Enjoy this old-fashioned ginger loaf recipe originally from Holland. This moist spicy bread smells delicious while it's baking...and slices are wonderful spread with cream cheese. Number Of Ingredients 12

4 cups all-purpose flour
2 cups sugar
4 teaspoons baking powder
2 teaspoons ground cinnamon
1-1/4 teaspoons ground cloves
1-1/4 teaspoons ground nutmeg
1 teaspoon baking soda
1 teaspoon ground ginger
2 eggs
2 cups milk
1 cup maple syrup
2 tablespoons vegetable oil

Steps:

  • In a large bowl, combine the first eight ingredients. In another bowl, combine the eggs, milk, syrup and oil. Stir into the dry ingredients just until moistened (batter will be thin). Pour into two greased 9x5-in. loaf pans. , Bake at 325° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 1/2 teaspoons ginger
1/4 teaspoon allspice
1/4 teaspoon cloves
1/2 teaspoon salt
1/4 cup light brown sugar
1/2 cup unsalted butter (softened)
1/2 cup molasses
2 teaspoons vanilla
2 large eggs (room temperature)
1 cup buttermilk (room temperature)

Steps:

  • Preheat the oven to 350 degrees. Grease a 9 x 5 loaf pan with non stick cooking spray.
  • In a large bowl combine flour, baking soda, cinnamon, ginger, allspice, cloves and salt, set aside.
  • In a stand mixer with the paddle attachment cream together the butter and sugar until light and fluffy, 2-3 minutes.
  • Add in the molasses and vanilla.
  • One at a time add the eggs and scrape down the sides of the bowl.
  • Add the dry ingredients to the stand mixer alternately with the buttermilk, stirring just until blended after each addition.
  • Spoon the batter into the prepared pan and bake for 45-50 minutes.
  • Cool in the pan for 15 minutes then remove from the loaf pan to a cooling rack to cool completely.

Just the smell of this gingerbread loaf whilst it's baking is redolent of when I was a little girl and staying at my grandparent's old cottage..........and, it is so easy to make. Plus, there are not many ingredients to it and yet, it is the recipe I always turn to when I feel like real old-fashioned sticky gingerbread! My grandmother used to serve it in thick slices with butter; it nearly always appeared on the tea table at least once a week! This is also wonderful served up as a Pudding type cake, warm with custard or cream, delicious! Oh yes, this gingerbread only contains 2 ounces of fat in it, making it low fat as well as very tasty!

8 ounces self raising flour
1 teaspoon baking powder
1 pinch salt
3 teaspoons ground ginger
2 ounces butter or 2 ounces margarine
2 ounces soft brown sugar
8 tablespoons black treacle
2 eggs, beaten and mixed with milk to make 1/2 pint
4 ounces raisins (optional)

Steps:

  • Pre-heat oven to 180C/350F/Gas mark 4.
  • Grease and line a 2 lb loaf tin.
  • Mix the flour with the salt, baking powder, ground ginger & raisins if using.
  • Melt the butter or margarine and add the sugar, black treacle - mixing them together very well.
  • Add the butter mixture to the flour mixture - and mix with a wooden spoon.
  • Gradually beat in the egg and milk mixture to make a smooth, thick batter.
  • Pour into the greased and lined 2 lb loaf tin and bake for about 45 minutes, or until a skewer when inserted comes out clean.
  • The gingerbread loaf should be well risen and slightly sticky to the touch, although it gets stickier the longer it is kept.
  • Slice and eat warm with butter, or leave to go cold and store in an airtight container.
  • Also wonderful served warm with custard or cream.
  • Keeps very well for a week or more.

1/2 cup butter
1 egg
1/2 cup brown sugar
1/2 cup molasses
1/4 cup sugar
1 3/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt (can be omitted if using salted butter)
1/4 cup warm water
3 tablespoons crystallized ginger (optional) or 3 tablespoons other dried fruit (optional)

Steps:

  • Preheat oven at 350.
  • Cream first 4 ingredients.
  • Mix in the dry ingredients.
  • Add hot water and crystallized ginger and stir until just combined.
  • Pour batter into greased baking pans.
  • Bake until a toothpick inserted into the center comes out clean, between 30 and 45 minutes.
  • Remove from the oven and let cool for at least 10 minutes before removing from the pan.

  • In a medium bowl, whisk the flour, baking soda, ginger, cinnamon, cloves, salt and pepper together until combined. Set aside. In a separate bowl or dish, whisk the molasses and hot water together.
  • In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy – about 1 minute. Add the brown sugar and beat on high speed for 1 minute until creamed together fairly well. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. On medium-high speed, beat in the egg and vanilla extract until combined. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients in three additions alternating with the hot water/molasses and mixing each addition just until incorporated. Avoid overmixing. Batter will be thin. Whisk out any big lumps.
  • Pour batter into prepared pan. Bake for around 50-60 minutes or until the gingerbread loaf is baked through. All ovens are different and your loaf could take a little more or less time. To test for doneness, insert a toothpick into the center of the gingerbread loaf. If it comes out clean with only a couple moist (not wet) crumbs, it is done. Allow to cool completely in the pan set on a wire rack before removing from pan.
