- In a 1-qt. microwave-safe bowl, combine the tomatoes, sugar, butter, seasoned salt and pepper. Cover and microwave on high for 5 minutes. Combine cornstarch and water until smooth; stir into the tomato mixture. Cover and cook 1 minute longer or until thickened and bubbly.

Steps:
- Bring a large pot of water to boil, plunge tomatoes in for 30 seconds. Remove, put immediately in a ice bath.
- Peel the tomatoes. Discard the skins.
- Dice the tomatoes up to desired size.
- In a large pot on medium heat, combine all ingredients.
- Simmer for 30 minutes.
- Then serve fresh or you can freeze them.

- Preheat the oven to 450 degrees F.
- Slice the tomatoes from core to core. Remove and discard the seeds and juice, and add the tomatoes to a casserole dish. Drizzle with olive oil and sprinkle with salt and pepper.
- Combine the 2 tablespoons olive oil, panko, Parmesan, parsley, garlic, shallots, red pepper flakes and some salt and pepper together in a small bowl. Fill the tomatoes with the panko mixture. Bake 20 minutes. Drizzle with a splash of olive oil before serving.

- In a glass or ceramic dish (11 by 14 by 2 inches), combine butter, sugar, salt, ginger, paprika, cloves and onion. Cook, uncovered, at 100 percent for 4 minutes.
- Stir in tomatoes. Push tomatoes to the edge of the dish so that they make a ring, leaving an open area in the center. Cover dish tightly with polyvinyl microwave plastic wrap. Cook at 100 percent for 8 minutes. Pierce plastic and stir in dissolved cornstarch. Patch plastic. Cook at 100 percent for 3 minutes longer.
