STRAWBERRY GRANOLA



Strawberry Granola image

Studded with pink freeze-dried strawberries and lightly spiced, this strawberry granola makes for a perky start to the day or a fruity afternoon snack, especially when paired with yogurt or milk. First, roast oats, almonds, pumpkin seeds and coconut chips in a sweet syrup before mixing with crisp freeze-dried strawberries. Optional red-pepper flakes add a pleasant whisper of warmth, and play well with the strawberries and coconut. Feel free to substitute cashews or hazelnuts for the almonds, and omit the coconut chips if you don't have them in the pantry. The resulting granola will still be full of flavor and crunch.

2 cups/200 grams rolled, old-fashioned (not quick-cooking) oats
3/4 cup/100 grams raw or roasted almonds, hazelnuts or cashews, roughly chopped
3/4 cup/40 grams unsweetened, raw coconut chips (optional)
1/2 cup/70 grams raw pepitas (shelled pumpkin seeds)
1/4 cup/70 grams honey
1/4 cup/40 grams coconut sugar, packed light or dark brown sugar or granulated sugar
1/4 cup/60 milliliters coconut oil or olive oil
1/8 to 1/4 teaspoon red-pepper flakes (optional)
3/4 teaspoon kosher salt
1 cup/20 grams freeze-dried strawberries (optional)
Strawberry jam and yogurt, for serving (optional)

Steps:

  • Heat the oven to 300 degrees and set one rack in the middle of the oven. Line a large baking sheet with parchment paper and set aside. In a large bowl, mix together oats, almonds, coconut chips (if using) and pepitas.
  • In a small saucepan, combine honey and sugar. Stir over medium heat until mixture starts to simmer and sugar dissolves, 1 to 2 minutes; turn off heat. Stir in coconut oil, red-pepper flakes and salt. (If coconut oil is solid, allow it to fully melt.) Fold warm liquid mixture into oat mixture until well combined. Spread oat mixture evenly on the lined baking sheet.
  • Bake granola on the middle rack for 15 minutes. Remove the baking sheet from the oven, leaving the oven on, and stir granola to redistribute any bits along the edge into the center and vice versa. Bake until oats, nuts and coconut chips are deeply toasted and have a light sheen, an additional 20 to 25 minutes.
  • Let granola cool on tray, at least 1 hour. Stir in freeze-dried strawberries, which will break up a bit as you mix them in. (Makes 5 cups.) Serve granola over yogurt and jam, if desired. Granola keeps, in an airtight container, for 2 weeks at room temperature.

2 packages ripe strawberries
2 tablespoons Cointreau liqueur
1/2 pint whipping cream
4 -6 ready made meringues

Steps:

  • Wash strawberries and set aside 6 for decoration.
  • Hull remaining strawberries and put in large bowl.
  • Add the cointreau and crush strawberries lightly with fork.
  • Whip the cream until thick.
  • Fold into strawberry mixture.
  • Lightly crush meringue with your hands (leaving a little for decoration) and add to strawberry mixture.
  • Gently fold in with a rubber spatula until evenly mixed.
  • To Serve-----------------.
  • Pile into 6 fancy wine glasses and place remaining meringue over top.
  • Place fanned out strawberry on each dessert.

vegetable oil cooking spray
2 pints strawberries
2 teaspoons lemon juice
3 tablespoons white sugar
1 tablespoon all-purpose flour
1 cup whole wheat flour
1/2 cup rolled oats
1/3 cup brown sugar
1 teaspoon cinnamon
4 tablespoons margarine, cold

Steps:

  • Preheat the oven to 375 degrees. Spray a 9" x 9" baking pan with cooking spray.
  • Rinse and dry berries. Cut off the tops and slice into four pieces. Put in a medium bowl.
  • Pour lemon juice onto the berries. Add the sugar and all purpose flour to the bowl and stir. Place strawberry mixture in the baking pan.
  • To make the topping, mix the whole wheat flour, oats, brown sugar and cinnamon in a large bowl. Cut the cold margarine into 1/4" slices and put them into the bowl.
  • Cut the ingredients into eachother, making sure the mixture is still moist.
  • Sprinkle the topping over the strawberry mixture.
  • Bake for 20 minutes or until the fruit mixture is bubbly.

1/2 cup canola oil
1/3 cup packed brown sugar
2 teaspoons vanilla extract

1/2 cup sesame seeds
1/2 cup salted sunflower kernels
2 cups raisins

Steps:

  • In a small saucepan, combine the honey, oil and brown sugar; cook and stir over medium heat until sugar is dissolved. 1 ¼ cups almonds, divided
1 ¼ cups sunflower seeds, divided
2 cups shredded unsweetened coconut
1 cup diced dried apricots
1 ½ cups coconut oil
½ cup honey
¼ cup ground cinnamon, or as needed
1 teaspoon vanilla extract
½ teaspoon salt

Steps:

  • Place 3/4 cups almonds and 3/4 cups sunflower seeds into a food processor; chop until nuts are in 1/4-inch pieces, 1 to 2 minutes. Remove from food processor and pour in a bowl. Place the remaining almonds and sunflower seeds into the food processor; roughly chop into larger pieces, about 1 minute. Mix remaining nuts, seeds, shredded coconut, and dried apricot into the 1/4-inch nuts until fruit and nut mixture is combined.
  • Combine coconut oil, honey, ground cinnamon, vanilla extract, and salt in a sauce pan over medium-low heat; cook until the coconut oil mixture bubbles and turns a lighter color, 3 to 5 minutes.
  • Pour coconut oil mixture over the fruit and nut mixture; stir until the granola mixture takes on the consistency of wet sand, about 1 minute.
  • Line a baking sheet with waxed paper. Pour granola mixture onto the sheet; place a second sheet of waxed paper on top of the granola mixture. Push down on the waxed paper with you hands until the granola mixture has been evenly spread. Pack tightly to ensure that the granola will not fall apart.
  • Cool until granola has hardened, 2 to 3 hours. Cut into bars.

1 cup freshly ground flax seed meal
1 cup steel-cut oats
1 cup oat bran

¾ cup agave nectar

2 tablespoons canola oil
2 tablespoons vanilla extract
2 teaspoons pumpkin pie spice

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Line baking sheets with parchment paper.

1 cup roasted almonds
2 cups old fashioned oats
1 tablespoon cinnamon
1 cup fresh strawberries (tops removed)
1/2 cup honey
1 tablespoon vanilla
1 cup dried cranberries

Steps:

  • Preheat oven to 325°F Line a baking sheet with parchment or silpat.
  • Place the nuts into a small food processor and pulse to crumble (if you don't have a food processor, you can use a Ziploc bag and a rolling pin). Don't overdo it, you don't want them finely ground, just lightly chopped/crushed.
  • In a medium sized bowl combine the chopped nuts, oats, and cinnamon. Stir to combine and set aside.
  • Place the fresh strawberries, honey, and vanilla in a small food processor (or blender) and blend until pureed. Pour into oat/nut mixture. Toss/stir to combine.
  • Line a baking sheet with parchment paper or a silpat. Spread the granola in a single layer on top. Bake for 20-25 minutes, stirring every 5-7 minutes. Don't be concerned if the granola seems mushy. Remove from the oven and let it sit and cool for one hour.
