85g butter, melted
140g self-raising flour
100g golden caster sugar
1 tbsp baking powder
200ml milk
1 egg, beaten
1 tsp vanilla extract
2 Bramley apples (or other cooking) apples, peeled, cored and sliced
140g dark brown sugar
50g pecan, roughly chopped

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Grease a 2-litre/3½-pint ovenproof dish lightly with butter. Tip the flour, sugar and baking powder, along with a pinch of salt, into a large bowl. Mix together the milk, butter, egg and vanilla extract and stir into the dry ingredients until you get a smooth batter. Arrange the apples in the dish, spoon the batter on top and smooth with a knife until the apples are covered.
  • For the topping, pour 250ml boiling water over the sugar and stir together until smooth. Pour the liquid over the pudding mixture, then scatter over the pecans. Bake for about 40 mins until the pudding has risen and is golden. Use a big spoon to serve the pudding, making sure you get some of the gooey caramel sauce covering the bottom of the dish. Serve with pouring cream, warm custard or vanilla ice cream.

6 large Golden Delicious apples (about 3 1/2 pounds)
2/3 cup plus 6 tablespoons coarsely chopped pecans
1/3 cup golden raisins
1/4 cup sweetened flaked coconut
2 tablespoons pure maple syrup
1 teaspoon grated lemon peel
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
6 tablespoons peach or apricot preserves
1 cup unfiltered apple juice or cider
2 tablespoons (1/4 stick) unsalted butter

Steps:

  • Preheat oven to 375°F. Core apples. Peel top third of each apple. Using small sharp knife, cut 1/4-inch-deep line all around each where peel and flesh meet. Using small sharp knife, cut about 1 1/4-inch-wide, 1-inch-deep hollow in top of each apple. Cut off thin slice from bottom of each to allow apples to stand flat. Place apples in 13x9x2-inch glass baking dish.
  • Finely chop 2/3 cup pecans, raisins and coconut in processor. Transfer to small bowl. Mix in maple syrup, lemon peel, cinnamon and nutmeg. Divide filling equally among hollows in apples.
  • Spread 1 tablespoon preserves over top of each apple and into hollows. Press 1 tablespoon chopped pecans atop each.
  • Combine apple juice and butter in small saucepan. Stir over medium heat until butter melts. Pour into dish around apples. Cover dish loosely with foil. Bake apples 30 minutes. Remove foil; bake until apples are tender, basting with juices every 10 minutes, about 35 minutes longer. Serve apples warm with pan juices.

If you really want to push the boat out - serve these with an extra dollop of cream or even some vanilla ice cream! These apples are better eaten warm, rather than hot - so let them rest for about 5 minutes before serving, ideally whilst you make the toffee sauce.

125 g unsalted butter
150 g light muscovado sugar
150 ml brandy or 150 ml apple juice
1 lemon, juice of
100 ml maple syrup

  • Preheat the oven at gas mark 4/180°C/375°F.
  • Core the apples and, with a sharp knife, cut a line round the middle of them.
  • Put them in a roasting tin & press the butter, sugar & pecan nuts, alternately, in to the holes and press any excess on top.
  • Put the Calvados, brandy or apple juice with the lemon juice and maple syrup into the tin.
  • Put them into the oven and cook for about 40 to 50 minutes or until tender.
  • Then take the tin out of the oven, remove apples to a plate or dish and pour the cooking juices and liquid into a saucepan. (Making sure, the nuts are not included - strain them out and put them back with the apples).
  • When you want to eat pudding, put the saucepan on a high heat on the hob. Let bubble until reduced and thickened; it should be like a thick sticky syrup.
  • Stir in the cream and let bubble again for a few minutes; pour this sticky toffee sauce over the apples and serve with an extra dollop of fresh cream or vanilla ice cream.

