I sometimes chop up a chipotle pepper and throw it in with some adobo sauce for a twist. I don't measure spices, so my measurements are conservative.

½ (8 ounce) jar medium salsa
¼ cup tomato sauce
2 cloves garlic, minced
1 small red onion, chopped
1 teaspoon ground cumin
1 teaspoon chili powder
1 pinch salt and fresh ground pepper to taste

Steps:

  • Arrange the chicken breasts in the bottom of a slow cooker, and pour in the salsa and tomato sauce. Add the garlic and onion, and sprinkle in the cumin, chili powder, salt, and pepper. Set the cooker on Low, and cook until the chicken is very tender, 4 to 5 hours. Shred the chicken with two forks for serving.

1 medium onion, cut into 1/2-inch-thick slices
2 cloves garlic, finely chopped
1 cup Old El Paso™ Thick 'n Chunky salsa
1 1/2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon freshly ground pepper
1 lb boneless skinless chicken breasts
1/2 lb boneless skinless chicken thighs
2 1/2 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
4 soft corn tortillas (6 inch), cut into strips
Chopped fresh cilantro, if desired

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray. In slow cooker, mix potatoes, corn, carrots, celery, onion and garlic. Stir in salsa, cumin, chili powder and pepper. Place chicken on top of vegetable mixture. Pour broth over ingredients.
  • Cover; cook on High heat setting 4 hours.
  • Remove chicken from slow cooker to plate. Shred using 2 forks. Return chicken to slow cooker. Stir tortilla strips into stew. Garnish with cilantro.

1 tablespoon vegetable oil

1 ¾ cups chicken broth

Steps:

  • Combine tomatoes, onions, green bell pepper, red bell pepper, yellow bell pepper, and mushrooms in the slow cooker.

1 (1 1/4 ounce) package taco seasoning mix
1 (10 ounce) can diced tomatoes with green chilies, liquid reserved
1 tablespoon white vinegar

Steps:

  • Put frozen chicken breasts in crockpot.
  • Sprinkle with taco seasoning mix.
  • Drain diced tomatoes and green chilies, but reserve the liquid for possible use later.
  • Add vinegar to crockpot.
  • Cover and cook on low for 8-10 hours.
  • After 6 hours of cooking, you may need to shred the chicken using 2 forks.
  • Stir and continue cooking. May need to add all or part of the reserved liquid if it looks too dry.

1 medium onion, chopped
3 garlic cloves, minced
1 small jalapeno pepper, chopped fine
1 (14 1/2 ounce) can Mexican-style tomatoes
1 (14 1/2 ounce) can hominy
1/4 teaspoon cumin
1 teaspoon oregano

Steps:

  • Cook chicken pieces until browned in skillet. Remove and drain.
  • Place onion, garlic and jalapeño pepper in skillet and sauté until slightly cooked.

1 tablespoon cooking oil
6 boneless skinless chicken breast halves
4 garlic cloves, minced
1/2 cup brown sugar
1 cup low sodium soy sauce
1 cup low sodium chicken broth
2 tablespoons fresh lemon juice
1 teaspoon cayenne pepper, to taste
salt and pepper
1/4 cup cornstarch
1/4 cup water

Steps:

  • Heat oil in skillet.
  • Add chicken and brown on all sides.
  • While chicken is browning, make sauce by combining garlic, brown sugar, soy sauce, chicken broth, lemon juice, and cayenne in a mixing bowl.
  • Remove browned chicken from skillet and season to taste with salt and pepper.
  • Place chicken into crock pot and cover with sauce.
  • Cover and cook on low for 4-8 hours or until chicken is done, depending on your crock pot.
  • Remove chicken from crock pot and turn crock pot to High.
  • Mix corn starch and water thoroughly together, then add to crock pot liquid.
  • Place cover on crock pot so that the lid is slightly ajar.
  • Cook until sauce thickens, about 20-30 minutes.
  • Return chicken to crock pot to coat, then serve either alone or over a bed of rice and topped with sauce.

1 tablespoon olive oil
2 tablespoons chili powder
2 teaspoons ground paprika
1 ½ teaspoons ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon ground black pepper
4 (5 ounce) boneless, skinless chicken thighs
3 cups chicken stock
1 chipotle pepper in adobo sauce, or more to taste
¼ cup tomato paste, or to taste

Steps:

  • Place olive oil in the bottom of a slow cooker.
  • Mix chili powder, paprika, cumin, garlic powder, onion powder, salt, and pepper together in a small bowl.
  • Rub chicken thighs with some of the spice rub and place in the slow cooker. Cover with chicken broth. Add remaining spice mixture and chipotle pepper in adobo and stir until incorporated. Mix in tomato paste.
  • Cover and cook until chicken is no longer pink in the centers and juices run clear, on Low, 7 to 8 hours, or High, 4 to 5 hours. An instant-read thermometer inserted into the center of a thigh should read at least 165 degrees F (74 degrees C).
  • When you're ready to serve, take chicken out and shred with forks. Place back in the sauce and toss to coat.
