- Preheat oven to 400°F. Spray 8x8-inch baking dish with cooking spray; set aside. Combine spinach and garlic powder in small microwave-safe bowl. Microwave on HIGH 1 minute or until warm.
- Layer half of Velveeta in bottom of dish. Top with seasoned spinach, half of drained tomatoes and bacon bits. Sprinkle with remaining Velveeta and drained tomatoes.
- Cover; bake 20 minutes or until Velveeta melts. Serve with pita chips or assorted vegetables, if desired.

SPICY BACON AND SPINACH STUFFED MUSHROOMS

- Preheat the oven to 425 degrees F.
- For the mushrooms: If your mushrooms caps are very rounded, trim a very thin slice from the top of the caps to help them sit upright for baking. Toss the mushroom caps with the olive oil and 1/4 teaspoon salt in a large bowl.
- For the filling: Heat the butter over medium-high heat. Add the chopped mushroom stems and spinach and cook, stirring occasionally, until just soft and wilted, 6 to 8 minutes. Scrape into a large bowl, season with 3/4 teaspoon salt and a few grind of pepper and set aside to cool.
- Add the bacon, mozzarella and chives to the cooled mushroom stem mixture. Stir in the breadcrumbs until well moistened.
- Pack each mushroom with an equal amount of filling and transfer the filled mushrooms to a rimmed baking sheet. Bake until the mushrooms are tender and the filling is brown and crispy on top, about 15 minutes. Let cool 5 minutes before removing from the baking sheet.

BACON QUESO
Steps:
- Place the bacon in a medium skillet over medium heat and cook, stirring occasionally, until crisp, about 10 minutes. Transfer to a paper-towel-lined plate to drain.
- Place the processed cheese in a medium saucepot over medium-low heat, and cook, whisking, until melted, about 5 minutes (You can also melt the cheese in a microwave, stirring after 1-minute intervals.)
- Whisk in the milk a couple tablespoons at a time until incorporated. Stir in the cilantro, scallions, tomato and jalapeno.
- Transfer to a serving bowl, sprinkle with the bacon, and serve with tortilla chips.

- Preheat oven to 400°F. Cook bacon in large skillet over medium heat until crisp; transfer to paper towels. Pour off drippings from skillet; reserve drippings. Add spinach to pan, sprinkle with pepper, and toss over medium heat, 1 minute. Transfer to strainer set over bowl to drain. Brush four 1-cup ramekins with drippings. Crumble bacon.
- Place 1 toasted English muffin half, split side up, in each ramekin. Divide spinach among ramekins, then sprinkle bacon over, dividing equally. With back of spoon, shape well in center of each ramekin. Gently crack 1 egg into well in each ramekin, keeping yolk intact. Drizzle 1 tablespoon cream over each egg. Sprinkle with salt and pepper.
- Bake eggs until whites are just set but yolks are still runny, 14 to 16 minutes.

- Oil bottom and sides of a 9x13-inch baking dish with about a tablespoon of bacon fat.
- Place bread cubes in a large mixing bowl.
- Crack eggs into a separate mixing bowl. Season with salt, pepper, cayenne, and nutmeg. Add cream and whisk mixture thoroughly.
- Pour egg/cream mixture over the bread cubes and mix to distribute ingredients evenly. Allow bread mixture to sit about 15 minutes to absorb the liquid.
- Transfer half of the bread mixture to the baking pan; spread evenly over the bottom and press mixture down a bit. Top with half of the grated Cheddar cheese. Add cooked bacon pieces in an even layer over the cheese. Place the cooked spinach over the bacon; top with half of the remaining cheese. Finish with the rest of the soaked bread cubes, spread evenly and pressed down slightly. Sprinkle with the rest of the grated cheese. Cover and let strata sit at room temperature for 1 hour before baking.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake strata in preheated oven until set, about 45 minutes. Optionally, you can broil the strata for a minute or two to brown the top.

