Homemade Spinach Pizza Rolls image

1 tablespoon cornmeal
8 ounces bulk Italian sausage
1 (13.8 ounce) package refrigerated pizza dough
1 cup shredded mozzarella cheese, divided
1 cup fresh baby spinach
¼ cup grated Parmesan cheese
1 egg, lightly beaten
1 (8 ounce) can pizza sauce, warmed

Steps:

  • Preheat oven to 375 degrees F. Line a large baking sheet with Reynolds Wrap® Non-Stick Aluminum Foil; sprinkle with cornmeal. Set aside.
  • Brown sausage in large skillet on medium-high heat. Drain and set aside.
  • Unroll pizza dough onto prepared baking sheet. Carefully stretch or roll dough into a 13x10-inch rectangle. Arrange sausage on dough to within 1/2 inch of the edges. Sprinkle with 1/2 cup of the mozzarella. Layer spinach on cheese. Top with the remaining 1/2 cup mozzarella and the Parmesan. Starting from a long side, roll up dough to make a 13-inch-long loaf. Pinch seam and ends to seal.
  • Place loaf, seam side down, on the prepared baking sheet. Brush with egg. Using a sharp knife, cut four 2-inch slits in top for steam to escape.
  • Bake 20 to 25 minutes or until golden brown. If necessary, cover the last 5 minutes of baking to prevent overbrowning. Remove from oven and slice into rounds to serve with pizza sauce.

All-purpose flour, for dusting
One 1-pound ball refrigerated pizza dough, at room temperature
2 packed cups baby spinach, roughly chopped
2 cups shredded mozzarella
3 cloves garlic, finely minced or grated
1/2 cup whole-milk ricotta cheese
Kosher salt and freshly ground black pepper
Olive oil, for drizzling
Warmed marinara sauce, for dipping

Steps:

  • Preheat the oven to 400 degrees F. Lightly dust a baking sheet and work surface with flour.
  • Roll the dough into a rectangle about the size of the baking sheet (13 by 18 inches).
  • In a large bowl, combine the spinach, mozzarella and garlic. Toss to combine. Evenly sprinkle over the dough, leaving about a 1-inch border all the way around. Dot the mixture with the ricotta cheese and sprinkle with salt and pepper.
  • Roll the dough into a log, starting at a short end. Tuck any filling that may have fallen out back into the roll. Transfer the log seam-side down to the prepared baking sheet. Drizzle with olive oil and bake until golden brown and puffed, 25 to 30 minutes.
  • Remove from the oven, let cool slightly, then slice into rounds and serve with marinara sauce.

I got this recipe from a co-worker after having them at a baby shower. They are absolutely wonderful, even if you're like me and NOT fond of spinach. They are so easy to make.

2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 (1 ounce) package ranch dressing mix
1 cup mayonnaise
1 cup sour cream
½ cup bacon bits
3 tablespoons chopped onions
10 (12 inch) flour tortillas

Steps:

  • In a medium-size mixing bowl, combine spinach, ranch mix, mayonnaise, sour cream, bacon bits and onion. Spread the mixture onto each tortilla and roll it up. Refrigerate the rolled tortillas until ready to serve.
  • Slice each roll-up into 1 inch servings no more than 3 hours before serving.

8 uncooked lasagna noodles
1/2 lb lean ground turkey
2 cloves garlic, minced
1 jar (26 oz) tomato pasta sauce
2 teaspoons Italian seasoning
1/2 teaspoon fennel seed, if desired
1 cup part-skim ricotta or cottage cheese
1/2 cup shredded carrot (1 small)
1 box (9 oz) frozen spinach, thawed, drained and squeezed dry
2 egg whites or 1 egg
1 cup shredded mozzarella cheese (4 oz)

Steps:

  • Heat oven to 350°F. Cook lasagna noodles as directed on package. Drain; rinse with hot water.
  • Meanwhile, in 10-inch skillet, cook ground turkey and garlic over medium-high heat, stirring frequently, until turkey is no longer pink; drain, if necessary. Stir in pasta sauce, Italian seasoning and fennel. Reduce heat to low; simmer uncovered about 15 minutes, stirring occasionally.
  • In small bowl, mix ricotta cheese, carrot, spinach and egg whites. Spread each cooked lasagna noodle with generous 1/4 cup spinach filling to within 1 inch of one short end. Roll up firmly toward unfilled end.
  • Reserve 1 1/2 cups sauce. In ungreased 12x8-inch (2-quart) glass baking dish, pour remaining sauce. Arrange roll-ups, seam side down, in sauce. Pour reserved sauce over roll-ups.
  • Cover tightly with foil; bake 30 to 40 minutes or until hot and bubbly. Sprinkle with mozzarella cheese; bake uncovered 3 to 5 minutes longer or until cheese is melted. Let stand 5 minutes before serving.

1 (10 ounce) package frozen spinach, thawed and squeezed very dry (as dry as you can get it)
1/2 cup melted butter
2 (500 g) containers ricotta cheese (do not use low fat)
1 1/2 cups grated mozzarella cheese
1 -2 minced garlic clove (optional)
1/4 cup flour
1/2 cup grated parmesan cheese
4 eggs, slightly beaten
seasoning salt and pepper (can use white salt)
1/8 teaspoon nutmeg (or to taste)
12 lasagna noodles, cooked
2 cups marinara sauce (see my recipe posted on Zaar!)

