GRILLED VEGETABLE AND SWORDFISH KEBABS



Grilled Vegetable and Swordfish Kebabs image

1/2 cup olive oil, plus more for oiling the grill grates
1 tablespoon grated garlic
1 tablespoon grated ginger
Zest of 1 lemon
Salt and freshly ground black pepper
2 pounds swordfish, cut into 1-inch cubes
4 to 6 mini bell peppers of varying colors
1 medium red onion, cut into 1-inch pieces, ends kept on
1 medium zucchini, cut into 3/4-inch-thick rounds
1 cup cherry tomatoes
Juice of 1 lemon
1 cup mayonnaise
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh parsley
2 teaspoons minced garlic
1 teaspoon Dijon mustard
1 teaspoon sherry vinegar
1/2 teaspoon hot sauce
8 pieces pita or naan, toasted on the grill
Chopped fresh cilantro, for garnish
Chopped fresh parsley, for garnish

Steps:

  • For the kebabs: Whisk together the olive oil, garlic, ginger, lemon zest and some salt and pepper in a small bowl. Put the swordfish in a large bowl. Put the peppers, onions, zucchini and tomatoes in another large bowl. Evenly divide the olive oil mixture between the two bowls and toss to coat. Cover and let marinate for about 30 minutes to 1 hour at room temperature.
  • For the garlic aioli: Meanwhile, whisk together the lemon juice, mayonnaise, cilantro, parsley, garlic, mustard, vinegar and hot sauce in a medium bowl. Cover and refrigerate until ready to use.
  • When the fish and vegetables are ready, preheat a grill over medium-high heat. (If using wooden skewers, soak in water for at least 30 minutes before grilling.)
  • Meanwhile, thread the swordfish onto six 12-inch skewers. Thread the peppers, onions, zucchini and tomatoes onto individual skewers.
  • Brush the grill grates with oil. Place the kebabs on the grill, sprinkle with salt and pepper, and grill until lightly charred and grill-marked and the swordfish is cooked through, 3 to 5 minutes per side.
  • To serve, spread 1 to 2 teaspoons of garlic aioli on top of each pita. Place the swordfish and vegetables on top, drizzle with more garlic aioli, and sprinkle with cilantro and parsley.

2/3 cup extra-virgin olive oil, plus more for oiling the grill grates
3 tablespoons balsamic vinegar
3 tablespoons lemon juice
1 tablespoon Dijon mustard

2 pounds swordfish, cut into 1-inch pieces
1 medium head fennel, cut into 1-inch pieces
1 pint grape or cherry tomatoes

Steps:

  • If using wooden skewers, soak them in water in a casserole dish or baking sheet for 30 minutes prior to grilling. Prepare a grill or grill pan for medium-high heat; oil the grill grates with olive oil.
  • Mix the balsamic, lemon juice and mustard in a small bowl. Add the olive oil in a slow stream while whisking. Season with salt and pepper.
  • Thread the fish, fennel and tomatoes onto 8 skewers, alternating between fish and vegetables. There should be roughly 3 pieces of fish per skewer. Season all sides of each skewer with salt and pepper. Brush the balsamic mixture over all the skewers.
  • Add the skewers to the grill and cook until there are clear grill marks on the flame side, 3 to 5 minutes. Flip the skewers and cook for an additional 3 to 5 minutes. Continue to rotate the skewers and cook on each side until all sides are cooked and have a slight char.
  • Serve hot!

1 lb. swordfish steak, cut into bite-sized (1 1/2 to 2-inch) pieces
1/2 cup purchased sweet-and-sour sauce
2 medium zucchini, cut into 1/2-inch-thick slices
1 medium red bell pepper, cut into 1 1/2-inch pieces
15 to 20 cherry tomatoes
Additional sweet-and-sour sauce, if desired

Steps:

  • If using bamboo skewers, soak in water for 30 minutes.
  • Meanwhile, heat gas or charcoal grill. Place swordfish pieces in large bowl. Add 1/2 cup sweet-and-sour sauce; turn fish to coat all sides. Add zucchini, bell pepper and tomatoes; stir gently to coat.

