Steps:
- Preheat oven to 400°. Spray 9x11 casserole dish with cooking spray.
- Pour vegetables into casserole dish and drizzle with olive oil. Season with garlic powder, salt and pepper.
- Stir vegetables until well combined then spread into an even layer. Cover with a silicone baking mat.
- Bake for 28 minutes. Remove silicone mat and bake for another 6-7 minutes until fork tender.
- Remove from oven and serve.

- Preheat oven to 475 degrees F (245 degrees C).
- In a large bowl, combine the squash, red bell peppers, sweet potato, and Yukon Gold potatoes. Separate the red onion quarters into pieces, and add them to the mixture.
- In a small bowl, stir together thyme, rosemary, olive oil, vinegar, salt, and pepper. Toss with vegetables until they are coated. Spread evenly on a large roasting pan.
- Roast for 35 to 40 minutes in the preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned.

Steps:
- Set up your steamer inside your pot with 1 1/2" water in the bottom of the pot and heat over medium-high heat until water is boiling.
- Deposit vegetables with a light salting and garlic to taste; season salt may be used, to taste.
- Replace lid and steam until vegetables are tender, but not mushy. Fork will insert easily, but will not tear veggies apart, when done.
- Remove to a bowl and serve as is.