Steps:

  • Set oven to 375 degrees.
  • Squeeze-dry the thawed spinach very well, (is is very important to make sure there is NO moisture left in the spinach, as this will make the mixture soggy).
  • Mix the spinach with the melted butter; set aside.
  • In a bowl, mix the ricotta, grated mozza cheese, 2 eggs, flour, 1/2 cup Parmesan cheese, salt, pepper and nutmeg, mix thoroughly.
  • Mix the spinach in the ricotta mixture, mix well to combine.
  • Spread the mixture onto a cooked lasagna noodle; roll up.
  • Repeat with the remaining noodles.
  • Lay the rolled noodles into a prepared greased baking dish, seam-side down.
  • Cover with a layer of marinara sauce (you do not have to cover the rolls completely with the sauce).
  • Sprinkle with Parmesan chees (any amount desired).
  • Bake for 30 minutes.
  • *NOTE* if desired sprinkle grated Mozzeralla cheese over the rolls the last 10 minutes of baking time.

2 packages (10 ounces each) fresh spinach
3/4 cup shredded part-skim mozzarella cheese, divided
1/2 cup fat-free cottage cheese
1/3 cup grated Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon pepper
1 prebaked 12-inch thin pizza crust
1 medium tomato, chopped
1/4 cup chopped green onions
1/4 cup sliced ripe olives
1 teaspoon minced fresh basil
1 teaspoon olive oil
1 teaspoon balsamic vinegar
1 garlic clove, minced
1/2 cup crumbled feta cheese

Steps:

  • In a large nonstick skillet coated with cooking spray, saute spinach for 2-3 minutes or until wilted; remove from the skillet. Cool slightly; chop. , In a large bowl, combine 1/4 cup mozzarella cheese, cottage cheese and Parmesan cheese. Stir in the spinach, salt and pepper. Spread over crust to within 1/2 in. of edge., In a large bowl, combine the tomato, onions, olives, basil, oil, vinegar and garlic; sprinkle over spinach mixture. , Top with the feta cheese and remaining mozzarella cheese. Ready, Set, Cook! "Hidden Valley Contest Entry" This recipe is a different and fun twist on your usual pizza recipe - as it is made with pizza ingredients but in a cinnamon roll style. The ranch dressing, yogurt and cream cheese "white sauce" is a delicious compliment to all the other pizza ingredients. I guess that my fondness for cinnamon rolls is what gave me the inspiration for this recipe. I also find it is a great recipe to have on hand for gatherings with family and friends! With individual servings, it is a guest friendly recipe!

4 tablespoons olive oil
1/3 cup Hidden Valley® Original Ranch® Light Dressing (dressing)
1/4 cup plain Greek yogurt
3 ounces low-fat cream cheese, softened
3/4 lb ground mild Italian sausage
3 garlic cloves, finely chopped
2 cups chopped fresh spinach leaves
1/2 fresh lemon
1 3/4 cups shredded mozzarella cheese
1 teaspoon red pepper flakes
1/2 cup freshly grated parmesan cheese, plus
1 tablespoon freshly grated parmesan cheese

Steps:

  • Pre-heat oven to 375ºF. Position racks in the upper and lower thirds of oven. Line 2 baking sheets with parchment paper cut to fit.
  • In a small bowl, whisk together the ranch dressing, yogurt and cream cheese until well blended and smooth.
  • In a large sauté pan, heat 1 tablespoon of the olive oil over medium heat. Add sausage; cook until no longer pink, crumbling it with a fork into small pieces as it cooks. Using a large slotted spoon, transfer sausage from pan to a paper towel lined plate.
  • To the same pan used to cook sausage, over medium heat, add 1 tablespoon of the olive oil, the onions and the garlic. Cook onion and garlic, stirring often, until onions are soft and golden in color. Remove pan from heat; set aside.
  • On a lightly floured work surface, roll out and stretch dough to a 20 x 15-inch rectangle. Spread ranch dressing mixture over surface of dough up to 1/2-inch from the edges; arrange sausage and onions over the the spread surface. Sprinkle with the chopped spinach. Squeeze the juice from the lemon half over the spinach leaves; sprinkle with the mozzarella cheese, red pepper flakes and about 1/4 cup of the parmesan cheese. Roll up the dough, starting from the long side of the rectangle, pinching the seam together to seal. Slice the rolled dough into 2" sections and place slices, cut sides down, about 2-inches apart on parchment lined baking sheets. Spread top of the slices slightly so that filling shows. Lightly brush tops and sides of slices with the remaining 2 tablespoons olive oil, sprinkle with the remaining parmesan cheese.
  • Bake for 25 to 30 minutes, rotating the baking sheets between racks halfway through baking time, or until crusts are golden brown. Serve warm.

4 boneless skinless chicken breast halves (4 ounces each)
12 pepperoni slices
8 slices part-skim mozzarella cheese
1 can (15 ounces) pizza sauce

Steps:

  • Flatten chicken to 1/4-in. thickness. Place three slices of pepperoni and one slice of cheese on each. Roll up tightly; secure with toothpicks. Place in a greased 11x7-in. baking dish. Spoon pizza sauce over top. , Cover and bake at 350° for 35-40 minutes or until chicken is no longer pink. Uncover; top with the remaining cheese. Bake 5 minutes longer or until cheese is melted.
