LEMONY PASTA WITH CHICKPEAS AND PARSLEY

Lemony Pasta With Chickpeas and Parsley image

You can used either canned or home-cooked chickpeas in this take on the classic Italian dish pasta con ceci, which is an excellent, nutritious, quick-cooking dinner. But even more appealing is the way the soft earthiness of the chickpeas plays off the al dente pasta, coating it like a rich sauce but without a lot of fat. The whole dish is zipped up with some lemon, garlic and red pepper flakes.

Categories     dinner, easy, for two, quick, weekday, pastas, main course

Time 30m

Yield 2 servings

Number Of Ingredients 14

Kosher salt, as needed
8 ounces regular or whole-wheat fusilli or other short, sturdy pasta
2 cups cooked chickpeas, home-cooked or canned
1/4 cup extra-virgin olive oil, plus more for drizzling
2 garlic cloves, smashed and peeled
1/2 onion, diced
1 tablespoon finely chopped fresh rosemary leaves
Pinch of red pepper flakes, plus more as needed
1 1/2 cups chickpea cooking liquid (from a homemade pot; do not use the liquid from the can), vegetable stock or water
3 cups fresh parsley leaves (from 1 large bunch)
2/3 cup grated Parmigiano-Reggiano, plus more for serving
1 tablespoon unsalted butter
Finely grated zest of 1/2 lemon
Ground black pepper to taste

Steps:

  • Bring a large pot of heavily salted water to a boil. Add fusilli and cook until it is just shy of al dente. (It should be slightly underdone to your taste because you'll finish cooking it in the sauce.) Drain well.
  • While the pasta is cooking, prepare the chickpea sauce: Place chickpeas in a large bowl and use a potato masher or a fork to lightly mash them; they should be about half-crushed.
  • Heat oil in a 12-inch skillet over medium heat. Add garlic cloves and fry until they are golden brown, about 2 minutes. Stir in onions, rosemary, red pepper flakes and a pinch of salt. Cook, stirring occasionally, until onions are soft, about 10 minutes. Then stir in chickpeas and the cooking liquid, stock or water. Bring to a simmer and cook gently until most of the liquid has evaporated, about 5 minutes.
  • Stir in pasta and parsley, and cook until the pasta has finished cooking and is coated in the sauce, 1 to 2 minutes. Quickly toss in cheese, butter, lemon zest, black pepper to taste and salt if needed. Drizzle with olive oil and shower with additional cheese before serving.

1 tablespoon olive oil
2 garlic cloves, minced
1/4 teaspoon red-pepper flakes

BEST CHICKPEA SPAGHETTI

BEST Chickpea Spaghetti image

This protein-packed Chickpea Spaghetti is an easy delicious meal that comes together in about ten minutes from ingredients you probably already have in the pantry.

Provided by Marc Matsumoto

Categories     Entree

Number Of Ingredients 10

380 grams cooked chickpeas in liquid ((1 small can))
225 grams spaghetti
2 tablespoons olive oil
20 grams garlic ((3 extra-large cloves))
chili flakes ((to taste, I used 1 Tbs gochugaru))
225 grams tomatoes ((2 small tomatoes, chopped))
400 grams tomato puree ((1 small can))
1 teaspoon salt
1 tablespoon plant-based parmesan
Parsley ((for garnish))

Steps:

  • Drain the chickpeas, reserving the liquid it came in separately.
  • Bring a large pot of salted water to a boil and boil the spaghetti for 2-3 minutes less than what the package directions say.
  • Heat a large frying pan over medium-high heat and add the olive oil and garlic. Saute until the garlic is fragrant and cooked through.
  • Add the chili flakes and swirl it around with the garlic and olive oil for a few seconds.
  • Add the tomatoes and saute until they start losing their shape, and they are no longer watery.
  • Add the chickpeas, tomato puree, and salt.
  • When the pasta is 2-3 minutes shy of being done, drain it and add it to the chickpea sauce. Finish cooking the pasta in the sauce until it is done to your liking. If the sauce starts gets too thick, add some of the chickpea liquid in to thin it out.
  • Finish the pasta by tossing in the plant-based parmesan cheese.

