My late mother's recipe for chicken wings for potlucks. Now I am asked to bring this dish to parties.

2 cups soy sauce
2 cups brown sugar
2 tablespoons garlic powder
5 pounds chicken wings, split and tips discarded

Steps:

  • Stir the soy sauce, brown sugar, and garlic powder together in a saucepan over medium heat; cook and stir until the sugar melts completely. Remove from heat and allow to cool.
  • Place the chicken wings in a large bowl. Pour the soy sauce mixture over the wings and toss to coat evenly. Cover the bowl with plastic wrap. Allow chicken to marinate in refrigerator overnight or 8 hours.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Pour the chicken wings and marinade into a 9x13-inch baking dish. Cover the baking dish with aluminum foil.
  • Bake in the preheated oven until thoroughly hot, about 45 minutes. Remove the aluminum foil from the baking dish and continue baking uncovered another 15 minutes. Serve hot.

This chicken wing recipe offers a taste of Asia via a delicious soy, ginger, and chile sauce. Serve these chicken wings hot or chilled.

12 chicken wings (2 to 3 pounds)
2.5 cup water
1 ounce soy sauce
4 fresh ginger
1 leek, cut up
1 tablespoon sugar
1 tablespoon vinegar
2 dried red chili peppers
0.5 teaspoon Homemade Five-Spice Powder (see recipe below) or purchased five-spice powder
2 cloves garlic, minced
1 teaspoon ground cinnamon
1 teaspoon aniseed, crushed
0.25 teaspoon fennel seed, crushed
0.25 teaspoon Szechwan pepper, crushed
0.125 teaspoon ground cloves

Steps:

  • Rinse chicken wings; pat dry with paper towels. Cut off and discard tips of chicken wings. Cut wings at joints to form 24 to 36 pieces. In a kettle combine water, soy sauce, ginger, leek, sugar, vinegar, chili peppers, Homemade Five-Spice Powder, and garlic. Bring to boiling. Add chicken. Return to boiling; reduce heat. Simmer, covered, 20 to 25 minutes or until chicken is no longer pink. Remove chicken with a slotted spoon. Serve hot or chilled. Makes 12 to 18 appetizer servings. Homemade Five-Spice Powder
  • In a small bowl combine cinnamon, aniseed, fennel seed, Szechwan pepper, and cloves. Store in a covered container. Makes about 1 tablespoon.

Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
2 tablespoons butter
1/2 cup honey
Sesame seeds, for garnish
2 pounds chicken wings
1 cup low sodium soy sauce,
1 tablespoon grated fresh ginger
2 tablespoons chopped fresh cilantro leaves
2 cloves garlic, minced
1/2 lemon, juiced

Steps:

  • Rinse chicken wings and pat dry. Remove tip and discard; separate each wing at the joint into 2 pieces. Place wings in a shallow dish and pour over the soy sauce, ginger, cilantro, garlic, and lemon juice. Toss well to coat; marinate, refrigerated, for 2 hours.
  • Remove wings from marinade and pat dry; season with salt and pepper. In a large saute pan over medium-high heat, melt the butter in the olive oil. When the butter stops foaming, add the honey and chicken wings and fry until browned on each side, about 5 minutes. Continue cooking the wings, turning them over often to coat them as the glaze reduces. Cook until the wings are sticky and cooked through. Garnish with sesame seeds and serve.

1 clove crushed garlic

Steps:

  • Cut the chicken wings into 3 separate portions. In a large skillet, combine the chicken, water, dark soy sauce, light soy sauce, garlic and green onion. Stir together and cook for 15 minutes over medium heat.
  • Add the 1/4 cup sesame oil and simmer for another 15 minutes over low heat. Bring mixture to a boil and add dash of sesame oil. Remove from heat, let cool and serve.

2 (3-inch) pieces ginger, scrubbed, thinly sliced, divided
½ cup dark soy sauce, divided
2 tsp. Five-Spice Powder, divided
20-24 chicken wing pieces (about 2½ lb.)
3 Tbsp. vegetable or sunflower oil
1 shallot, thinly sliced
3 scallions, roots trimmed, halved crosswise
5 garlic cloves, smashed
1 red finger or Fresno chile, halved lengthwise
3 oz. Chinese rock or lump sugar or ¼ cup raw sugar
3 whole star anise
2 pieces dried licorice root (optional)
1 (4-inch-long) cassia or cinnamon stick
¼ tsp. freshly ground white pepper (optional)
¼ tsp. Sichuan peppercorns
½ cup low-sodium soy sauce
¼ cup unseasoned rice wine
Thickly sliced cucumbers (for serving; optional)

Steps:

  • Mix half of ginger, ¼ cup dark soy sauce, and 1 tsp. Five-Spice Powder in a medium bowl. Add wings; toss to coat. Cover and chill at least 1 hour and up to 8 hours.
  • Heat oil in a wok or large deep-sided skillet over medium-high. Add shallot, scallions, garlic, chile, and remaining ginger and cook, stirring, until fragrant, about 2 minutes. Add rock sugar, star anise, licorice root (if using), cassia, white pepper (if using), Sichuan peppercorns, and remaining 1 tsp. Five-Spice Powder and stir to combine. Pour in low-sodium soy sauce, remaining ¼ cup dark soy sauce, and 1 cup water. Bring to a boil, then reduce heat to medium-low.
  • Lift chicken wings out of marinade; discard marinade. Add wings to wok and pour wine over. Stir gently, then bring to a simmer. Cover and cook over medium-low 15 minutes. Gently stir, then cover again and continue cooking until chicken is cooked through and a deep brown color, about 15 minutes longer. Using a spider or slotted spoon, transfer wings to a plate.
  • Pour liquid in wok through a fine-mesh sieve into a small bowl; discard solids. Return strained liquid to wok and bring to a simmer over medium-high. Cook until sauce thickly coats a spoon, 10-12 minutes. Return chicken wings to sauce and toss to coat. Using a spider or slotted spoon, transfer to a platter. Serve with cucumbers if using.

¼ cup mirin
¼ cup sugar
¼ cup sake

  • Preheat oil to about 160˚C (320˚F).
  • Season both sides of the chicken wings with salt and pepper. Coat with potato starch.
  • Fry the wings at 160˚C (320˚F) approximately 7 minutes.

  • Put oven racks in upper and lower thirds of oven. Line 2 large shallow baking pans (17 by 11 inches) with foil. Put pans in oven and preheat oven to 500°F.

I've been making this for years ! Have to give credit to my mom, it is her recipe. It's so simple and great for nights you just wanna have a hearty dinner and not have to slave in the kitchen.

6 chicken wings
1 (8 ounce) bottle kikkoman light soy sauce
3 pieces garlic
fresh ground black pepper
cayenne pepper (optional)
2 cups white jasmine rice

Steps:

  • Grab a big bowl.
  • Place chicken wings in bowl.
  • Coat wings with soy sauce, leaving a little puddle for them to marinate in on the bottom.
  • press the garlic through a garlic press & scatter around (or chop finely).
  • Grind about a teaspoon of black pepper on top.
  • Throw in some cayenne if you're feeling daring, I just eyeball it.
  • Cook some jasmine rice in the rice cooker, the chicken is great with it! But can also be made alone. I get mahatma jasmine rice at the grocery store, nice and cheap!
  • Marinate for at least 2 hours, but keep in mind the longer it marinates. the tastier the wings will be. I like to prep it before bed and cook it the next day for dinner. Perfect!
  • After marinating, preheat the oven @ 375 degrees & pop the wings in , after 30 minutes turn them over and let cook for another 30 minutes and voila! Dinner is served :).
