4 ounces Stilton cheese, chopped
1 cup mayonnaise
1 cup heavy cream
2 tablespoons tarragon vinegar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 head iceberg lettuce, cut in 6 wedges

Steps:

  • Place the cheese, mayonnaise, heavy cream, vinegar, salt and pepper in the bowl of a food processor fitted with a steel blade and process until smooth.
  • Place a wedge of lettuce on each serving plate. Pour enough dressing over the lettuce to moisten. Serve immediately.

2/3 cup crumbled Stilton (from a 6- to 7-oz wedge, rind discarded)
1/4 cup sour cream
1/4 cup water
2 teaspoons white-wine vinegar
1/4 teaspoon black pepper
2 tablespoons finely chopped fresh chives

Steps:

  • Coarsely mash Stilton with a fork in a bowl. Stir in sour cream, water, vinegar, and pepper until combined well, then stir in chives. Season with salt if desired.

I don't know when, how, or where I developed this liking (craving) for blue cheese!! This is a simple blue cheese dressing that will blow the bottled one away. This will keep for 3 days in the fridge sealed up, if it doesn't get eaten first.

1/4 cup water
2 teaspoons white wine vinegar

Steps:

  • Coarsely mash the Stilton with a fork in a bowl.
  • Stir in sour cream, water, vinegar, and pepper until well combined.
  • Then stir in the chives.
  • Season with salt if desired.

1/3 cup chicken broth
1 tablespoon finely chopped onion
yolk from 1 hard-boiled large egg
2 teaspoons powdered mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon Worcestershire sauce
1/3 cup distilled white vinegar
1 cup vegetable oil
4 ounces Stilton cheese

Steps:

  • In a small saucepan bring broth to a boil and add onion. Remove pan from heat and steep mixture 10 minutes. Pour liquid through a sieve into a blender and discard onion. Add yolk, mustard, salt, pepper, Worcestershire sauce, and vinegar and blend until smooth. With motor running, add oil in a slow stream, blending until emulsified. Crumble Stilton. With motor off add Stilton, and blend until very smooth. Pour dressing through a sieve into a bowl. Dressing keeps, covered and chilled, 1 week.

This elegant, delicious dressing is served at the Dorchester Hotel (one of London's most expensive). Stilton is a lovely English blue-veined cheese. Bleu cheese is an acceptable substitute.

1/3 cup chicken broth
1 tablespoon finely chopped onion
1 large hard-boiled egg yolk
2 teaspoons mustard powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon Worcestershire sauce
1/3 cup distilled white vinegar
1 cup vegetable oil
4 ounces Stilton cheese

Steps:

  • In a small saucepan bring broth to a boil and add onion.
