Mexican Chile Lime Peanuts image

Mexican chile lime peanuts are coated in fresh lime juice, zest, and spices then roasted.

3 cups (375 grams) shelled raw peanuts, unsalted
3 tablespoons fresh lime juice
2 teaspoons lime zest
1 ½ teaspoons ancho chile pepper
1 ½ teaspoons smoked paprika
1 teaspoon mild chili powder
1 teaspoon cumin
½ teaspoon onion powder
2 teaspoons salt

Steps:

  • Preheat oven to 350°F/177°C.
  • To a bowl add all of the ingredients except the nuts. Mix well.
  • Add the nuts to the spice mix, stir to make sure the peanuts are all coated well. Spread the peanuts evenly onto a large baking sheet and roast for 12-15 minutes, stirring halfway through.
  • Remove from the oven, allow to cool to room temperature and serve.

1/4 cup freshly squeezed lime juice (2 or 3 large limes)
Freshly grated zest of one lime
2 tablespoons chili powder
1 tablespoon kosher salt
2 teaspoons sugar
3/4 teaspoon cayenne pepper
4 cups shelled unsalted peanuts

Steps:

  • Preheat oven to 250oF. Whisk lime juice, lime zest, chili powder, salt, sugar, and cayenne pepper together in large bowl. Add peanuts and stir until evenly coated. Scrape nuts onto large, rimmed baking sheet. Bake until nuts are fragrant, dry, and beginning to darken, about 30 minutes.

A traditional Oaxacan bar snack, these lime- and chile-flavored peanuts are typically deep-fried in pork fat. The folks at Chow lightened them up by roasting them in the oven for a quick and easy snack without sacrificing any flavor. Try them out at your next cocktail party, and don't be put off by the amount of garlic-roasting sweetens and mellows it.

2 lbs raw shelled Spanish peanuts
20 whole unpeeled garlic cloves (about 2 whole heads)
6 tablespoons peanut oil
4 arbol chiles, crushed
3 tablespoons finely grated lime zest, packed (from about 4 medium limes)
4 teaspoons kosher salt
4 teaspoons granulated sugar

Steps:

  • Heat the oven to 400°F and arrange the rack in the middle. Toss together peanuts, garlic, peanut oil, and chiles until evenly coated.
  • Spread ingredients out on a baking sheet in a single layer and roast, shaking and stirring halfway through the cooking time, until nuts are toasted and beginning to crack open, about 25 minutes.
  • Remove from the oven and transfer to a large, heatproof bowl. Toss with lime zest, salt, and sugar, and serve.

I found several spiced nut recipes on the internet some time ago. This was one in a group I saved, but the source did not transfer with the recipes. I made these peanuts for Christmas for a friend & she loved them. I did have to sample them before I packaged them & decided it was a good thing I was giving them away or I would have eaten them all myself! Update: I forgot to mention that I also zested the limes before juicing them & tossed the zest with the spices & peanuts. I just couldn't see wasting all that wonderful flavour.

6 cups unsalted cocktail peanuts (I used blanched unsalted peanuts)
6 tablespoons fresh squeezed lime juice
6 tablespoons chili powder
1/2 teaspoon cayenne pepper
4 teaspoons sea salt (or kosher salt)

Steps:

  • Mix juice & seasonings in a large mixing bowl.
  • Add nuts & toss well to coat.
  • Spread on 2 parchment lined rimmed baking sheets.
  • Bake at 250F for about 45 minutes, stir every 15 minutes.
  • Nuts should be dry.
  • Cool & store in airtight container.

1 large egg
1 tablespoon fresh lime zest
1 tablespoon fresh lime juice
1 teaspoon salt
1 lb unsalted nuts
1/2 cup sugar
2 1/2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper

Steps:

  • Preheat oven to 300 degrees F; line a baking sheet with parchment paper, then spray with cooking spray.
  • Separate egg white from yolk into a large bowl (reserving yolk for another use); whisk egg white with lime zest, lime juice, and salt.
  • Add nuts and toss to coat; drain in a colander for 4 to 5 minutes.
  • Combine sugar, chili powder, cumin, and cayenne; add nuts and toss to coat with spices; spread nuts out on the prepared baking sheet.
  • Bake until dry and crisp, turning baking sheet once halfway through cooking, about 40 to 45 minutes.
  • Cool, then break apart nuts and serve.
  • Store in an air tight container for up to 3 weeks.
