Spicy Marinated Vegetables and Sardines on Toast image

Don't let the veggies hang out in the vinegar for too long. You want them to stay crunchy!

1 1/2 teaspoons coriander seeds
1/2 teaspoon fennel seeds
8 small any color carrots (about 6 ounces total), scrubbed
2 small shallots, peeled
1 small serrano chile
1/3 cup sherry vinegar
6 radishes, trimmed
2 tablespoons olive oil, plus more for drizzling
1/2 baguette, split in half lengthwise
1 garlic clove, peeled
3/4 cup mayonnaise
3 (3.75-ounce) cans sardines in water, drained
1 lemon
Special Equipment
A spice mill or mortar and pestle

Steps:

  • Preheat oven to 425°F. Toast coriander and fennel seeds in a dry small skillet over medium heat, tossing often, until fragrant, about 2 minutes; let cool. Coarsely grind in spice mill or with mortar and pestle; transfer to a medium bowl.
  • Using a mandoline, shave carrots, shallots, and chile into thin rounds; transfer to bowl with spices. Add vinegar and season with salt. Using your hands, massage mixture 20-30 seconds (this is just to get the flavors to meld faster). Let sit 10 minutes.
  • Shave radishes on mandoline into bowl with carrot mixture and add 2 Tbsp. oil. Toss to combine and let vegetables sit another 5-10 minutes.
  • Meanwhile, tear baguette halves into 4" pieces and place on a baking sheet. Drizzle with oil and bake until golden brown and edges are lightly charred, 5-8 minutes. Remove toast from oven and rub cut sides with garlic; season lightly with salt. Spread a layer of mayonnaise over each toast. Top with a few sardines, then drained vegetables. Finely grate a bit of lemon zest over each.

1 garlic clove , chopped
1 red chilli , deseeded and chopped
1 lemon , zest and juice
2 x 120g cans sardines in sunflower oil, drained
4 slices brown bread
half small bunch parsley , chopped

Steps:

  • Heat the olive oil in a frying pan, then sizzle the garlic clove and red chilli. Add the lemon zest.
  • Add the sardines and heat through for a few mins until warm.
  • Toast the brown bread. Stir the parsley into the sardines, add a squeeze of lemon juice, then divide between the toast and serve.

This savory snack makes a great appetizer or light lunch. It originates from Stephane Reynaud's "French Feasts," one of Martha's Finds.

6 1/2-inch-thick slices country-style bread
1 tablespoon olive oil
3 scallions, white parts only, trimmed and cut into 1-inch-long pieces
1 yellow bell pepper, stemmed, ribs and seeds removed, and julienned
1 bunch red radishes, washed, dried, trimmed, and julienned
3 tablespoons minced shallots
3 tablespoons salted butter, room temperature
3 (3-ounce) cans oil-packed sardines
6 oil-packed sundried tomatoes, julienned
1/2 cup fresh dill fronds

Steps:

  • Preheat oven to 400 degrees.
  • Drizzle bread slices with olive oil. Place on a baking sheet and toast in oven until golden brown, about 10 minutes.
  • Preheat broiler. Place scallions and pepper on a baking sheet and place under broiler; broil until tender and browned.
  • Place radishes, shallots, and butter in a medium bowl; mix well using a fork; spread mixture on toasted bread. Using a fork, slightly break up sardines. Divide sardines evenly between toasts and top with broiled vegetables, sundried tomatoes, and dill. Serve.

The basic recipe came from Antonio Carlucci's book "Southern Italian Cooking" but I've amended it a bit, mainly by adding chilli. Makes a good first course, serve with a little pile of rocket on the side and some bread. Can also be made with garfish or other small, flavoursome fish.

1 kg fresh sardine, cleaned and flattened out (butterflied)
1 cup plain flour
1/2 cup olive oil
1 clove garlic, finely chopped
1 red chile, seeded & chopped
3 tablespoons white wine vinegar
3 tablespoons dry white wine
3 tablespoons finely chopped of fresh mint
salt & pepper

Steps:

  • Dust the sardines in flour.
  • Fry them in olive oil until they are crisp& brown.
  • Transfer to a shallow dish.
  • Clean the pan and in it heat ½ cup olive oil, and fry the garlic and chilli in it very briefly.
  • Add the wine, vinegar and mint, and remove from the heat.
  • While it is still hot, pour this mixture over the fish.
  • Season to taste and leave for a couple of hours before serving.

8 sardines, scaled, cleaned and filleted
1/4 cup julienned onion
1/4 cup julienned fennel
1/4 cup carrot, thinly sliced
1/4 cup celery, thinly sliced
1 tablespoon dried oregano
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 1/3 cups verjus
2/3 cup Champagne wine vinegar or white wine vinegar
1 generous cup extra-virgin olive oil
4 fresh bay leaves, optional, for garnish
4 spirals of orange zest, optional, for garnish

Steps:

  • In a shallow casserole large enough to lay flat the 16 sardine halves, spread out half the vegetables and sprinkle with half the oregano and half the salt and pepper. Lay the sardine fillets flesh-side-down over the vegetables. Top with the remainder of the vegetables and sprinkle again with remaining oregano and salt and pepper. In a measuring cup, combine the verjus and vinegar. Pour the mixture over the sardines, cover and let sit at room temperature for 20 minutes.
  • After 20 minutes, pour off all the liquid and cover sardine-and-vegetable mixture with the olive oil. Cover and refrigerate for at least two hours or overnight.
  • Serve 4 sardine fillets per person and include a fourth of the pickled vegetables. Garnish each with a bay leaf and orange zest.