1 apple, diced
1 tablespoon brown sugar
1 teaspoon cinnamon
½ teaspoon nutmeg
4 apples
1 sheet puff pastry
2 tablespoons toffee sauce
1 egg, for egg wash
brown sugar
cinnamon
vanilla ice cream
toffee sauce

Steps:

  • Preheat oven to 375°F (190°C ).
  • In a small saucepan, cook the apple, brown sugar, cinnamon, and nutmeg over a medium-low heat until softened.
  • Cut three thin strips on a chilled sheet of puff pastry.
  • Cut two of the strips into four and make a small lattice pattern with them. Repeat to make three more lattices.
  • Cut the tops of the apples and scoop out the insides carefully with a melon baller.
  • Mix some of the toffee sauce in and fill with the toffee apple mixture.
  • Place the lattices on top of each apple and drape the remaining strips around the lattice, cutting off any overhang.
  • Place apples in an ovenproof dish, brush the pastry with egg wash and sprinkle over some more brown sugar and cinnamon.
  • Bake for 20 minutes.
  • Serve with ice cream and more toffee sauce.

1 package (8 ounces) cream cheese, softened
3-3/4 cups confectioners' sugar

1/4 cup English toffee bits

Steps:

  • Line a 9-in. square pan with foil and grease the foil with butter; set aside. In a large bowl, beat cream cheese until fluffy. Gradually beat in confectioners' sugar. Beat in the melted chocolate, extract and salt until smooth. Stir in pecans and toffee bits., Spread into prepared pan. Cover and refrigerate overnight or until firm. Using foil, lift fudge out of pan. Gently peel off foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.

1/2 cup brown sugar
1/4 cup cream
60 g butter
1/4 teaspoon vanilla essence
2 -3 apples, peeled, quartered and cored then make slices almost through in each quarter to make fan shape
1/3 cup pecans, nut pieces
90 g butter
1 cup caster sugar
3/4 teaspoon vanilla essence
3 eggs
1 1/3 cups self raising flour
1/2 cup cold water

Steps:

  • Combine the brown sugar, cream, 60g butter and 1/4 teaspoon vanilla in a saucepan.
  • Bring to the boil, reduce heat and simmer for 3 minutes.
  • Pour into a greased 20cm round cake pan and allow to cool.
  • Arrange the apples, cut sides down, over the toffee. Fill the spaces with pecan nut pieces.
  • Cream the 90g butter ,caster sugar and 3/4 teaspoon vanilla essence, until light and fluffy.
  • Add the eggs, one at a time, beating them well after each addition, then continue beating until fluffy.
  • Gently fold in the flour and water. Spoon the mixture over the apples and bake in a slow oven for 1 hour and 40 minutes, or until cooked when tested with a skewer.
  • Allow to stand for 5-10 minutes, then carefully turn out onto a serving dish.
  • Serve warm with lashings of cream.

100 g shelled walnuts or 100 g shelled pecans
2 dessert apples, peeled, cored & chopped
3 tablespoons golden syrup
4 tablespoons cognac

170 g self-raising flour
1 teaspoon bicarbonate of soda
180 g soft brown sugar
100 g butter

Steps:

  • Heat oven to 160C or 320°F.
  • Whizz up the dates in a food processor until chopped up a little and then add the walnuts or pecans, apple, golden syrup & cognac. Pulse a few times until coarsely chopped & mixed together, but still chunky.
  • Add the butter, eggs & sugar & pulse a few times to combine.
  • Finally, add the flour & bicarbonate of soda & keep pulsing until everything comes together & is mixed well.
  • Butter a 1.5 litre pudding basin & tip in all the mixture.
  • Smooth and level the top & bake in the pre-heated oven for 1 hr 20 mins or 1 hr 30 mins or until a skewer inserted comes out almost clean.
  • While the pudding is baking, make the toffee sauce; tip the sugar into a saucepan and add the butter & the cream. Bring to a rapid boil & then simmer until the sugar is dissolved & the mixture has thickened & is caramel in colour.
  • To serve, turn out the pudding and place the walnuts or pecans over the top of the pudding & pour over the toffee sauce; place pudding under a grill and cook until the sauce is bubbling.
  • Serve with Ice Cream, Creme fraiche or Chantilly Cream.

  • Make the pudding ahead of time and freeze in the pudding container for up to 1 month. To reheat, defrost & cook in the microwave for 8-10 minutes on medium.Make the toffee sauce and serve as before.
