Steps:
- Mix buttermilk and oats in a large bowl; allow to rest about 5 minutes. Stir flour, cornmeal, baking powder, sugar, baking soda, and salt into oat mixture. Add eggs and vegetable oil; mix until just combined.
- Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle; cook until bubbles form and the edges are dry, about 3 minutes. Flip and cook until browned on the other side, about 3 minutes more. Repeat with remaining batter.

STEEL-CUT OATCAKES
I am NOT an oatmeal fan. I have been searching for over a year to find a way to include oatmeal into my diet. I just don't like oatmeal. I tried steel-cut oats and able to eat a bite or two, but in the end the texture just is a challenge for me. I found this recipe in Bon Appetite (Sept. 2007) and thought it worth a try. It was great! Cook the oatmeal, chill, cut into pieces and cook on a griddle. While it is a two step recipe, it is quick and easy and worth the little bit of planning required. The cakes are even better served with fruit or yogurt. I will never be a big oatmeal fan, but this is a recipe I can include in my meal plan and actually enjoy. Give it a try, your colon will thank you!

Steps:
- Butter (or use non-stick cooking spray) a 13x9x2-inch baking pan.
- Bring 3 1/2 cups water to boil in heavy medium saucepan.
- Add oats and salt.
- Bring to boil; reduce heat to medium-low, cover, and simmer until oatmeal is tender but still firm to bite. Stir often and add more water by 1/4 cup fill if too thick. Cook about 20 - 30 minutes.
- Add cream, maple syrup, sugar and vanilla; stir until mixture thickens, about 3 minutes.
- Spread oatmeal in prepared pan.
- Cover with plastic wrap and chill until firm, at least 4 hours and up to 24. (Keep chilled until ready to griddle).
- Cut chilled oatmeal into squares or triangles.
- Heat griddle or heavy nonstick skillet over medium high heat.
- Brush griddle with butter.
- Cook oatcakes until golden brown and heated through, about 3 to 4 minutes per side.
- Divide oatcakes among plates and top with your choice of toppings (maple syrup, berries or yogurt).
GRIDDLED STEEL-CUT OATCAKES

- Butter 13x9x2-inch metal baking pan or rimmed baking sheet. Bring 3 1/2 cups water to boil in heavy medium saucepan. Add oats and salt. Bring to boil; reduce heat to medium-low, cover, and simmer until oatmeal is tender but still firm to bite, stirring often and adding more water by 1/4 cupfuls if too thick, about 30 minutes. Add cream, 2 tablespoons maple syrup, sugar, and vanilla; stir until mixture thickens, about 3 minutes. Spread oatmeal in prepared pan. Cover with plastic wrap and chill until firm, at least 4 hours. DO AHEAD: Can be made 1 day ahead. Keep chilled.
- Cut chilled oatmeal into squares or triangles. Heat griddle or heavy nonstick skillet over medium heat. Brush griddle with melted butter. Cook oatcakes until golden brown and heated through, about 3 to 4 minutes per side. Divide oatcakes among plates, drizzle with maple syrup, spoon strawberries over, and serve.
WHOLE GRAIN 'STEEL-CUT' OATMEAL PANCAKES
I just recently started eating Coach's 'steel-cut, cracked and toasted' Oats and it's got me hooked. It's nutty and full of flavor. This is from the back of their package...slightly modified. I use butter for greasing ... I know, but I love the flavor of butter! Please note that I'm not sure how this will work with regular oatmeal. Okay, I bought another brand of 'steel-cut' oatmeal to see if there was a difference. There was enough difference in the texture, flavor, cook-time and overall quality (to me) that I recommend you use the Coach's brand for this recipe.

- Combine dry ingreadients in a large mixing bowl.
- Combine wet ingredients in another bowl.
- Add wet ingredients to dry ingredients. Mix until well blended.
- Pour 1/4-cup batter onto a hot, lightly greased griddle for each pancake. Cook until golden brown on each side.

- Pour water (4 cups) into a medium size sauce pan, add salt (1/2tsp). Bring water to boil. Pour in uncooked steel cut oats (1cup). Cook for 1 minute. Watch it closely, it can overboil if you let it without supervision. After 1 minute remove from the heat, cover and let sit on the counter overnight.
- In a bowl whisk together flour ( 1 cup and 1/2 cup), baking soda (1/2tsp) and salt (pinch), set aside.
- To cook pancakes heat a skillet or a griddle. Add a small amount of coconut oil or use other oil, butter etc.Use a brush to spread the oil if needed. Heat it up to medium-high and then drop 1/3 cup measure of pancake batter onto the heated pan. Pancake batter is thick, gently spread it with a back of the spoon. Cook on medium heat for 2 minutes then flip and continue cooking for additional 1 minute. Slide a spatula under cooked pancakes and transfer it onto plate. Repeat until you you are done will all of the pancake batter. Enjoy plain or with your favorite topping.TIP - 1/3 cup of batter makes about 5-6 inch pancakes

- Measure Oats into a medium bowl and add 1.5 cups boiling water. Let soak for at least 5 minutes. (No need to strain as it will just be absorbed into the oats)
- While Oats soak measure out the dry ingredients, flour through salt into a large mixing bowl and stir to combine.
- Preheat Griddle Pan to 350 degrees or Skillet to Med High (adjust skillet as needed for ideal cook)
- Once the oats are done soaking add the buttermilk through vanilla extract to the soaking oats bowl. Stir well to combine.
