Simple Creamy Southern Coleslaw Recipe image

Just say no to bland store bought coleslaw and hello to this delicious homemade recipe. This classic simple creamy coleslaw recipe is not only the perfect side dish for your next BBQ and grilling cookout but is also amazing on a Memphis and South Carolina style pulled pork sandwich or on a West Virginia style hot dog.

Provided by Dave Joachim

Categories     Dinner     Lunch     Salad     Side Dish     Vegetable

Time 1h15m

Number Of Ingredients 10

1 pound green cabbage ((about half a medium cabbage))
1 large carrot, peeled
½ small white onion
2 tablespoons Morton Coarse Kosher Salt
1 tablespoon distilled vinegar
½ cup mayonnaise
¼ cup sour cream
1 tablespoon white sugar
¼ teaspoon ground black pepper
½ teaspoon celery seeds ((not celery salt))

Steps:

  • Prep. First, read my article on The Science of Slawsome Slaw. Then decide how you want to cut the cabbage, carrot, and onion: Chopped, grated, or hashed and have at it. I prefer this recipe shredded or chopped.
  • Salt. In a large strainer or colander, mix the cabbage, carrot, and onion with the salt and put it in the sink or over a bowl for an hour. The salt will draw out a lot of water that will otherwise dilute the dressing. Then rinse the mix with cold water to get rid of excess salt and pat dry. You can now hold it in the fridge for a day if you want.
  • Dress. Whisk together the dressing in a large bowl. Add the cabbage, carrot, and onion mix. Taste, adjust seasonings, cover and chill for at least 1 hour if possible before serving.

NORTH CAROLINA-STYLE COLESLAW

North Carolina-Style Coleslaw image

North Carolina coleslaw is coleslaw at its most elemental. No onions. No carrots or peppers. No mayonnaise. Just cabbage and peppery vinegar sauce. ShareTweetPin7 Shares

Provided by Steven Raichlen

Number Of Ingredients 1

1 large head green or savoy cabbage (2-1/2 to 3 pounds) 1-1/2 cups cups Eastern North Carolina-Style Vinegar Sauce, or more to taste (see step 2) salt (optional)

Steps:

  • Step 1: Remove the core from the cabbage and discard it. Cut the cabbage into 8 chunks. Finely chop the cabbage in a food processor using the metal blade and pulsing the motor (this is a chopped, not sliced or slivered, slaw). Work in several batches so as not to overcrowd the processor bowl. ShareTweetPin7 Shares Step 2: Place the cabbage in a large nonreactive bowl and stir in the Eastern North Carolina-Style Vinegar Sauce. Taste for seasoning, adding more vinegar sauce as necessary. Let stand for 10 minutes, then taste again, adding more vinegar sauce and/or salt as necessary. The coleslaw can be made up to 4 hours ahead. Store it in the refrigerator, covered. 2018-05-26 This South Carolina slaw was the perfect companion to my pulled pork made with Vinegar Barbecue Sauce. As opposed to traditional mayo-based slaws that often fall short on flavor pop, this slaw is fresh, crunchy, and tangy. I love the way the dressing almost acts like a pickling agent within minutes of dressing the slaw…

  • In a small saucepan off the heat, whisk together the vinegar, sugar, oil, Dijon mustard, dry mustard, celery seeds, kosher salt, and pepper until the sugar dissolves. Bring to a boil over medium-high heat. Immediately remove from the heat and either pour it over the cabbage mixture right away if you prefer slightly wilted coleslaw or let it stand for anywhere from 10 minutes to an hour to cool before pouring it over the cabbage mixture if you prefer a crunchy coleslaw. Toss to coat. Serve immediately. (If you want to make the slaw ahead of time, refrigerate the cabbage and carrots separate from the boiled dressing and toss just before serving.)
