SPICY MAPLE ROASTED POTATO WEDGES
This recipe is easy to assemble and warming to the taste buds. The potatoes turn out crispy on the outside and tender on the inside with just the right balance of sweet and spicy. I think this recipe has just the right amount of heat, but you can adjust the chili powder and cayenne pepper to your taste. I like to serve this with my Spicy Maple-Sauced Pork Chops.

- Preheat oven to 375°F.
- Place potato wedges in a 9" x 13" baking pan.
- Drizzle with olive oil and sprinkle remaining ingredients over potatoes. Toss to combine thoroughly and spread out into one layer.
- Roast for 30 minutes or until potatoes are tender and outsides are slightly crisp. For crispier potatoes, roast for an additional 10 minutes or until preferred texture is reached.
- With a spatula, gently loosen bottoms of potatoes from baking pan and serve.

- Preheat the oven to 475 degrees F.
- Toss the potato wedges with the olive oil, garlic powder, salt and pepper in a bowl. Lay the potatoes on a baking sheet and cook until golden brown on each side, flipping halfway through, about 12 minutes per side. When both sides are golden and the potatoes can be pierced easily with a fork, the taters are done.
GINA'S SPICY POTATO WEDGES

- Preheat oven to 450 degrees F.
- In a large bowl, toss the potatoes with the melted butter, olive oil, seasoned salt, cayenne, parsley, and 3 tablespoons of the Parmesan.
- Arrange in a single layer on 2 sheet trays. Bake until golden brown and crisp, about 45 minutes. Turn the potatoes halfway through the cooking with flat spatula.
- Remove from oven and taste for seasoning. Add some kosher salt to taste and transfer to a serving platter. Garnish with more Parmesan and serve.
SPICY MAPLE-SAUCED PORK CHOPS
This recipe is easy and delicious. The pork chops are coated with a spicy rub and topped with a sweet maple sauce, which both compliments and tones down the heat. I think this recipe has just the right amount of spiciness, but you can adjust the chili powder and cayenne pepper to your taste. I like to serve this with my Spicy Maple Roasted Potato Wedges.

- Preheat oven to 375°F.
- In a non-stick oven-proof skillet, heat olive oil over medium-high heat until glistening.
- Meanwhile, in a small saucepan over medium-high heat, whisk together maple syrup, soy sauce and lemon juice. Bring to a boil. Boil for five minutes or until mixture begins to foam, reduces by half and thickens to the consistency of corn syrup. Remove from heat, cover saucepan and set aside.
- In a small bowl, combine spices (garlic powder, cumin, chili powder, ginger, cayenne pepper, black pepper and salt. Rub mixture evenly over both sides of pork chops.
- Brown pork chops in hot oil for 2 minutes on each side or until medium brown in color and slightly crispy when pricked with a fork. Remove from heat.
- Spoon 1/3 of maple sauce over top of each chop, allowing to drizzle down over sides.
- Place skillet, uncovered, in oven and roast chops for 10 minutes.
- With oven mitts, remove skillet from oven and spoon 1/2 of remaining sauce over chops. Return to oven for an additional 10 minutes or until chops are cooked through.
- Spoon remaining sauce over chops just before serving. The sauce will be cool and very sticky at this time but will melt nicely when spooned onto chops.
- Serve immediately and enjoy!

- Chop your potatoes into wedges with the skins left on. Place in a large mixing bowl
- Crush the garlic in a pestel and mortar, add the dried chilli flakes, the cumin seeds and the salt and pepper. Mix together well, making sure everything is crushed properly.
- Add the olive oil to the spice mixture and stir in well.
- Pour the spice mixture over the wedges. Make sure the mixture is coating the potatoes properly.
- Place in the oven, 200F, for 35-55mins. Make sure the wedges are golden and cooked thoroughly.

- Preheat the oven to 425 degrees F (220 degrees C). Line a 10x15-inch baking pan with foil.
- Whisk 1 teaspoon olive oil, maple syrup, thyme, 1/4 teaspoon salt, and 1/4 teaspoon pepper together in a small bowl. Set aside.
