HERBY SPRING CHICKEN POT PIE

Minimise your washing-up with this delicious one-pan chicken pie with spinach and herbs and topped with crispy filo pastry. It's ideal for busy weeknights

2 tbsp olive oil , plus a little extra for brushing over the pastry
bunch spring onions , sliced into 3cm pieces
250g frozen spinach
6 ready-cooked chicken thighs (or see tip, below)
350ml hot chicken stock
½ tbsp wholegrain mustard
200g frozen peas
200ml half-fat crème fraîche
½ small bunch tarragon , leaves finely chopped
small bunch parsley , finely chopped
270g pack filo pastry

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a large, shallow casserole dish on a medium heat. Add the spring onions and fry for 3 mins, then stir through the frozen spinach and cook for 2 mins or until it's starting to wilt. Remove the skin from the chicken and discard. Shred the chicken off the bone and into the pan, and discard the bones. Stir through the stock and mustard. Bring to a simmer and cook, uncovered, for 5-10 mins.
  • Stir in the peas, crème fraîche and herbs, then remove from the heat. Scrunch the filo pastry sheets over the mixture, brush with a little oil and bake for 15-20 mins or until golden brown.

Celebrate Easter with this spring chicken pot pie. It's kinder on your wallet than the traditional roast lamb, and equally enjoyable

4-6 skinless, boneless chicken thighs
1 tbsp olive oil
100g smoked bacon lardons
2 leeks , sliced
3 tbsp plain flour
100ml white wine (or extra stock)
200ml chicken stock
200g crème fraîche
100g frozen or fresh podded peas
1½ tbsp Dijon mustard
small bunch of tarragon , chopped
1 egg , beaten
320g sheet puff pastry

Steps:

  • Season the chicken thighs with some salt and pepper. Heat the oil in a heavy-based saucepan and fry the chicken for 3-4 mins on each side until lightly golden, then transfer to a plate. Add the bacon to the pan and fry for 5 mins until golden. Tip in the leeks and fry for another 5 mins.
  • Sprinkle the flour over the leeks and bacon, and stir until combined. Add the wine, if using, and bubble for a few minutes, then add the stock and stir well. Slice the chicken and return it to the pan - don't worry if it's not fully cooked through at this point, it will finish cooking in the oven.
  • Stir in the crème fraîche, peas, 1 tbsp mustard and the tarragon, and bubble for a few minutes until thick and saucy. Add a splash more stock or water if it seems too thick Remove the pie filling from the heat. Whisk the remaining ½ tbsp mustard with the egg in a bowl.
  • Heat the oven to 200C/180C fan/gas 6. Spoon the filling into a pie dish with a lip and use some of the egg mix to brush the sides of the dish. Unroll the pastry over the top of the pie and crimp the edges against the sides of the dish, then cut away any excess with a knife. Will keep frozen, well covered, for up to three months.
  • Brush the remaining egg glaze over the pie and make a small steam hole in the middle. Bake for 40 mins until golden and puffed. Serve with buttered new potatoes and steamed greens or carrots, if you like.

2 lemons
500 g Jersey Royals
½ a bunch of fresh tarragon, (15g)
1 bunch of fresh flat-leaf parsley, (30g)
8 free-range chicken thighs, bone in, skin on, from sustainable sources
6 cloves of garlic
olive oil
50 g unsalted butter
2 tablespoons plain flour
400 ml organic chicken stock
2 teaspoons Dijon mustard
75 g watercress
5 sheets of filo pastry

Steps:

  • Preheat the oven to 190ºC/375ºF/gas 5.
  • Halve the lemons, quarter the Jersey Royals, then pick and finely chop the tarragon and parsley.
  • Put the chicken, unpeeled garlic cloves, lemon and potatoes in a large baking tray, drizzle with oil, season with sea salt and black pepper, then toss together.
  • Pop in the oven for 45 minutes, or until golden, crispy and cooked. Remove from the oven and allow to cool.
  • Melt the butter in a large non-stick pan until bubbling. Add the flour and stir for 1 to 2 minutes to form a paste, then slowly pour in the stock, whisking until thickened. Add the mustard, then season.
  • Once the chicken is cool enough to handle, remove and reserve the skin and discard any gristle. Shred the meat, discarding the bones.
  • Squeeze the garlic from its skins back into the roasting tray and squeeze over all the juice from the lemons and toss well.
  • Pour over the thickened stock and add the herbs and watercress. Check the seasoning, then finely chop the chicken skins and sprinkle over the filling.
  • Lay out sheets of filo on a clean surface and cut each one in half. Lightly scrunch up and place on top of the pie filling, brushing with a little oil.
  • Bake for 25 minutes, or until crispy and golden, then serve with a crisp green salad.