- Heat olive oil and butter together in a 3-quart saucepan over medium heat; cook and stir onion until translucent, about 10 minutes. Add garlic and cook until fragrant, about 1 minute. Stir red bell pepper and jalapeno pepper into onion mixture; cook until softened, about 5 minutes.
- Reduce heat to low and mix pepperjack cheese and spinach into onion mixture; cook, stirring constantly, until cheese is melted and mixture is thick, 5 to 10 minutes. SPINACH CON QUESO
This is an adopted recipe that I have adjusted to include exact amounts for the ingredients. I used a pint of Canned Basic Salsa (Recipe #39094) when I prepared it and found that while it was flavorful, it wasn't spicy at all. You may want to add hot sauce, cayenne pepper or diced jalapenos if you like things kicked up a notch. I also melted my cheese in the microwave and stirred in the other ingredients before pouring into a mini crockpot for serving. You will want to keep an eye on it, if you serve it this way. The cheese can separate if it gets too hot in the crockpot.

- In a large, heavy bottom sauce pan add cheese, salsa, and spinach.
- Stir constantly until cheese is melted and bubbling.
- Remove from heat and add sour cream.
- Stir well and add to a Corningware bowl so it stays warm for a long time.

- To re-heat: Put a lid on the bowl and put in the microwave for a few minutes and stir well.
- Or, pour it back into a heavy bottom pot and stir until hot again.

- In a large skillet over medium heat, cook bacon until crispy, 5 to 8 minutes. With a slotted spoon, remove bacon, leaving fat in skillet; drain on a paper towel. Set aside.

- Crust: Pulse flour and salt in a food processor until combined. Add butter and pulse until mixture resembles coarse meal. Whisk together egg yolk and 2 tablespoons ice water. Add to flour mixture and pulse until moist crumbs start to form (no longer). Transfer mixture to a piece of plastic wrap, and using wrap and your hands, form into a disk. Refrigerate, wrapped, at least 30 minutes and up to 4 hours.
- On a lightly floured work surface, roll out dough to an 11-inch round. Transfer to a 9-inch pie plate; trim edges to a 1-inch overhang. Tuck overhang under and crimp as desired. (To create arc pattern, press a spoon into dough.) Wrap in plastic; freeze at least 30 minutes and up to 3 days.
- Preheat oven to 400 degrees. Line crust with parchment and fill with dried beans or pie weights. Bake until dough underneath parchment is dry, 25 minutes; remove parchment and beans. Bake until golden, 8 to 10 minutes more. Let cool slightly.
- Filling: Reduce oven temperature to 375 degrees. Whisk eggs until smooth, then whisk in cream, milk, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Stir in half of bacon and cheese. Pour custard mixture into crust, stopping just short of the top; be careful not to overfill. Press spinach into custard, leaving some poking out from top.
- Sprinkle with remaining bacon and cheese. Bake 10 minutes at 375 degrees, then about 55 minutes at 325 degrees. Let cool about 1 hour before serving.
CREAMED SPINACH AND BACON BAKE
This recipe is guaranteed to put a smile on any spinach-lover's face and will compliment any meal, since this is a creamed spinach recipe it is not a dish that bakes out totally firm. To remove the bitterness from the frozen spinach I like to microwave it in a little water for 10 minutes or until boiling, rinse until cold water then squeeze dry, if you don't mind the strong taste then you can omit this step. Prep time does not include cooking the bacon.

- Set oven to 350 degrees.
- Butter an 9-inch baking dish (or use an 8 x 8-inch baking dish).
- In a medium saucepan melt 5 tablespoons butter over medium heat; add in onions and saute for about 4 minutes (or until soft).
- Add in garlic, mushrooms, cooked bacon, cayenne pepper and seasoned salt, saute for 1 minute.

- Transfer to prepared baking dish.
- Sprinkle with 1/3 (or to taste) Parmesan cheese.
- Bake for about 25 minutes or until browned on top and bubbly.
- Let sit for 20 minutes before spooning out of the baking dish, this only gets better the longer you leave it sit, but you won't be able to keep your spoon out of the dish lol!.
