Taco Coleslaw is a delicious combination of creamy coleslaw mixed with Mexican corn salad. Easy to make in 5 minutes, it's the perfect side for picnics, potlucks, or topping for tacos.

1 cup mayonnaise
⅓ cup sour cream
2 tablespoons fresh lime juice
1 tablespoon taco seasoning
1 chipotle pepper in adobo sauce (minced)
½ teaspoon salt
¼ teaspoon black pepper
16 oz bag fresh coleslaw blend ((shredded cabbage & shredded carrots))
21.6 oz (2 10.8-oz) bag frozen southwestern style corn mix (thawed (1-2 tablespoons reserved for optional garnish))
⅓ cup green onions (chopped)
2 tablespoons fresh cilantro (chopped)
Optional Garnish- additional sprinkle of chopped green onions, chopped cilantro and southwest style corn

Steps:

  • In a mixing bowl combine the mayonnaise, sour cream, fresh lime juice, taco seasoning, minced chipotle pepper in adobo sauce, salt and black pepper. Stir to combine.
  • In a large mixing bowl add the bag of fresh coleslaw mix, thawed southwestern style corn mix, chopped green onions and chopped fresh cilantro.
  • To the large mixing bowl with the coleslaw ingredients add the taco dressing and mix to completely coat all the coleslaw with the dressing.
  • Transfer to a large serving bowl and top with the optional garnish of chopped green onions, cilantro and southwest style corn mix.

Number Of Ingredients 16

For dressing:
¾ cup mayonnaise
1 T lime juice
1 T ground cumin
1 t salt
1 t ground black pepper
2 chipotle chiles (from a 3 oz. can of chipotle chiles in adobo sauce, store remaining chiles for another use)
½ small onion
For salad:
1 medium head green cabbage, plus 1 large carrot, shredded (or 2-10 oz. bags shredded cabbage w/ carrots)
2 green onions, sliced
2 radishes, sliced
10oz. package frozen corn, thawed
2 tomatoes, chopped
½ green bell pepper, chopped
1 bunch cilantro, chopped

Steps:

  • In a food processor, combine all ingredients for dressing. Pulse until well combined, and set aside. In a large bowl, combine vegetables. Stir in dressing, and mix together until well combined. Refrigerate 1 hour before serving.

Spice up your BBQ sandwiches with my Southwestern twist on this cookout classic. Use fewer chipotles if you don't like heat, because this recipe has a kick. For the chipotles and adobos, buy the "chipotles in adobo" from any grocery store's international aisle.

2 cups julienned red cabbage
2 cups julienned cabbage
1 cup julienned carrot
¾ cup mayonnaise
¾ cup sour cream
4 chipotle chiles in adobo sauce, finely chopped
4 tablespoons adobo sauce from chipotle peppers
2 tablespoons chopped fresh cilantro
2 teaspoons lime juice
1 pinch salt and ground black pepper to taste

Steps:

  • Combine red cabbage, cabbage, carrot, mayonnaise, sour cream, chipotle chiles, adobo sauce, cilantro, lime juice, salt, and pepper in a bowl and mix thoroughly. Let sit for at least 1 hour before serving.

1 head green cabbage, shredded
2 carrots, grated
1 red onion, thinly sliced
2 green onions, chopped
1 red chile, sliced
1 1/2 cups mayonnaise
1/4 cup Creole mustard
1 tablespoon cider vinegar
1 lemon, juiced
Pinch sugar
1/2 teaspoon celery seed
Several dashes hot sauce
Kosher salt and freshly ground black pepper

Steps:

  • Combine the cabbage, carrot, red onion, green onions, and chile in a large bowl. In another bowl, mix the mayonnaise, mustard, vinegar, lemon juice, and sugar; stirring to incorporate. Pour the dressing over the cabbage mixture and toss gently to mix. Season the cole slaw with celery seed, hot sauce, salt, and pepper. Chill for 2 hours in refrigerator before serving.

TRI-COLOR SLAW WITH LIME DRESSING

1 pound carrots, peeled and shredded
1 bunch cilantro, roughly chopped
⅓ cup lime juice
⅔ cup peanut oil
2 teaspoons sugar
kosher salt to taste
ground black pepper to taste

Steps:

  • Toss green cabbage, red cabbage, carrots, and cilantro together in a large bowl.
  • Beat peanut oil and lime juice together with a whisk until smooth; add sugar and beat to dissolve. Drizzle dressing over the slaw and toss to coat; season with kosher salt and black pepper.
  • Cover bowl with plastic wrap and refrigerate at least 30 minutes.

1 1/2 tablespoon canned low-salt chicken broth
1 tablespoon soy sauce
1 tablespoon fresh lemon juice
1 1/2 teaspoon minced canned chipotle chilies (in adobo sauce)
1 teaspoon brown sugar
1 large head romaine lettuce, cut into bite-size pieces
2 medium tomatoes, seeded, diced
1/2 cup frozen corn kernels, thawed, drained
4 tablespoon freshly grated Parmesan cheese

Steps:

  • Whisk mayonnaise, chicken broth, soy sauce, lemon juice, chipotles and brown sugar in medium bowl to blend. Season dressing to taste with salt and pepper. (Dressing can be prepared 1 day ahead. Cover and refrigerate.)
  • Mix lettuce, tomatoes and corn in large bowl. Add dressing and 2 tablespoons Parmesan cheese and toss to coat. Sprinkle with remaining 2 tablespoons Parmesan cheese and serve.

1 tablespoon nama shoyu or 1 tablespoon soy sauce

1 1/2-3 teaspoons minced canned chipotle chiles in adobo
1 teaspoon brown sugar
1/2 teaspoon salt
1 head romaine lettuce, torn into bite sized pieces
2 medium tomatoes, seeded and chopped
1 cup fresh corn, cut off the cob
4 tablespoons freshly grated parmesan cheese
1/2 cup fresh cilantro, chopped
cubed avocado
diced green peppers or red pepper
hard-boiled egg
black beans

Steps:

  • Whisk mayonnaise, broth, shoyu, lemon juice, chipotles, salt and brown sugar in medium bowl to blend.
  • Taste dressing and adjust seasoning, adding salt and pepper if desired.
  • Dressing can be prepared one day ahead of time.
  • Mix lettuce, tomatoes and corn in a large bowl.
  • Add dressing and 2 tablespoons cheese.
  • Toss to coat well.
