HOW TO MAKE THE BEST GRILLED ASPARAGUS
Tender and sweet, grilled asparagus is the perfect healthy 15-minute side dish for any meal. Use thicker asparagus spears for easy grilling.

Steps:
- Preheat the grill to medium heat, about 350° to 400°F, and brush the grill grates clean.
- Remove the woody ends of the asparagus by snapping the ends off. Bend each stalk gently about 2/3 of the way down the stalk until it naturally breaks where the woody part begins. If desired, use a knife to trim the ends of the stalks to tidy up the cuts. Discard the ends.
- Place the asparagus spears in a shallow bowl or on a platter or baking sheet. Drizzle with the olive oil and toss the spears with your hands to coat. Season with kosher salt and freshly ground black pepper and toss again.
- Place the asparagus across the grill grates perpendicular to the bars. Grill with the lid closed for 6 to 10 minutes or until the spears are tender and crisp. Use tongs to roll the spears for even grill marks.
- Transfer to a platter and if desired, drizzle with more olive oil and a squeeze of lemon. Can be served warm or at room temperature.

Steps:
- Start your gas grill heating on high.
- Find where to cut the asparagus by bending one and seeing where it breaks. Normally it is about 2″ from the base of the asparagus. We don't want to eat this woody part. Once you have found about where the woody part ends, line all your asparagus up on the cutting board and chop off the amount equal to the part that broke off.
- Take out some aluminum foil. Make it 2X as long as the asparagus plus about an inch. Lay the asparagus on top of the foil lengthwise.
- Add the olive oil, balsamic, salt and pepper.
- Seal the foil as shown in the photographs.
- Take the foil package out to the grill and lay on the grate with the asparagus perpendicular to the grill grates. Close the lid and allow to cook for 3 minutes on high. Reduce the heat to medium and keep cooking for another 2 minutes.
- Carefully open the foil pouch- there is steam that has built up inside so it will be hot. The asparagus should be emerald green. If it looks good, open the pouch completely.
- Using tongs, you can either pull the foil out from under the asparagus or grab the asparagus in bunches and lay right on the grill grate. Once all the asparagus are out of the foil, discard the foil and close the lid. Cook for 2 minutes. Flip and cook for 2 more.
- Grab all the asparagus and place on a platter. Sprinkle with the grated parmesan.
- Serve hot and happy eating.

GREAT GRILLED ASPARAGUS

- Warm a grill pan over medium-high heat. Place the 2 tablespoons Hidden Valley® Farmhouse Originals Italian with Herbs Dressing in a large bowl. Wash and trim the ends of the asparagus. Peel the stems if desired. Add to the bowl with the dressing and toss to coat. Season with salt and pepper. - Trim off the tough bottom of the spear by grasping each end and bending it gently until it snaps at its natural point of tenderness-usually two-thirds of the way down the spear. If the spear is less than 6 inches long, chances are it has already been trimmed for you. Alternatively, you can cut the ends off with a knife.
- Coat each spear with olive oil by placing clean, dry spears in a resealable plastic bag, pour in the oil, and massage spears to coat each one. Sprinkle with salt and massage again. Leave the asparagus in the bag until ready to cook.
- Place on the cooking grate crosswise so it won't fall through. Grill for 10 to 15 minutes (depending on the size and thickness of the stalks), turning occasionally to expose all sides to the heat. Asparagus should begin to brown in spots (indicating that its natural sugars are caramelizing) but should not be allowed to char.
- Remove from grill and serve immediately-eating spears with your fingers enhances the experience.

- Prepare asparagus by trimming ends to remove tough ends.
- Place in a glass baking dish.
- Melt the butter in a microwave proof bowl.
- Add the vinegar, Worcestershire, chulula and lime juice and mix well to break up any dry ingredients.
