SWORDFISH A LA SICILIANA
Sweet raisins, sour olives and piquant capers conspire to make this a memorable main dish.

Steps:
- Soak raisins in lukewarm water for 30 minutes. Drain and set aside. Preheat oven to 400 degrees F (200 degrees C).
- Heat olive oil in a large saucepan or skillet over high heat. Saute onion and garlic until soft. Stir in raisins, tomatoes, olives, pine nuts and capers. Cover pan, reduce heat to medium and cook for 15 minutes.
- Season the steaks with salt and pepper. Place in a lightly oiled baking dish and cover with the cooked sauce. Bake in preheated oven for 15 to 20 minutes, until steaks are firm.

Steps:
- Preheat oven to 350 degrees F.
- Take a 2-ounce piece of meat and dip in oil on both sides then press in bread crumbs to coat on both sides. Roll firmly and place in an oiled 2-inch deep casserole dish side by side with sides touching. When all are rolled, place one bay leaf and a half of a onion ring in between each rolled spidini. Place dish uncovered in the oven for 15 minutes. Remove from the oven and let sit. Cut spidini's into bite size portions discarding the bay leaves.

- Cut each 1/4-inch thick slice of meat into portions about 2 to 2 1/2 by 4 to 5 inches. Transfer the slices to sheets of plastic wrap, cover with plastic wrap, and, using the smooth side of a meat mallet, pound the sliced top portions until slices are very thin - ideally about 1/8-inch thick, being careful not to tear the meat. You should have approximately 16 (3 by 6 to 7-inch) rectangular portions of meat.
- In a small skillet heat 2 tablespoons of the olive oil on a medium-high heat and saute the onion until tender and translucent. Transfer to a small mixing bowl and add the bread crumbs, cheese, raisins, pine nuts, parsley, and lemon zest. Season with salt and pepper, to taste. Set aside for filling.
- Preheat a grill, grill pan, or broiler to high heat.
- Lay the beef slices on a clean flat work surface and drizzle with 4 tablespoons of the remaining olive oil, turning to coat evenly. Season with salt and pepper. Divide the bread crumb mixture evenly among the beef slices, about 2 tablespoons each, placing the filling on 1of the short ends. Using your fingers, roll the slices lengthwise up and over the filling until the meat is completely rolled up. Using butcher's twine, tie both ends of each roll firmly to secure. Thread the meat rolls onto 2 skewers, 1 at either end of the roll, and thread bay leaves and onions onto each skewer, then top with a second beef roll and 2 more onions, until you have used all of the ingredients, like a kabob. Lightly brush each skewer with some of the remaining olive oil. You should have 8 double-skewered kabobs, each with 2 beef rolls, 4 onions, and 2 bay leaves.
- Grill the skewers, turning occasionally, until meat is charred on the outside but still medium-pink on the inside, about 4 to 5 minutes per side. Set skewers aside to rest for 5 to 10 minutes before serving.

- Trim eggplant and cut into 1/2-inch pieces.
- In a large skillet, cook eggplant and garlic in oil for 7 minutes over medium-high heat, stirring occasionally.
- Stir in tomatoes and break up with a wooden spoon.
- Add oregano, salt and red pepper flakes.
- Simmer for 15 minutes, stirring occasionally.
- While sauce is simmering, cook pasta following package directions.
- Drain, reserving 1 cup of the cooking water.
- Toss drained pasta with sauce.
- Add reserved pasta water, in 1/4 cup increments, until desired consistency is reached.
- Stir in cheese, allow to melt slightly and serve.

- Cut minute steak in half to form about 5x5 piece of meat Lay steak flat and smear with softened butter. Add to the center of the meat 1 heaping tbsp. breadcrumb mixture, 3 or 4 pieces of salami and provolone, a few slices of onion, a few chunks of whole tomato. Roll up the sides to cover stuffing and turn ends up, stick in toothpicks to keep closed. Set oven on broil. Turn to brown on all sides. Broil until golden brown.

- In a frying pan sauté one of the minced onions in olive oil. Once the onion is a little golden add the bread crumbs into the pan. Stir. You will now add in the stewed tomatoes (use a VERY small amount of mashed stewed tomatoes, the tomatoes are only used to give it color, a red hue.)
- In a bowl mix the cooled bread crumbs, pinoli, currants, parsley, salt and pepper (to taste.)
- Have the butcher cut the eye of round very thin and about 2”x3” in size, (if you go to the Italian butcher he will know how to cut it)
- Now make your assembly line: bay leaves, quartered onion, small plate of olive oil, fresh bread crumbs w/salt and pepper to taste, skewers.
- Take 1 slice of beef and apply the cooled bread crumb mixture from the pan. You will place the mixture onto the meat and roll it forward, it will resemble a “pig in a blanket.”
- Once rolled, roll in the plate of olive oil, roll in the fresh bread crumbs, set aside, and repeat until all the meat is rolled.
- Next take a skewer, apply 1 bay leaf, followed by a Spiedino, then place 1 quartered piece of onion. Repeat sequence until all the Spiedini are on the skewers.

- Arrange a work space by filling a medium, shallow bowl with oil and filling another medium, shallow bowl with about 2 cups of breadcrumbs. Working one at a time, dip each cutlet in oil, allowing the excess to drip off, and then dredge in breadcrumbs. Set aside.
- Mix together the tomato sauce, onions and cheese, then add a few handfuls of seasoned breadcrumbs a little at a time until the mixture is the consistency of runny oatmeal – but not too wet. If it’s too saucy it will ooze out when you roll these up.
- Create an assembly line by placing a stack of breaded cutlets next to a stack of sliced salami (if using), and the bowl of filling. Place a few cutlets down on a cutting board, then lay a piece or two of salami (if using) on top. Place a heaping teaspoon of filling on top of the salami, being careful not to put too much. At this point, you can choose to roll them up like cigars or bunch the meat up into a pouch and use two toothpicks to hold it closed.
