This is my absolute very favorite macaroni and cheese recipe and I have a large collection of m/c recipes. Adapted from Southern Living. I don't make this very often because I could literally eat the whole thing and lick the dish clean.

Ingredients

1/2 cup butter or 1/2 cup margarine
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper, to taste
1/4 teaspoon cayenne pepper, to taste
1/4 teaspoon garlic granules
2 cups half-and-half
2 cups milk
2 (10 ounce) packages sharp cheddar cheese, shredded and divided (I use Cracker Barrel)
1 (10 ounce) package extra-sharp cheddar cheese, shredded (I use Cracker Barrel)
1 (16 ounce) package elbow macaroni, cooked

Steps:

In a big skillet, melt the butter over medium-high heat.
Whisk the flour in gradually until the mixture is smooth.
Cook and whisk continually for 2 minutes.
Add in salt, pepper, cayenne, and garlic; stir to combine.
Gradually whisk in half-and-half and milk.
Cook and whisk continually for 8-10 minutes or until mixture is thickened.
Add in half of the sharp cheddar cheese; stir.
Add in all of the extra-sharp cheddar cheese; stir until smooth.
Take skillet off stove burner.
Mix together the cooked macaroni and cheese mixture; transfer to a greased 13x9 inch casserole dish.
Sprinkle with the remaining sharp cheddar cheese.
Bake in a 350° oven for 20 minutes (may need to bake longer for a crispy top).

2 teaspoons butter or 2 teaspoons margarine
1/4 cup onion, chopped
1 (10 3/4 ounce) can cheddar cheese soup
1/4 cup milk
1/4 teaspoon hot sauce
2 cups cheddar cheese, mild,shredded and divided
3 cups macaroni, cooked

Steps:

In a 3/4 cup saucepan, melt butter over medium heat.
Add onion, cooking and stirring for approximately 2 minutes.
Whisk in soup, milk, hot sauce and 1/2 cheddar cheese.
Stir just until cheese melts.
Stir in macaroni, and pour into a lightly greased 9-inch square baking dish.
Top with remaining cheese, and bake@ 375ºF.
for 30-45 minutes, or until golden and bubbly.

1 (8 ounce) package elbow macaroni
2 tablespoons butter (or margarine)
2 tablespoons all-purpose flour
2 cups milk
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon ground red pepper
1 (8 ounce) package sharp cheddar cheese, shredded, divided

Steps:

Preheat oven to 400 degrees.
Prepare pasta according to package directions. Keep warm.
Melt butter in a large saucepan or Dutch oven over medium-low heat; whisk in flour until smooth. Cook, whisking constantly, 2 minutes. Gradually whisk in milk, and cook, whisking constantly, 5 minutes or until thickened. Remove from heat. Stir in salt, peppers, 1 cup shredded cheese and cooked pasta.
Spoon pasta mixture into 4 lightly greased (8-ounce) ramekins; top with remaining 1 cup cheese.
Bake for 15 minutes or until bubbly. Let stand 10 minutes before serving.

Add flour and garlic to skillet; cook, stirring, until fragrant, 1 to 2 minutes. Add milk; bring to a boil. Reduce heatto low. Gradually add Cheddar and processed cheese, whisking until melted. Remove from heat. Stir in cooked pasta, mayonnaise, salt, and 1/2 cup of the parsley
Stir together ricotta and egg in a small bowl. Gently stir ricotta mixture into pasta mixture, leaving large swirls. Bake in preheated oven 10 minutes.
Meanwhile, stir together panko, melted butter, and remaining 2 tablespoons parsley until blended. Top pasta with panko mixture, and bake until top is lightly browned, about 10 minutes.
