This classic cracker salad has been around a very long time. If you've never tried it, you are in for a real treat. Such an old fashioned recipe.

1 sleeve saltine crackers (crushed)
1 14.5 ounccan diced tomatoes, undrained (I use fresh tomatoes in summer
1/4 cup onion (chopped (can use green onions))
1/4 cup green pepper (chopped)
5 eggs (boiled, peeled and chopped)
1/4 teaspoon black pepper
1/4 to 1/2 cup mayonnaise

Steps:

  • Crush crackers in a large bowl, add tomatoes, and remaining ingredients. Mix well. Refrigerate for several hours before serving. Serve on lettuce bed. Makes about 5 cups of salad.

If you like a southern tomato sandwich, then you'll fall head over heels for this 15-minute Southern Tomato Cracker Salad recipe!

Number Of Ingredients 6

3 very ripe medium tomatoes
1 cup mayonnaise
1/2 shallot (finely minced)
40 saltine crackers ((1 sleeve))
2 tablespoons chives (finely chopped)
Kosher salt and ground black pepper to taste

Steps:

  • Start by removing the core, or stem end) of the tomatoes and then cut each in half through the middle or "waist."
  • Working over a medium bowl or into the sink, press each tomato half gently to get rid of most of the seeds and juice.
  • Dice the tomatoes. Place the diced tomatoes in a large mixing bowl and sprinkle lightly with salt. Remove a few tablespoons of diced tomatoes for garnish and set them aside.
  • Into the bowl with the diced tomatoes, add the minced shallot, half of the chives, black pepper, and mayonnaise. Fold together gently to combine.
  • Crumble the crackers creating mostly large pieces for the best texture.
  • Add the broken saltine crackers to the bowl with the tomato mixture and fold gently to combine.
  • Taste for seasoning and adjust if necessary.
  • Garnish with the reserved tomatoes and remaining chives.
  • Serve immediately.

I noticed every cracker salad here at RZ called for fresh tomatoes so I figured ... why not ... I'll put in the recipe I was raised on. The other recipes here look good also ... this just happens to be the one I am used to and we dearly love it. It is great as a side-dish with fried chicken, great as an appy stuffed inside little cherry or grape tomatoes, and perfect as a complete lunch when stuffed inside a tomato. Haha ... DH is sitting here now eating it as a dip on top of more saltines. :)

Number Of Ingredients 7

1 (14 1/2 ounce) can whole tomatoes
1 sleeve saltine crackers, crushed (leave a bit chunky)
4 tablespoons mayonnaise
6 large eggs, hard-boiled, chopped
1 medium onion, chopped
1 medium bell pepper, chopped (optional ... I love it both ways)
salt and pepper

Steps:

  • Pour tomatoes (including juice) in a large boil. Using your hands, squeeze each tomatoe through your fingers (be careful you don't squirt the juice on you -- I poke each one good with my fingers gently before I commence squeezing) until they look crushed but still chunky. Yes, you can buy already crushed tomatoes but I don't like their texture -- almost like a sauce instead of crushed tomatoes.
  • To the tomatoes, add remaining ingredients and stir. If appears to dry for you, add a LITTLE more mayo.
  • Salt and pepper to taste.
  • Tastes just as great either fresh made or after refrigerated.
