MEXICAN DEVILED EGGS

Mexican Deviled Eggs image

I found this online when I was looking for a recipe for my sister. I copied it and then went back to looking for her recipe..lol. But, our family loves these. I know there will be some of you out there who won't care for them at all but that's ok. Everybody has different tastes! When I make them, I have to hide them in the fridge until dinner because my son and his friends will eat them all up before dinner and leave an empty plate on the counter. You can add a bit more mayonnaise if needed. Cook time is chill time and time for cooking the eggs.(10 for cooking the eggs, 10 for cooling and 30 for chilling the eggs). We sometimes have some of the filling left and My husband mixes it with chicken or tuna for a sandwich on toasted english muffins. (open faced)

  • Add 6 eggs to a pot of cool water, then place them on the stove and boil them for 20 minutes. Once boiled, place them in a bowl of cold water for 10 minutes. Refrigerate for 1-2 hours.
  • Once the eggs are cool, remove the shells by carefully tapping around the center and peeling. Crack and peel very carefully so the egg is pristine and free of tears and dents.
  • Slice them carefully in half. I like to slice them through the center instead of longways. I find they’re a more satisfying bite that way. Slice a little bit off the bottom so they sit flat on a surface without sliding around.

  • Remove the yolks and place the yolks and whites into two separate bowls. Rinse the egg whites and drain immediately to remove any remaining pieces of yolk.
  • Using a fork break up the egg yolks until it is a fine crumble. In a small bowl mash the avocado. To the yolks, add the mayonnaise, dijon mustard, pickled jalapeno juice, and avocado and beat the mixture with an electric mixer until it is light and fluffy. Then add the diced pickled jalapenos to the yolk mixture with salt.
  • Pipe the mixture into the egg white halves using a piping bag or just a plastic bag, chill for at least half and hour and serve. *note the image shows eggs cut lengthwise which is the more common way to make deviled eggs, but I like the way these eggs sit up like cups, you can feel free to make them as you prefer. If your egg whites won’t sit up straight, slice a bit of egg off the bottom to create a flat surface. Image credit - Shutterstock
