Southwestern seasonings, corn with peppers, and cheddar cheese make a flavorful beef and potato casserole the whole family will enjoy.

2 tablespoons olive oil
1 pound extra-lean ground beef
1 cup coarsely chopped onion
1 cup thinly sliced celery
2 cloves garlic (finely minced)
1 tablespoon minced jalapeno peppers, or diced mild chile peppers
1 can (14.5-ounces) diced tomatoes (undrained)
1 teaspoon chili powder
1/2 teaspoon salt
Dash pepper
1/2 teaspoon ground cumin
4 medium potatoes (peeled, thinly sliced, about 1 1/2 to 2 pounds)
1 can (about 12- to 15-ounces) corn with peppers (drained)
2 cups (8 ounces) shredded sharp cheddar cheese

Steps:

  • Gather the ingredients. Heat the oven to 350 F.
  • Grease a 9 x 13 x 2-inch baking pan (2 1/2- to 3-quart size).
  • Heat the olive oil in a large skillet over medium heat.
  • When the oil is hot and shimmering, add the ground beef, onion, and celery.
  • Cook until the beef is browned and vegetables are tender, stirring frequently.
  • Add the garlic and jalapeño peppers; cook about 1 minute longer, stirring frequently.
  • Stir in the tomatoes, chili powder, salt, pepper, and cumin. Bring to a simmer.
  • In the prepared baking dish, arrange half of the sliced potatoes, then top with half of the corn, half of the ground beef mixture, and half of the cheese.
  • Repeat the layers, ending with the remaining cheese.
  • Cover the baking dish tightly with foil and bake for about 1 hour and 15 minutes, or until potatoes are tender.
  • Serve hot and enjoy.

1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 pkg. (8 oz.) KRAFT Shredded Cheddar Cheese
1 red pepper, cut into strips

Steps:

  • Heat oven to 350°F.
  • Brown meat in large skillet. Meanwhile, microwave potatoes as directed on package, except reduce the microwaving time to 5 min.
  • Drain meat; return to skillet. Stir in seasoning mix. Add sour cream and cheese; mix well. Gently stir in potatoes.
  • Spoon into 13x9-inch baking dish sprayed with cooking spray; top with peppers.

1 pkg. (1-1/4 oz.) TACO BELL® Taco Seasoning Mix
1 red pepper, sliced
2 green onions, sliced

Steps:

  • Heat oven to 350°F.
  • Place potatoes in 13x9-inch microwaveable baking dish sprayed with cooking spray; cover. Microwave on HIGH 10 min.
  • Meanwhile, brown meat in large skillet; drain. Stir meat, sour cream, cheese and seasoning mix into potatoes; top with peppers.

This is another tasty recipe that I got off of one of the Ontario milk calendars. It is similar in composition to moussaka - a meat layer, a vegetable layer and a creamy sauce, all baked together to make a yummy casserole.

1/4 cup butter, divided
2 tablespoons vegetable oil
3 potatoes, peeled and thinly sliced
2 zucchini, sliced
1/2 teaspoon salt
1/2 teaspoon pepper
1 onion, finely chopped
1 teaspoon dried Italian herb seasoning
1 lb lean ground beef
1/2 cup prepared pasta sauce
2 cups milk, divided
1/4 cup all-purpose flour
1 1/4 cups grated cheddar cheese

Steps:

  • Preheat oven to 375 degrees F.
  • In a skillet, melt 2 tablespoons of the butter and oil.
  • Add the potatoes and cook over medium-low heat for 5 minutes, stirring frequently.
  • Add zucchini, salt and pepper.
  • Cook until the zucchini is tender.
  • Spoon the vegetable mixture into a 13 x 9 inch baking dish.
  • Set aside.
  • In a skillet, cook the onion with the Italian seasoning until the onion is tender.
  • Add ground beef, cook and stir until the beef loses its pink colour.
  • Stir in the tomato sauce and 1/2 cup of milk.
  • Spoon the meat mixture over the vegetable layer in the dish.
  • Melt the remaining butter, stir in the flour and cook for 1 minute.
  • Gradually whisk in the remaining milk.
  • Cook and stir until the sauce comes to a boil and thickens.
  • Stir in the cheese.
  • Pour the sauce over the meat layer.
  • Bake for 20 to 25 minutes or until golden brown.
  • Let stand for 10 minutes before serving.

  • In a large bowl, combine all ingredients. Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 1-1/4 to 1-1/2 hours or until potatoes are tender.

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1-1/4 teaspoons dried parsley flakes
1 teaspoon dried minced onion
1/4 teaspoon pepper
1 package (32 ounces) frozen cubed hash brown potatoes, thawed
4 cups shredded cheddar cheese, divided
1 can (8 ounces) mushroom stems and pieces, drained

Steps:

  • In large skillet, cook beef over medium heat until no longer pink; drain. Meanwhile, in a large bowl, combine the soups, parsley, onion and pepper. Add the potatoes, 2 cups cheese and mushrooms. Stir in beef. , Transfer to two greased 8-in. square baking dishes. Sprinkle each with 1 cup cheese. Cover and freeze one casserole for up to 3 months. Cover and bake the remaining casserole at 375° for 45-50 minutes or until potatoes are tender. You can make it mild by adding mild green chiles or spice it up a bit by substituting pickled jalapenos. 1 Tbsp vegetable oil
1 lb 93% lean ground beef
1 tsp salt
1/2 tsp garlic powder
1 Tbsp dried onion
10 oz can mild enchilada sauce
16 oz can refried beans
2 Tbsp canned chopped mild green chiles (or pickled jalapeno peppers)
1 c 2% cottage cheese
2 c shredded mild cheddar cheese, divided
6 oz crunchy tortilla chips, crushed by hand (2 handfuls)

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 2 1/2 quart or 9x13" casserole dish with nonstick spray; Set aside.
  • 2. Heat large skillet on medium high and add oil; Add ground beef, salt, garlic powder and dried onion. Stir and cook until beef is cooked, about 5 minutes.
  • 3. Don't drain meat; Add the enchilada sauce, beans and chiles (or jalapeno peppers for a hotter dish); Stir and cook 2 minutes on medium low, then remove from heat and set aside.
  • 4. In a medium bowl, mix cottage cheese and 1 cup of cheddar cheese.
  • 5. Layer 1/3 of the meat mixture to the bottom of the casserole; Top with half of the cheese mixture and half of the crushed chips.
  • 6. Repeat this one more time, ending with the last third of the meat mixture. Top with the remaining 1 cup cheddar cheese.
  • 7. Bake uncovered 30 minutes. Serves 8
