My mother's recipe. Serve with potatoes, rice, or noodles.

Steps:
- Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
- Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
- Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.

SKILLET SWISS STEAK
This weeknight-fast Swiss steak recipe is made on the stovetop in just 30 minutes (traditional Swiss steak braises in the oven for an hour or more). Sautéed peppers, onions and tomatoes make a quick, savory sauce. Ask your butcher for 4 equal-size cube steaks (about 4 ounces each) so they cook evenly.

- Preheat oven to 200 degrees F.
- Sprinkle steaks with 1/4 teaspoon salt and pepper. Place flour in a shallow dish and dredge the steaks in it.
- Heat 1 tablespoon oil in a large skillet over medium-high heat. Reduce heat to medium and cook the steaks until browned, 2 to 4 minutes per side. Transfer to a baking sheet and keep warm in the oven.
- Heat the remaining 1 tablespoon oil in the pan over medium-high heat. Add onion slices and cook, turning once and pressing with a spatula a few times, until browned on both sides, 4 to 6 minutes total. Stir in bell pepper, separating the onion rings as you stir, and cook, stirring occasionally, until the vegetables are tender, 3 to 4 minutes. Stir in garlic, thyme and the remaining 1/4 teaspoon salt; cook, stirring, for 15 seconds. Add tomatoes with their juice and Worcestershire. Cook, stirring, breaking up the tomatoes and scraping up any browned bits, until thickened, about 5 minutes. Serve the sauce over the steaks.

KAREN'S SWISS STEAK (STOVE TOP, CROCK POT OR OVEN)
This recipe can be prepared on the stove top, or in the oven or crock pot. I decided to post it since it is a bit different than the swiss steak recipes I have seen on here. Just wait until you smell this stuff cooking!

Steps:
- Cut meat into 6 serving pieces.
- Combine flour, salt, mustard, pepper, and garlic powder.
- Put 2 T. of the flour mixture into the meat.
- Brown the meat in the shortening on both sides.
- Drain off excess fat.
- Add undrained tomatoes, onion, celery, carrots, Worcestershire sauce and cooking wine.
- Cover and simmer for 1 1/4 hours or until meat is tender.
- Remove meat to a serving platter and keep warm.
- Combine 1/4 water and the remaining flour mixture.
- Stir into tomato mixture until thick and bubbly.
- Pass with meat.
- Serve meat and sauce with hot cooked noodles or rice.
- Crock pot directions:.
- Prepare swiss steak as above except cut meat to fit your crock pot.
- After browning meat, transfer to crock pot.
- Stir remaining flour into pan drippings in the skillet.
- Stir in the remaining ingredients and cook until thick and bubbly.
- Pour over meat in the crock pot.
- Cook on low for 8 to 10 hours.
- Serve with hot cooked noodles or rice.
- Oven directions:.
- Place meat in a baking dish.
- Cover with thickened drippings and veggies as above.
- Bake, uncovered, in a 350 degree oven for 1 hour and 20 minutes.
- Serve with hot noodles or rice.
STOVE TOP SWISS STEAK RECIPE - (4.6/5)

- 1. Heat oil and butter over medium high heat. 2. Meanwhile, put flour, garlic powder, paprika, pepper & salt on plate. 3. Dredge cube steak one at a time in flour mixture and pat down firmly, repeat on other side and then repear on both sides again. 4. Add cube steaks to heated pan and cook about 4-5 minutes (turning over half way thru). Remove to plate 5. Continue cooking all steaks. 6. Add onions, garlic to pan and saute about 5 minutes then add mushrooms and carrots. 7. Add soup, water and wine to pan, bring to boil. 8. Return cube steaks to pan and cook about 5 minutes more or even 10 minutes to tenderize. 9. Serve with noodles, pototoes, etc.

- Preheat the oven to 325 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
- Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.
SWISS STEAK QUICK AND EASY
My mother has been making this Swiss steak for years. It is wonderful, and can be made either on the stove top or -- when you don't have a lot of time but want a hearty meal ready when you come home -- in the crock pot. Serve over a bed of egg noodles or rice with a hunk of thick crusty bread.

- Heat oil in a Dutch oven over medium heat. Dredge steak strips in flour. Working in batches, place strips in hot oil. Fry until browned on both sides. Remove to a warm platter. When all meat is browned, return meat to Dutch oven, and stir in onions, mushrooms, salt, pepper, gravy mix, and stewed tomatoes. Bring to a boil, then simmer about 30 to 45 minutes.
- About 20 minutes before steak is finished, fill a large pot with water and bring to a boil. Add pasta, and cook until al dente, about 8 to 10 minutes; drain.
- Serve Swiss steak over noodles.

- In a large resealable plastic bag, combine the flour, 1-1/2 teaspoons salt and pepper. Add beef, a few pieces at a time, and shake to coat. , In a large skillet over medium heat, brown beef in oil on all sides. Transfer to a greased 3-qt. baking dish. Top with onions and potatoes. - Cut meat into 4 serving size pieces.
- Combine the flour, salt and pepper, along with the meat, in a ziplock bag; shake to coat meat.
- In a skillet, brown meat in oil; transfer to a 2 quart baking dish.
