HEALTHY SICILIAN CAULIFLOWER RICE
Studded with raisins, lemon zest and pine nuts, this fluffy pilaf makes a flavorful, high-fiber side for chicken, salmon and pork.

Steps:
- Soak the raisins in warm water until plump, about 15 minutes. Drain and set aside.
- Meanwhile, trim the cauliflower florets, cutting away as much stem as possible. In three batches, break up the florets into a food processor and pulse until the texture resembles that of couscous.
- Heat the oil in a large skillet over medium-high heat. At the first wisp of smoke from the oil, add the onions, and stir to coat. Continue cooking the onions, stirring frequently, until the edges are golden brown and the onions have softened, about 6 minutes. Add the almonds, raisins, capers, garlic, lemon zest and red pepper flakes, and cook, stirring, until the almonds are golden, about 3 minutes.
- Add the cauliflower to the skillet, and stir to combine. Add 1 teaspoon salt, and continue to cook, stirring frequently, until the cauliflower has softened, 3 to 5 minutes.
- Spoon the cauliflower into a large serving bowl, garnish with parsley and season to taste with salt. Serve warm.

LAMB PATTIES
Lamb Mince (ground lamb) is really reasonably priced in Aus, so I'm always looking for new ways to use it. This one is good IMO. You can find recipes for mixed spice here on Recipezaar or pumpkin spice is similar I believe. Prep time includes soaking of bulgar and refrigeration of patties.

- Soak the bulgar in cold water for 30 minutes. Drain well, squeezing to remove excess water.
- Place all ingredients (except olive oil) in a bowl and mix well with your (clean) hands.
- Take about 2 tablespoons of the mix and roll into a ball. Place on a tray and flatten slightly. Cover the patties with plasic wrap and refrigerate for 15 minutes.
- Cover the base of a non-stick frying pan with oil and cook patties in batches over medium heat for 4 to 5 minutes each side, or until golden and cooked through.
- Good served with tabouli, yoghurt and Lebanese bread.

- Heat a grill pan, large skillet, or outdoor grill over med-high heat.
- In a large mixing bowl, mix together the lamb, onion, spices, tomato paste, hot sauce, salt, pepper, pine nuts, and lemon zest.
- Form twelve 2 to 2 ½ inch balls.
- Flatten the balls into patties and drizzle with extra-virgin olive oil.
- Grill the patties for 2-3 minutes on each side.
- Hold the cooked patties on a plate under foil.
- In a large, shallow platter mix the mint, cilantro, parsley, romaine, and arugula with the tomatoes, radishes, scallions, cucumbers, and bell pepper.
- Dress the salad with lemon juice and salt; toss, then dress with extra-virgin olive oil to taste.
- Top the salad with the lamb patties and serve.

SPICY LAMB PATTIES
I was forced to create these when my favorite brand stopped making their lamb meatballs, which were a staple in my little food-obsessed world. They're even more scrumptious with a small side of plain yogurt with some mint and cumin stirred into it. Add rice or couscous and a green salad and you have a tasty, easy, somewhat elegant dinner! This recipe can also be used to make meatballs for frying, if you prefer.

SPICED MIDDLE EASTERN LAMB PATTIES WITH PITA AND YOGURT
Whether you spell it kefta or köfte or kufte or some other variation, you can find versions of these lamb or beef meatballs throughout the Middle East. The seasoning mixture here is simple, with spices you should already have on your shelf and you can play around, adding fresh or dried mint, grated onion, or a pinch of cinnamon. And if you like a garlicky yogurt sauce, by all means, add a minced clove.

- For the sauce:
- In a small bow, whisk the yogurt with the lemon juice. Stir in the chopped herbs, season with salt and refrigerate until ready to use.
- For the patties and pita:
- In a bowl, use your hands to mix together all of the ingredients, except for the pita. Form the mixture into twelve 3-inch oval patties (about 1 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm
- Preheat a grill for at least 10 minutes and prepare it for grilling over moderately high heat. If you are using a charcoal grill, leave one area where you can grill the pita indirectly.
- Oil the grill grates and grill the patties until dark brown grill marks form on the bottom, 5 to 6 minutes. Flip the patties and grill for 4 to 6 minutes longer, until just cooked through.
- Meanwhile, wrap the pita in foil and set the package on the top shelf of a gas grill or in the cooler spot of a charcoal grill and allow them to warm through, 8 to 10 minutes.
- Wrap 2 or 3 patties in each pita, spoon some of the yogurt sauce alongside and serve with herb sprigs, passing the remaining yogurt sauce at the table.
SPICY MID-EASTERN LAMB PATTIES
Had some minced lamb in the freezer so made up these patties - tweeked them a bit and I thought they were just fine - hope you do too. Serve these on a bun or as your meat side dish. Nice with garlic rice, Kohlrabi & carrots. I made this again but BBQ'd the patties and added some hot sauc to the already tasty pattie after I flipped them - loved it and hope you will too

- Mix the lamb with egg, crumbs, coriander, cardamom, paprika, chili, cayenne& lemon juice.
- Mix well.
- Form into 4 patties.
