwave-safe bowl combine the oil, the butter, the onion, the scallions, and the gingerroot and microwave the mixture at high power (100%) for 2 minutes, or until the onion is softened. Stir in the rice, stirring until it is coated with the oil mixture, add the broth, and microwave the mixture, covered with microwave-safe plastic wrap, at high power (100%) for 5 minutes. Microwave the mixture at medium power (50%) for 12 to 15 minutes, or until all the liquid is absorbed and the rice is tender. Uncover the pilaf carefully and stir in the snow peas. Let the pilaf stand, covered, for 5 minutes and stir in the toasted sesame seeds.

2 to 3 garlic cloves, minced
1 tablespoon sugar
1 tablespoon lemon juice
3/4 to 1 teaspoon salt
1/8 to 1/4 teaspoon lemon-pepper seasoning

  • Cook peas in boiling salted water until crisp-tender, about 1-1/2 minutes. Drain and rinse in cold water. Cook cauliflower in boiling salted water until crisp-tender, about 3 minutes. Drain and rinse in cold water. In a bowl, combine peas, cauliflower, water chestnuts and red pepper. Cover and refrigerate for at least 1 hour., In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Cover and refrigerate for at least 1 hour.