RED SAUCE AND SPAGHETTI

Red Sauce and Spaghetti image

Provided by Food Network

Time 33m

Yield 4 to 6 servings

Number Of Ingredients 9

1 (28-ounce) can pelati tomatoes*
2 tablespoons extra-virgin olive oil, plus more for serving
1/3 red onion, medium diced
3 cloves garlic, sliced into chunks
Pinch red pepper flakes, optional
2 handful fresh basil, torn, plus more for serving
Salt and freshly ground black pepper
1 pound spaghetti, for serving
Freshly grated Parmesan cheese, for serving

Steps:

  • In a food processor, puree the tomatoes to a smooth creamy consistency.
  • Add olive oil to a large pan over medium heat. Once hot, add the onions and saute until they are soft, and before it actually starts browning a bit, add the garlic. If you'd like to make the sauce spicier, add a pinch red pepper, optional.
  • Add the tomatoes and season with salt and pepper.
  • Simmer on a medium-low flame for about a half hour. Thrive for balance in the consistency of the sauce, it has to be fluid but it should not look overly wet. A few minutes before taking the sauce off the fire, add half the basil and season with salt and pepper.
  • To serve: Cook a nice al dente pasta, dress with red sauce and finish with some freshly grated Parmesan, a couple of leaves of basil and sprinkle with extra-virgin olive oil.

PASTA WITH CHICKPEA SAUCE

Pasta With Chickpea Sauce image

This recipe was adapted from a recipe in Jane Brody's "Good Food Book." I made some changes and additions to make it more in keeping with a Nutritarian eating style. This is good with or without the pasta. You can reduce prep time by using jarred garlic, frozen onions and mushrooms.

SPAGHETTI ALLA CECI (SPAGHETTI WITH CHICKPEAS) - RACHAEL RAY

Spaghetti Alla Ceci (Spaghetti With Chickpeas) - Rachael Ray image

On "30 Minute Meals" Rachael served this fast and easy dish up with a wonderful Warm Chopped Chicken Picatta Spinach Salad.

Provided by Julesong

Categories     Spaghetti

Time 20m

Yield 4 serving(s)

Number Of Ingredients 13

1 lb spaghetti
salt
3 tablespoons extra virgin olive oil
1/2 teaspoon crushed red pepper flakes, to taste
3 -4 garlic cloves, minced
1 (14 ounce) can garbanzo beans or 1 (14 ounce) can chickpeas, drained
1/2 teaspoon dried thyme
salt & freshly ground black pepper, to taste
1/4 cup hot water, starchy water from the cooking pasta
1/2 cup unsalted chicken stock or 1/2 cup dry white wine
1 (14 ounce) can crushed tomatoes
flat leaf parsley, chopped
freshly grated parmigiano-reggiano cheese, as garnish and to pass at table

Steps:

  • In a large pot, boil the water for pasta, salt it, and cook spaghetti according to package directions to al dente.
  • While the pasta cooks, heat a large skillet over medium heat and add extra-virgin olive oil (3 Tbsp, which she describes as "3 turns of the pan") crushed red pepper flakes, and garlic.
  • Drain the canned garbanzo beans, then put them in the food processor and pulse-grind them to a fine chop.
  • Add chopped garbanzos to the pan and season with thyme, salt, and pepper then sauté for 4 to 5 minutes.
  • Add starchy water from the cooking pasta and broth (or wine) and cook down for about 30 seconds, then stir in the crushed tomatoes. Cook until tomatoes are heated through, then adjust seasoning to taste.
  • Drain pasta (do not rinse), and pour onto serving dish. Top with the sauce and toss with tongs. (Or you can add the drained pasta to the pan and toss with the sauce, then pour onto serving dish.) Top with parsley and some of the grated Parmiginao Reggiano cheese.
  • Serve with remaining grated Parmiginao Reggiano and enjoy!
  • Note: using about 1/4 cup minced shallots in this, and 1 to 2 cloves garlic (to taste), would be nice, too.
  • Note #2: oh my, well! To the reviewer who said the following, please remember that this is someone else's recipe and not mine and that regardless of your objections it is still delicious. At no point does it claim to be authentic. " -- pasta e ceci does not use spaghetti! you use mixed broken pasta. It doesn't ever have tomatoes in it or wine, stock or thyme! This is a traditional southern Italian dish & for us this is quite offensive! You need to use a bunch of parsley you make the sauce using tap water making it very soupy then you add the raw pasta & cook it in the sauce adding more water if needed. This will give you the starch you need to thicken the sauce & make the pasta taste of the sauce. to make it in the manner described in the recipe is like putting jam on a hotdog!" In any case, I hope folks will try the recipe and decide for themselves whether or not they like it. :).
