Turn an ordinary banger into something special

2 tbsp French's (American) mustard
2 tbsp tomato ketchup
8 tbsp light muscovado sugar
12 good quality sausages
packet wheat flour tortillas
4 baby gem lettuces
sweetcorn relish, to serve

Steps:

  • Combine the mustard, ketchup and sugar. Preheat the barbecue. Toss the sausages on and sizzle for about 15 minutes, or until they are crispy, but not quite cooked through. Brush the sticky sauce all over the sausages and cook them for another 5 minutes, basting regularly.
  • Heat the tortillas on the barbecue for 30 seconds each side. Roll the sticky sausages in the wraps, along with some baby gem leaves. Finish with a dollop of corn relish.

1 pound turkey Italian sausage links, casings removed
1 medium sweet red pepper, diced
1 small onion, diced
4 cartons (8 ounces each) egg substitute
1 can (4 ounces) chopped green chilies
1 teaspoon chili powder
10 flour tortillas (8 inches), warmed
1-1/4 cups salsa

Steps:

  • In a nonstick skillet, cook sausage over medium heat until no longer pink; drain. Transfer to a 13-in. x 9-in. baking dish coated with cooking spray. Sprinkle with red pepper and onion. Combine the egg substitute, green chilies and chili powder; pour over sausage mixture., Bake, uncovered, at 350° for 30-35 minutes or until set. Break up sausage mixture with a spoon. Place 2/3 cup down the center of each tortilla; top with salsa. Fold one end over sausage mixture, then fold two sides over.

2 (8 ounce) cans crescent rolls
48 fully cooked cocktail smoked sausage links (lil smokies)

Steps:

  • Heat oven to 375 degrees.
  • Separate dough into 4 rectangles. Press to seal perforations.
  • Cut each rectangle in half crosswise. Cut each half in three pieces.
  • Place sausages on each strip of dough and roll-up.
  • Bake at 375 degrees on ungreased cookie sheet for 12-15 minutes or until golden brown.
  • Serve warm with ketchup and mustard, if desired.

Steps:

  • Spray heavy large baking sheet with nonstick spray. Unroll dough on work surface; separate along perforations into individual triangles. Spread each triangle with 1 teaspoon mustard; sprinkle each with 1 tablespoon cheese. Arrange 1 sausage quarter on triangle, parallel to short side, leaving 1/2-inch border. Fold short side of dough over sausage; continue to roll up. Arrange sausage roll, seam side down, on prepared sheet. Repeat with remaining triangles, mustard, cheese, and sausages. 3/4 pound Italian turkey sausage links, casings removed
1 small green pepper, finely chopped
1 small onion, finely chopped
1 medium tomato, chopped
4 large eggs
6 large egg whites
1 cup chopped fresh spinach
6 whole wheat tortillas (8 inches)
1 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large skillet, cook sausage, pepper, onion and tomato over medium heat until meat is no longer pink and vegetables are tender, breaking up sausage into crumbles; drain and return to pan., In a small bowl, whisk eggs and egg whites until blended. Add egg mixture to sausage. Cook and stir until eggs are thickened and no liquid egg remains. Add spinach; cook and stir just until wilted., Spoon 3/4 cup egg mixture across center of each tortilla; top with about 2 tablespoons cheese. This is fast and easy to make and yummy. It's a big hit for either breakfast or an appetizer at a party. Kids love them and so do adults. You can either use already formed sausage patties or make your own patties from a tube of sausage. I prefer to make my own, you can make them a bit smaller and have a little variety as to what kind of seasoned sausage you use.

1 (16 ounce) package sausage (I like the mild)
1 (8 ounce) package refrigerated crescent roll dough
2 ounces cheese, of your choice (I like the pepper jack or swiss)
3 teaspoons mustard

Steps:

  • Preheat oven to 375.
  • In a skillet cook up the patties or form your own patties, small.
  • Remove from heat and blot on paper towel.
  • Seperate and cut dough into triangles enough for each patty.
  • Brush with the mustard and place piece of cheese small enough to fit under the patty.
  • Place sausage on top of triangle and wrap around it, covering most of it by crisscrossing.
  • Place wrapped patty on ungreased cookie sheet or baking stone and bake for 11-13 minutes or until golden brown.
  • How many this yields depends mostly on how big you make the patties and how many triangles you cut.
  • For ready made patties it makes 8.
