LIFE CHANGING SOFT SCRAMBLED EGGS

Steps:
- Melt the butter in a medium-sized non-stick skillet over medium-low heat. We want the butter to pretty much coat the whole pan.
- Whisk the eggs. When the butter is just barely bubbling, add the eggs to the pan directly in the center so that the butter gets pushed out to the sides. ZERO STICKAGE. This is good.
- Watch for the edges to just barely start to set, and then gently swipe a spatula around the edges of the pan to create large soft curds. Don't flip the curds over. Continue this process, pausing in between to allow time for the eggs to cook but working quickly enough so as not to overcook the eggs, just gently pushing/folding the liquid eggs to form curds. The entire process should take 2-3 minutes or less.
- When the eggs are barely set and you have some big folds of heavenly soft scrambled eggs laying in the pan, remove from heat. Serve on a breakfast sandwich or with your bowls or just by themselves. SO. AMAZINGLY. GOOD.

SIMPLE SOFT-COOKED EGG WITH TOAST
With its yolk barely set at the edges and defiantly runny throughout, this three-minute egg is, indeed, perfect -- but not quite complete without a slice of chewy, thick-cut country-style bread, toasted as you please and served on the side for dipping.

- Place egg in a small saucepan, and add enough cold water to cover by 1 inch. Bring to a boil. Cook for 3 minutes.
- Meanwhile, toast bread. Butter, and then cut in half diagonally. Remove egg from saucepan. Briskly tap wider end of egg with the back of a spoon until shell cracks. Remove the cracked top with the spoon. Season with salt and pepper, and serve with the toast.

- Crack eggs into a medium bowl and add 3/4 tsp. salt. Whisk until no streaks remain.
- Heat 2 Tbsp. butter in a large nonstick skillet over medium. As soon as foaming subsides, add 2 slices of bread and cook until golden brown underneath, about 3 minutes. Transfer to plates, cooked side up. Repeat with another 2 Tbsp. butter and remaining 2 slices of bread. Season toast with salt. Wipe out skillet and let it cool 3 minutes.
- Heat remaining 2 Tbsp. butter in reserved skillet over medium-low. Once butter is foaming, cook egg mixture, stirring with a heatproof rubber spatula in broad sweeping motions, until some curds begin to form but eggs are still runny, about 2 minutes. Stir in crème fraîche and cook, stirring occasionally, until eggs are barely set, about 1 minute.
- Spoon eggs over toast and top with trout. Finely grate lemon zest from one of the lemon halves over trout, then squeeze juice over toast. Season with pepper; scatter scallions and dill on top.
- Squeeze juice from remaining lemon half into a medium bowl. Add arugula and drizzle with oil; season with salt and pepper. Toss to coat. Mound alongside toasts.
SOFT SCRAMBLED EGGS AND TOASTED-RYE TARTLETS
Don't have mini tart pans? A muffin pan will also work -- just increase the baking time by one to two minutes.

- Preheat oven to 350 degrees. Stir 4 tablespoons butter until smooth. On a clean work surface, lightly roll a bread slice with a rolling pin until it's 1/8 inch thick. Brush both sides with butter and fit into a 4-inch tart pan with a removable bottom. Use a paring knife to trim edges flush with pan, then season with salt. Repeat with remaining bread. Transfer pans to a rimmed baking sheet and bake until crisp and golden around edges, 12 to 14 minutes. Let cool completely, then remove from pans.
- Whisk together eggs, milk, and 1/4 teaspoon salt. Heat a large nonstick skillet over low. Melt remaining 2 tablespoons butter, then add egg mixture and cook, stirring occasionally with a wooden spoon, until just set into soft curds, about 15 minutes.
- Spoon eggs into tart shells, sprinkle with pepper, and serve, topped with bacon and sprouts.

My Grandmothers recipe, easy & quick to make & cheap! The best breakfast you'll ever eat for 80 cents a serving! The only "trick" is cook the eggs on low until almost set. Only cook toast or muffins until slightly browned & spread with lots of butter & jam/jelly.

- Melt some butter in a skillet/frying pan. When 1/2 the butter is melted, turn off heat. If your butter is cold, zap it in the microwave for 12 seconds. Let the pan get cold & then break 2 eggs. Because the pan is cold, don't use a mixing bowl, mix it in the frying pan. The safe way to crack eggs is over a hard, flat surface. Stir eggs & add 3 tablespoons whole milk per serving. Add salt & freshly ground pepper. Turn burner on low. Stir well. Cook SLOWLY over low heat until it just comes together, stirring often. Serve with lightly browned toast or english muffin.
