- Preheat oven to 450°F With aluminum foil or parchment paper, line a cookie sheet.
- In a medium bowl, combine sweet potatoes with olive oil and seasonings. Mix well to evenly coat potatoes. Place potato strips on the foil or parchment lined cookie sheet and leave space between strips for even baking.
- Bake for approximately 15 minutes or until potatoes become crispy. Turn strips every 5 to 7 minutes as needed. Serve immediately.

- In a spice grinder or with a mortar and pestle, combine the coriander, fennel, oregano and pepper flakes; grind until mixture becomes a fine powder. Stir in salt., In a large bowl, combine the potatoes, oil and ground spices; toss to coat. Transfer to a greased 15x10x1-in. baking pan. , Bake, uncovered, at 400° for 30-35 minutes or until crisp and golden brown, turning occasionally. - Preheat the oven to 425 degrees F (220 degrees C).
- In a plastic bag, combine the sweet potatoes, canola oil, taco seasoning, and cayenne pepper. Close and shake the bag until the fries are evenly coated. Spread the fries out in a single layer on two large baking sheets.
- Bake for 30 minutes, or until crispy and brown on one side. Turn the fries over using a spatula, and cook for another 30 minutes, or until they are all crispy on the outside and tender inside. Thinner fries may not take as long.

- Peel and slice the sweet potatoes into 1/4-1/2 inch wide fries. Place the cut fries on the prepared baking sheet and drizzle with cooking oil. Toss the fries until they are well coated in oil. Spread the sweet potatoes back out over the baking sheet so they're in a single layer.
- Transfer the baking sheet to the fully preheated oven and bake for about 45 minutes, stirring every 20 minutes or so, or until the the sweet potatoes are browned and blistered.
