SPICY ASIAN MARINADE
This all-purpose marinade can be used for chicken or turkey breast, pork cutlets, firm-pressed tofu, and seafood. If you prefer to omit the chile flakes or paste, use 5 or 6 slices of smashed fresh ginger instead.

SPICY TOFU MARINADE
This is inspired by a recipe by Andrea Chesman, who has some wonderful grilling ideas for tofu in her book "The Vegetarian Grill." It makes enough marinade or dipping sauce for a pound of tofu.

Adapted from "The Miniature Book of Tomatoes" by Jane Donovan. I havent tried this yet. The heat factor will vary based on the type of chili sauce you use-Asian chili sauce for a morefirey result, or grocery store chili sauce if you like it milder.

SPICY STEAK MARINADE
My family loves this slightly spicy marinade, we've even cooked it down and added tomato sauce and made it into a type of basting/barbeque sauce. Place steaks in a resealable plastic bag and pour marinade over the top. Allow to rest for at least 2 hours, preferably overnight for best flavor and tenderness.