6 swordfish or halibut steaks (6 ounces each)
VEGETABLES:
2 small zucchini
2 small yellow summer squash
1/4 cup sliced green onions
1 to 2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed
3 tablespoons olive oil
1 pound small red potatoes, cooked and cut into 1/2-inch slices
2 cups halved cherry tomatoes
1/2 to 3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large resealable plastic bag, combine the first five ingredients; add swordfish. Seal bag and turn to coat; refrigerate for 30-45 minutes., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill swordfish, covered, over medium-hot heat or broil 4 in. from the heat for 5-7 minutes on each side or until fish just turns opaque., Cut zucchini and yellow squash lengthwise into 1/4-in. slices, then widthwise into 3-in. pieces. In a large skillet, saute the onions and rosemary in oil for 1-2 minutes or until onions are tender. Add squash; saute for 5-6 minutes or until crisp-tender. You will need: 2 lbs extra thick swordfish steaks cut into 1 ½ squares
1 1/2 pounds cherry tomatoes
3 green peppers rough cut into 1 inch or larger pieces
3 large yellow onions rough cut into 1 inch or larger pieces
1 30 oz can large pineapple chunks in water divided
2 limes juiced and divided
¼ cup brown sugar
½ cup bourbon
1 cup soy sauce (you can substitute tamari, or low sodium soy sauce)
2 tbls sesame seeds
½ cup minced garlic
6 tbls fresh ground black pepper divided
5 tbls crushed red pepper
6 green onions chopped thin
¼ cup sesame oil
¼ cup veggie oil
12 10-12 inch bamboo or stainless steel skewers
2 large eggplants skin pealed and sliced length wise ½ in thick
½ cup olive oil
6 large portabella mushrooms rinsed and patted dry with towel
3 cups brown rice
4 tbls butter
6 cups drinking water
1 tbls sea salt
4 bricks placed on grill about 10 inches a part length wise

Steps:

  • Marinade for the swordfish: in a large bowl add the following; ½ of lime juice, brown sugar, bourbon, ½ cup soy sauce, sesame seeds, garlic, 3 tbls black pepper, crushed red pepper, green onions, sesame oil, and veggie oil. Mix well with fork. Then pour mix, swordfish, and ½ pineapples into a large plastic bag and make sure the seal is closed tightly. Place in refrigerator for 1-2 hours. For the rice: Bring the six cups of water to a boil with salt and butter, add the rice. Reduce heat to medium low, stir rice, and cover. Cook for 40-50 minutes. Stir occasionally. When done, stir well and set aside until service. If using bamboo skewers soak them in water now, they need about ½ hour of soaking. Bring grill to a med/hi heat about 400 degrees F, also now arrange the bricks. Start preparing the kabobs, lay out the tomatoes, onions, and green peppers and the marinated swordfish and pineapple reserving the marinade itself in a bowl. Build the kabobs by sliding the swordfish, pineapple chunks, and vegetables randomly onto the skewers using onion between each addition. Leave about an inch at each end for easy handling. Lay out all the built kabobs on a large plate. As for the mushrooms and eggplant; slice the stems off the mushrooms and lightly smear each with some olive oil. Sprinkle with pepper. Rub olive oil and pepper into eggplant well. Bring kabobs, eggplant, mushrooms, and bowl of marinade reserve with a paint brush to the grill. Make sure grill is clean and well oiled. Place kabobs suspended between bricks, eggplant, and mushrooms on grill. Baste kabobs delicately with marinade. Grill for 8 minutes then turn everything over. Baste kabobs with remaining marinade and grill for another 6-8 minutes until swordfish is done. Return everything to a large plate for service. For service eat family style with lots of plates and bowls. On the table you will want to have salt, pepper, soy sauce, extra bowl of pineapple, and maybe some hot Asian chilies. Enjoy.

1 clove garlic, minced
1 1/2 teaspoons ground cumin
1 1/2 teaspoons chile powder
1/2 cup white-wine vinegar
1/4 cup unsulfured molasses
1/2 cup orange juice
1/2 cup lime juice (about 4 limes)
3 large lemons
18 bay leaves
2 1/4 pounds swordfish, trimmed of skin and fat and cut into 2-inch cubes
12 cherry tomatoes
1 1/2 teaspoons salt
1/4 teaspoon freshly ground pepper

Steps:

  • Combine garlic, cumin, chile powder, vinegar, molasses, and orange and lime juices in a small saucepan; bring to a boil over high heat. Boil for 2 minutes, remove from heat, and set aside. Halve lemons crosswise and cut each half into 4 wedges.
  • On each of 6 long metal skewers, arrange 4 lemon wedges, 3 bay leaves, 3 pieces of fish, and 2 tomatoes. Kebabs can be prepared up to this point and refrigerated for up to 6 hours before cooking.
  • Heat grill to medium hot. Sprinkle kebabs with the salt and pepper and spoon glaze over them. Grill until fish is opaque to the center and lightly charred, 3 to 4 minutes per side; brush with glaze several times while cooking. 1 pound skinless salmon
24 cherry tomatoes
1 cup lightly packed fresh basil
1/2 cup olive oil
1 clove garlic
Salt and pepper

Steps:

  • Heat grill to high. Cut swordfish and salmon into 24 cubes (about 1 1/2 inches each); thread against the grain on 8 skewers, alternating with tomatoes.
  • In a blender, puree basil, oil, and garlic until smooth. Season with salt and pepper. Reserve half.
  • Brush kabobs with half of basil oil; season with salt and pepper. Grill until fish is opaque, 6 to 10 minutes, turning occasionally. With a clean brush, coat kabobs with reserved basil oil. Serve immediately.
