BACON WRAPPED STEAK
This is my favorite steak ever so when you cook it I hope you enjoy. I learned different techniques from Gordon Ramsey and Jamie Oliver videos and made this recipe from what I learned.

Steps:
- preheat oven to 420 degrees F.
- wrap each steak with a strip of bacon.
- put the olive oil in a large pan and heat the pan until you can move the olive oil around easily.
- put your steaks in the pan and if you hear a sizzling noise that is good if not take the steaks out and heat it longer.
- cook the steaks for 1 min on each side.
- place the rosemary (or thyme) sprigs, garlic, and butter in the pan with the steaks.
- flip steaks and continue to cook them 1 minute on each side until they have cooked a total of 3 minutes on each side.
- put the steaks in the oven for 8 mins .
- remove steaks from the oven and let them rest for 2 minutes.
- remove the rosemary (or thyme) sprigs and the garlic from the pan, leaving all of the liquid.
- pour red wine into the liquid left over in the pan.
- cook the juices and red wine over low heat until boiling.
- add the juice from the meat resting pan into the mix of liquids left over in the pan and it makes an amazing sauce.
- plate the steak and pour the sauce over it. ENJOY!

MEAT AND POTATO SCRAMBLE

- Melt the butter in a large skillet over medium-high heat. Add the sausage, bacon and onion and saute until the meat is cooked through and the onion is golden, about 8 minutes. Drain off the fat. Add the potato, sprinkle with salt and pepper and cook to warm the potato, about 3 minutes.
- Mix together the half-and-half, eggs and some salt and pepper in a pitcher or bowl until combined.
- Lower the heat under the skillet to medium low. Pour in the egg mixture and cook until soft, creamy curds begin to form, a few minutes. Add the cheese and green onions and cook, stirring, until the eggs are cooked and the cheese is almost totally melted, a few minutes more.

- Rub barbeque seasoning into beef tips until meat has an orange hue, 3 to 5 minutes. Cut beef into 1-inch cubes.
- Wrap each beef cube in a bacon slice and secure bacon slice with a toothpick.
- Heat a skillet over medium-heat. Working in batches, cook wrapped beef tips in hot skillet until beef is browned all over and bacon is crispy, 5 to 10 minutes.

STEAK 'N' BACON CHEDDAR MEATBALLS
This is essentially a bacon cheeseburger in meatball form. The cooked steak should be diced into small bites, not ground, for the best texture.

- In a large skillet, heat 1 tablespoon oil over medium heat. Add onion and bacon, and cook, stirring, until bacon has browned and onion is translucent, about 10 minutes. Using a slotted spoon, transfer onion and bacon to a plate and cool in refrigerator.
- Heat oven to 450 degrees. Use the remaining 2 tablespoons oil to coat a 9-by-13-inch baking dish.
- In a large bowl, combine steak, ground beef, cooled bacon and onions, cheese, eggs, bread crumbs and salt, and mix lightly but thoroughly by hand. To taste for seasoning, heat a small skillet and fry a chunk of the mixture until browned. Add salt and pepper to taste.
- Roll mixture into golf-ball-size balls, packing firmly. Pack snugly into the prepared dish, making even rows to form a grid. Roast for 20 minutes, or until firm and cooked through. (The center should be at 165 degrees.)
- Let cool for at least 5 minutes before serving.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a baking sheet with nonstick cooking spray.
- Pull outer leaf off cabbage. Cut cabbage into 1-inch thick steaks and place on the baking sheet. Rub both sides of cabbage steaks with smashed garlic. Use a pastry brush to evenly spread olive oil on both sides. Sprinkle salt and pepper over each side.
- Roast in the middle of the preheated oven for 30 minutes. Carefully flip the cabbage steaks and place 1 to 2 bacon slices on each steak. Sprinkle brown sugar on top. Roast until cabbage is tender and bacon is crisp, about 30 minutes more.

- In a large skillet over medium heat, cook bacon until crisp (8-10 minutes). Remove from pan and place on paper towels. Discard all bacon fat in skillet but do not wash skillet. Set aside.
- Slice steak across grain, cutting into strips 1 1/2 inches thick.
- Over high heat, reheat skillet (the same one you cooked the bacon in) and place 1/3 of the steak strips in pan, cooking 2-3 minutes, stirring occasionally or until cooked. Place in bowl. Repeat with remaining meat.
- Place onions in the same skillet and cook over high heat, tossing frequently, until brown (3-4 minutes). Reduce heat to medium low.
- Add garlic, chile, and bell peppers to onions in skillet, cook stirring for 3 minutes.
- Add meat back to skillet along with the water and salt. Cook, stirring until liquid has almost disappeared (3 minutes).
- Stir in cilantro. Remove from heat.
- Stir in lime juice.
- Top with cheese and put in tortillas or serve with bread.