Make this comforting chicken and leek pie ahead of time using a few cheat's ingredients - it's creamy, rich and filled with the freshness of spring

50g unsalted butter
200g frozen sliced leeks
6 skinless chicken thigh fillets, cut into bite-sized pieces
2 tbsp plain flour, plus extra for dusting
150ml white wine or vermouth
500ml béchamel or white sauce (we used Chef Parmalat)
300g frozen green vegetables (such as broad beans, peas or beans)
30g flat-leaf parsley finely chopped
2 tbsp plus 2 tsp dijon or wholegrain mustard (or use a mixture)
500g puff pastry block
1 egg, beaten
steamed greens or carrots, to serve

Steps:

  • Melt the butter in a pan over a medium-high heat and fry the leeks for 10 minutes until soft. Add the chicken and fry for a few minutes until opaque, then sprinkle in the flour. Add the béchamel, green veg, parsley and 2 tbsp of mustard. Season well. Transfer the mixture to a pie dish - the filling should fit in snugly. Leave to cool, then chill for up to two days, if you like.
  • Roll out the pastry on a floured worksurface to the thickness of a £1 coin. Whisk the remaining 2 tsp of mustard into the beaten egg and brush a little around the edge of the pie dish. Lay the pastry over the filling and press around the edges to seal. Brush with the rest of the egg wash and sprinkle with sea salt. Chill until ready to bake or up to a day ahead.
  • Heat the oven to 220C/fan 200C/gas 7. Cut a steam hole into the top of the pie and bake from chilled for 35-40 minutes or until golden and bubbling. Serve with steamed greens or carrots.

Spring Chicken Pie blanketed in golden pastry dotted with herbs, the filling is a moreish mixture of tender roasted chicken and its sausage stuffing, leeks, bacon, and sweet Portabellini mushrooms. A splash of whiskey and cream binds the ingredients together whilst thyme lends its fragrant flavor to what has been the tastiest way to see out winter.

1 Whole Chicken
2 Leek
1 tablespoon Salted Butter
6 slice Streaky Bacon
250 gram Baby Bella Mushroom
3 sprig Fresh Thyme
50 milliliter Whiskey
250 milliliter Pouring Cream
100 milliliter Dry White Wine
1 Puff Pastry
1 sprig Fresh Rosemary
1 sprig Fresh Thyme
1 Egg
to taste Coarse Sea Salt
to taste Coarse Black Pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Roughly shred Whole Chicken (1). Set aside.
  • In a heavy-bottomed casserole over medium to high heat, melt Salted Butter (1 tablespoon). Sauté the Leek (2) with the Streaky Bacon (6 slice) until the leeks have softened and the bacon is cooked through.
  • Add in Coarse Black Pepper (to taste) and Baby Bella Mushroom (250 gram), and season with Fresh Thyme (3 sprig) and Coarse Sea Salt (to taste). Cook until the mushrooms have browned.
  • Deglaze the casserole with the Whiskey (50 milliliter) and leave to cook for a further 1 minute before pouring in the Pouring Cream (250 milliliter). Stir to combine and add in the shredded chicken and stuffing.
  • Check the seasoning if necessary and pour in the Dry White Wine (100 milliliter). Leave the mixture to simmer over low heat for a further 8-10 minutes and set aside.
  • On a floured surface, roll out the Puff Pastry (1). Sprinkle over the Fresh Rosemary (1 sprig) and Fresh Thyme (1 sprig) and use the rolling pin to embed them into the pastry.
  • Fill your pie dish or dishes with the chicken mixture and drape over the pastry, cutting off any excess and decorating the pie as desired. Brush the top of the pie with the Egg (1).
  • Place the pie on a lined baking sheet and bake for 20-30 minutes or until the pastry is golden.
  • Serve the chicken pie with side dishes of your choice. Enjoy!
